You'll love an entrée that can be made in just 20 minutes and requires just 8 ingredients, most of which you probably have on hand. The chicken breasts are flavored with balsamic vinegar, Dijon mustard, and crushed garlic. Then the mushrooms are cooked down in a savory mixture of chicken broth, crumbled thyme, and yes, more balsamic vinegar. Serve with a mixed green salad or blanched green veggies alongside to round out the meal as a delicious dinner. For a different flair, you can substitute dry white wine for the chicken broth, then sprinkle on a few spoonfuls of chopped sun-dried tomatoes with the mushrooms.

2 tsp Vegetable oil
3 Tbsp Balsamic vinegar
2 tsp Dijon mustard
1 medium clove(s) Garlic clove(s) crushed
1 pound(s) Uncooked boneless skinless chicken breast(s) four 4-oz pieces
2 cup(s) Fresh mushroom(s) small, halved
0.333 cup(s) Canned chicken broth
0.25 tsp Dried thyme crumbled

Steps:

  • In a nonstick skillet, heat 1 teaspoon of oil.
  • In a medium bowl, mix 2 tablespoons of vinegar, the mustard and garlic. Add chicken and turn to coat.
  • Transfer chicken and marinade to skillet. Sauté chicken until cooked through, about 3 minutes on each side. Transfer chicken to a platter and keep warm.
  • Heat remaining teaspoon of oil in skillet. Sauté mushrooms for 1 minute. Add broth, thyme and remaining tablespoon of vinegar. Cook, stirring occasionally, until mushrooms are deep brown, about 2 minutes longer.
  • Serve chicken topped with mushrooms.

2 teaspoons vegetable oil
3 tablespoons balsamic vinegar
2 teaspoons Dijon mustard
1 clove garlic, minced (or more!)
4 (4 ounce) boneless skinless chicken breasts, pounded to 1/4 inch thickness
2 cups small mushrooms, halved,or quartered if using larger mushrooms
1/3 cup chicken broth or 1/3 cup white wine
1/4 teaspoon dried thyme leaves, crumbled

Steps:

  • In a nonstick skillet, heat 1 teaspoon of the oil.
  • In a bowl, mix 2 tablespoons of the vinegar, the mustard and garlic.
  • Add the chicken and coat both sides with the mixture.
  • Transfer the chicken and mixture to the skillet; saute until cooked through, about 3 minutes per side.
  • Transfer to a plate and keep warm.
  • In the skillet, heat the remaining teaspoon of oil.
  • Saute the mushrooms about a minute; add the broth/wine, thyme and remaining tablespoon of vinegar.
  • Cook stirring until the mushrooms are deep brown, about 2 minutes longer.
  • Serve the chicken, topped with the mushrooms.

I came up with this recipe this evening while hubby and I were trying to figure out what to have for dinner. The weight watchers points value is 8 per serving and it is worth every drop! I used boneless, skinless chicken breast tenders for this.

1 lb boneless chicken breast, tenders
1/2 cup marzetti light balsamic vinaigrette dressing
1 cup fresh mushrooms

Steps:

  • Place chicken in a bowl with dressing to marinate.
  • Stem, clean and cut mushrooms into quarters.
  • Place chicken and dressing into a saute pan or skillet.
  • Pour mushrooms around the chicken.
  • Cook over medium high heat, covered for 5 minutes.
  • Remove lid and cook over medium high heat until chicken is browned and cooked through.

1/4 cup flour
2/3 cup low-fat chicken broth
1 1/2 teaspoons cornstarch

  • Cut chicken into bite sized pieces. Salt and pepper to taste. Dredge in flour, shaking excess flour from the meat.
