2 cups thinly sliced cucumbers (Japanese, English, or regular)
1/2-1 teaspoon salt (to taste)
1/4 teaspoon pepper
1 tablespoon sugar (or slightly less honey)
1 tablespoon soy sauce
1/4 cup rice wine vinegar
1 teaspoon sesame oil
2 teaspoons sesame seeds

Steps:

  • If using English or regular cucumbers, they need to be peeled, cut lengthwise, seeded and sliced into thin half moons.
  • In a large bowl, combine cucumbers, salt and pepper, mix well.
  • Add sugar(or honey), soy sauce, rice wine vinegar and sesame oil and mix well.
  • Sprinkle with sesame seeds and mix.
  • Let marinate for 20 minutes before serving.
  • Adjust seasonings before serving.

2 cucumbers
2 teaspoons brown sugar
1 teaspoon sambal oelek, chili paste
2 teaspoons lime juice
3/4 green onion, finely chopped
salt
white pepper

Steps:

  • Peel the cucumbers, cut in half and remove the seeds.
  • Half them again and slice them up in approx 1/2 inch pieces.
  • Mix with all the other ingredients, cover and put in the fridge for at least an hour.
  • Take it out of the fridge and taste, if you want to, add more limejuice, sugar or sambal oelek.

Smashing cucumbers is a delicious and rustically beautiful preparation that is common across Asia. Smashing them creates a variety of different textures, and draining them concentrates the flavor. This is a simple-to-prepare dish but it packs personality!

1 pound Persian or mini cucumbers
1 teaspoon kosher salt
1 tablespoon soy sauce
1 tablespoon Chinese black vinegar
2 teaspoons toasted sesame oil
1 teaspoon sugar
1/2 teaspoon crushed red chile flakes
Toasted sesame seeds and fresh cilantro, for garnish

Steps:

  • Place the cucumbers in a resealable plastic bag. Seal and use the palm of your hand to lightly smash the cucumbers. Take the cucumbers out of the bag and cut into 1-inch chunks. Add to a bowl and season with salt. Toss to coat.
  • Combine the soy sauce, vinegar, sesame oil, sugar and chile flakes in a medium bowl. Whisk to dissolve the sugar.
  • Add the cucumbers, then toss and garnish with the toasted sesame seeds and cilantro.

1 cucumber, European or 1 large regular cucumber
1/4 sweet onion, large, such as Vidalia
3 tablespoons rice vinegar
1 1/2 tablespoons sugar, or more to taste
1/2 teaspoon salt, or more to taste

Steps:

  • 1. Set a dry skillet over medium heat. Add the peanuts and heat until lightly browned, about 2 minutes, shaking the pan occasionally. Transfer to a plate to cool.2. Peel and seed the cucumber. Cut the cucumber crosswise into 3-inch sections, then lengthwise into spaghetti-thin strips. Cut the onion into as thin crosswise slices as possible.3. Combine the vinegar, sugar, and salt in a serving bowl and whisk until the sugar and salt are dissolved. Taste for seasoning, adding sugar or salt as necessary the dressing should be both tart and sweet. Stir in the cucumber and onion. 2 lbs cucumbers
1/2 cup chopped fresh basil
1 -2 medium red onion
to taste currants (optional)
to taste garlic powder
to taste red pepper flakes or to taste white wine vinegar
to taste water
1 cup tomatoes, chopped (optional)

Steps:

  • Thin-slice the cucumbers and onions and put them in a container.
  • Rip or chop the basil and toss it in.
  • Pour in vinegar and water.
  • I use less vinegar than water, but you want the vinegar a little strong so it will get into the cucumber.
  • Sprinkle in some garlic, maybe 1/2 teaspoon? Let this marinate for at least 2 hours.
  • It keeps well in the refrigerator for days.
  • Add the tomatoes at the last minute.

1 shallot
1 small Thai chile
1 tablespoon sugar
1/4 teaspoon salt
2 tablespoons rice wine vinegar
1 slice ginger (small)

Steps:

  • Cut the cucumber in half and remove the seeds.
  • Slice the cucumber into little moon-shaped slices.
  • Julien the carrot into very fine pieces.
  • Coarsely chop the shallot and chile.
  • Peel the ginger but leave the piece whole.
  • Combine all of the ingredients and keep refrigerated for a few hours. Serve as a condiment to rice dishes or grilled sate.
