TUSCAN BREAD SOUP - AUTHENTIC RIBOLLITA RECIPE
When it's time for dinner, my Tuscan Bread soup will make an excellent addition to your dinner table. Your family will love the flavors of this traditional Italian soup.

Steps:
- in a 4 qt stockpot over medium-high heat add the olive oil, onion, carrot, celery, and potatoes. Cook the vegetables for 4-5 minutes.
- Add in the zucchini and garlic, continue to saute for 1-2 minutes.
- Add in the vegetable stock, crushed tomatoes and cannellini beans. Bring to a boil.
- Add in the chopped savoy cabbage, chard and farro. Bring back to a boil, then add in bread cubes. and reduce the heat to simmer.
- After the soup has cooked for about 45 minutes, add in romano cheese and reseason as needed with sea salt and black pepper.

Steps:
- In a small bowl mash half of the beans with a masher or the back of a spoon, and set aside.
- Heat the oil in a large soup pot over medium-high heat. Add the onion, carrots, celery, zucchini, garlic, thyme, sage, 1/2 teaspoon of salt and 1/4 teaspoon of pepper, and cook stirring occasionally until the vegetables are tender, about 5 minutes.
- Add the broth and tomatoes with the juice and bring to a boil. Add the mashed and whole beans and the spinach leaves and cook until the spinach is wilted, about 3 minutes more.
- Serve topped with Parmesan, if desired.

TUSCAN TOMATO AND BREAD SOUP - PAPPA AL POMODORO

- Coat a large wide pot with olive oil over medium heat and add the onions. Season with salt and crushed red pepper, to taste, and cook until the onions are soft and very aromatic, about 8 to 10 minutes. Toss in the garlic and cook for 2 to 3 more minutes. Add the wine and cook until it has reduced by half. Stir in the tomatoes, season with salt, to taste, and cook until the tomatoes are really soft and juicy, about 12 to 15 minutes. Toss in the whole basil leaves.
- Working in batches, carefully puree the tomatoes in a blender*. Return the tomato puree to the pot and add the tomato juice and the bread. Cook the soup over medium heat for until the bread has completely lost its shape and the soup is really thick, about 20 minutes. Taste the soup and adjust the seasoning, if needed.
- Ladle the soup into bowls and serve garnished with grated cheese, basil chiffonade and a drizzle of big fat finishing oil.

ACQUACOTTA (TUSCAN VEGETABLE SOUP)
This is my version of a recipe I saw Lidia prepare on her show. It's fast, filling, comforting, and adaptable. I make this about every 2 weeks or so, and it gets even better when reheated. And besides being fast, it's cheap to make. It's a whole meal in 1 bowl. I have made this soup with kale, spinach, escarole, beet greens, mustard greens, Swiss chard, and all are good.

Steps:
- in food processor put in celery, garlic, onion, parsley, and basil; till minced.
- in large stock pot, heat EVOO.
- Add vegetables from processor and cook til they are soft.
- Add tomato paste red pepper flakes, salt and pepper, saute 2 min until the paste is incorporated with the vegetables.
- Add the greens and cook for 2 minutes or so.
- Add water and bring to a boil.
- Lower heat and simmer for 30 minutes.
- Place toasted bread in bowl.
- Place poached egg on bread.
- Spoon soup over both.
- Sprinkle with cheese
- Enjoy!

TUSCAN WHITE BEAN AND BREAD SOUP (RIBOLLITA)
Taken from The Best International Recipe, posted for safekeeping. Do not use sliced sandwich bread in place of the crusty bread. If necessary, substitute chard for the kale.

Steps:
- Adjust an oven rack to the middle position and heat the oven to 300 degrees.
- Spread the bread cubes out over a rimmed baking sheet and bake until dried but not browned, about 30 minutes; set aside.
- Process half the beans and 1/4 cup sof the water in a food processor until mostly smooth, about 12 pulses, stopping to scrape down the sides of the bowl as needed; set aside.
- Heat oil in a large Dutch oven over medium heat until shimmering.
- Add carrots, onion, kale stems, and 1/2 teaspoons salt and cook until vegetables are softened, 8 to 10 minutes.
- Stir in the garlic and cook until fragrant, about 30 seconds.
- Stir in tomatoes and cook until softened, about 2 minutes.
- Stir in pureed beans, remaining whole beans, remaining water, kale leaves, potato, and bay leaves and bring to a simmer.
- Reduce heat to low, partially cover, and simmer until potato is tender, about 40 minutes.
- Stir in rosemary sprig and 2 cups of dried bread cubes into the soup, cover, and let stand off the heat until the bread is soggy and falling apart, 15 to 20 minutes.
- Discard rosemary sprig and bay leaves and stir to break up bread pieces and thicken the soup.
- Season to taste with salt and pepper.
- Divide remaining bread cubes among individual bowls and ladle thickened soup over the top.
- Drizzle olive oil over top of each portion and serve, passing out the Parmesan cheese separately.

- Prepare the broth, if necessary.
- Then, pour the olive oil in a large pot.
- Add the celery, carrots, garlic, onion, and herbs.
- Cook, stirring frequently over medium heat until the celery and other aromatics are tender and golden, about 20 minutes.
- Add the tomatoes and cook 10 minutes.
- Stir in the beans, remaining vegetables, and salt and pepper to taste.
- Add the broth and water to just cover.
- Bring to a simmer.
- Cook gently, over very low heat, until the vegetables are tender, about 2 hours.
- Let cool slightly.
- When ready to serve, pour about 4 cups of the soup into a blender or food processor.
- Puree the soup, then transfer it to a pot along with the remaining soup; reheat gently.
- Choose a soup tureen or pot large enough to hold the bread and soup.
- Place a layer of bread slices on the bottom.
- Spoon on enough of the soup to cover the bread completely.
- Repeat layering until all the soup is used and the bread is soaked.
- Let stand at least 20 minutes; it should be very thick.
- Stir the soup to break up the bread.
- Drizzle with extra-virgin olive oil and sprinkle with the red onion.
- Serve warm or at room temperature.

- Gently cook the onion, carrots and celery in the oil in a large saucepan for 20 mins, until soft. Splash in water if they stick. Add the sugar, garlic, purée, herbs and courgettes and cook for 4-5 mins on a medium heat until they brown a little.
- Pour in the beans, tomatoes and stock, then simmer for 20 mins. If you're freezing it, cool and do so now (freeze for up to three months). If not, add half the Parmesan and the pasta and simmer for 6-8 mins until pasta cooked. Sprinkle with basil and remaining Parmesan to serve. If frozen, defrost then re-heat before adding pasta and cheese and continuing as above.

BAKED TUSCAN VEGETABLE AND BREAD SOUP
This is a recipe I make for Boxing Day dinner. It is from The Canadian Living Christmas Book. Absolutely Delicious!! This hearty dish from Tuscany starts with a rich chicken and vegetable minestrone that's layered in a casserole with crusty bread, than baked until steaming and tender inside, crusty and golden on top.

- In large saucepan, bring chicken stock, chicken breasts and bay leaves to boil; reduce heat, cover and simmer for about 20 minutes or until chicken is no longer pink inside. Remove chicken and discard bones; dice meat and set aside. Discard by leaves. Keep stock warm.
- Meanwhile, in large skillet, heat 2 tbsp of the oil over medium heat; cook onion, garlic, carrots and celery for 10 minutes, stirring occasionally. Add remaining oil, green pepper, cabbage, thyme and rosemary; cook over low heat, stirring occasionally, for 10 minutes.
- Add vegetable mixture to stock in sauce pan along with tomatoes and pepper; bring to boil. Reduce heat, cover and simmer for 30 minutes. Add spinach, parsley, zucchini, kidney beans and reserved diced chicken; cook for 5 minutes. Remove 1 cup (250 ml) of the soup and set aside.
- Ladle half of the remaining soup into 24-cup (6L) Dutch oven or casserole; cover with four of the bread slices and 1/2 cup of the Parmesan cheese. Cover with remaining soup; layer with remaining bread. Drizzle reserved soup over top; sprinkle with remaining Parmesan cheese. (Recipe can be prepared to this point, cooled, covered and refrigerated for up to 24 hours.).
- Bake, covered in 350°F oven for 20 minutes (45 minutes if refrigerated); uncover and bake for 20 minutes longer (45 minutes if refrigerated) or until hot.
- Serve soup in large warmed bowls. Garnish with a drizzle of olive oil and a sprinkle of Parmesan cheese, if desired.

- Tear the bread into large pieces and put it on a large sheet pan. Drizzle with extra virgin olive oil and toss to make sure the bread is coated. Spread the bread in one layer on the sheet pan. Bake in the heated oven for about 10 minutes or until somewhat toasted and golden brown.
