1/4 cup extra-virgin olive oil
1 teaspoon red pepper flakes
4 to 6 cloves garlic, finely chopped
1 tin flat fillet of anchovies, drained, 6 or 7 fillets
2 tablespoons fresh thyme leaves, 4 or 5 sprigs stripped or 1 1/2 teaspoons dried
1 cup dry white wine
1 cup clam juice or chicken stock
1 can (15 ounces) fancy whole baby clams
1 lemon, zested
1 pound linguini, slightly undercooked, about 6 to 7 minutes
1/4 cup chopped parsley leaves
Lots of black pepper and some coarse salt
Crusty bread, for mopping

Steps:

  • Heat a large deep skillet over medium heat. Add extra-virgin olive oil, 4 turns of the pan in a slow stream, red pepper flakes, garlic and anchovies and cook until anchovies melt into the oil. Add thyme and wine. Reduce wine 1 minute. Add clam juice or stock, clam juice will give the dish a stronger clam flavor, chicken stock will give it a buttery personality. Stir in clams and lemon zest. Drain pasta. Add to skillet and toss with sauce 2 to 3 minutes, until pasta is al dente and has absorbed some of the sauce and flavor. Add parsley, pepper and salt, to your taste and serve with bread for mopping up remaining juices.

2 garlic cloves, minced
1/4 cup onion, chopped
1 (14 ounce) can tomato sauce
2 tablespoons butter
2 cups sliced mushrooms
1/4 cup green onion, chopped
2 tablespoons flour
2 cups milk
2/3 cup parmesan cheese, grated
salt and pepper
12 ounces tortellini, fresh or 12 ounces frozen tortellini
1 1/2 cups mozzarella cheese, grated
parmesan cheese, grated

Steps:

  • To make Tomato Sauce:.
  • Melt butter and saute garlic and onion until tender.
  • Add tomato sauce and bring to boil.
  • Reduce heat, cover and simmer 10 minutes.
  • Cook tortellini according to package directions.
  • To make Mushroom Sauce:.
  • Melt butter and saute mushrooms and green onion until tender.
  • Sprinkle with flour, and gradually stir in milk.
  • Cook and stir over medium heat until mixture thickens to consistency of mushroom soup.
  • Remove from heat.
  • Stir in parmesan cheese, salt and pepper to taste.
  • Add mushroom parmesan sauce to cooked, drained tortellini.
  • TO SERVE:.
  • Spread tomato sauce over bottom of a large shallow casserole.
  • Spoon tortellini mushroom mixture on top leaving a red border of tomato sauce.
  • Sprinkle with mozzarella cheese and additional parmesan cheese.
  • Place under broiler until cheese is melted and golden.
  • Serve immediately.

1 pound uncooked medium shrimp, peeled and deveined
1 tablespoon olive oil, divided
2 teaspoons grated lemon zest
1/4 teaspoon pepper, divided
Dash crushed red pepper flakes
2 shallots, chopped
2 garlic cloves, minced
2 cans (14-1/2 ounces each) no-salt-added diced tomatoes, undrained
1 bottle (8 ounces) clam juice
1/2 cup white wine
2 tablespoons balsamic vinegar
4 fresh thyme sprigs
1/4 cup grated Parmesan and Romano cheese blend
1/4 cup half-and-half cream
10 fresh basil leaves, thinly sliced
2 tablespoons minced chives
Shredded Parmesan cheese and minced fresh parsley, optional

Steps:

  • Cook tortellini according to package directions. Meanwhile, in a large nonstick skillet, cook shrimp in 2 teaspoons oil until shrimp turn pink. Stir in the lemon zest, 1/8 teaspoon pepper and pepper flakes. Remove and keep warm., In the same skillet, cook shallots in remaining oil over low heat for 10-15 minutes or until golden brown, stirring occasionally. Add garlic; cook 1 minute longer., Add the tomatoes, clam juice, wine, vinegar, thyme and remaining pepper. Bring to a boil; cook until liquid is reduced by half, about 10 minutes. Remove from the heat; discard thyme sprigs. Stir in the cheese, cream, basil, chives and shrimp. , Drain tortellini; stir into shrimp mixture. Sprinkle with shredded cheese and parsley if desired.

1 ½ pounds Italian sausage, casings removed
1 medium onion, sliced into 1/2-inch strips
2 medium red bell peppers, sliced into 1/2-inch strips
1 small zucchini, cut into 1-inch pieces
1 small yellow squash, cut into 1-inch pieces
2 (14.5 ounce) cans Italian-style diced tomatoes
1 (8 ounce) package Neufchatel cheese
2 tablespoons Italian seasoning

1 ½ cups prepared marinara sauce
½ cup shredded Parmesan cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil; stir in tortellini and return to a boil. Cook uncovered, stirring occasionally, until tortellini float to the top and filling is hot, about 10 minutes. Drain and set aside.
  • Preheat the oven to 375 degrees F (190 degrees C).
