BAKED BEANS WITH SWEET POTATOES AND CHIPOTLES

Baked Beans With Sweet Potatoes and Chipotles image

I used Rancho Gordo Mexican heirloom San Franciscano beans for this richly flavored dish. The beans are dark reddish purple, not too big, with an earthy, sweet taste that fits perfectly into this slightly sweet and spicy baked bean dish. From the supermarket, use red beans or pintos.

Provided by Martha Rose Shulman

Categories     dinner, main course

Time 3h

Yield 6 servings

Number Of Ingredients 10

1 pound red beans, San Franciscano beans, or pintos, washed, picked over for stones, and soaked in 2 quarts water for 4 hours or overnight
1 bay leaf
2 tablespoons extra virgin olive oil
1 yellow or red onion, chopped
Salt to taste
2 to 4 garlic cloves (to taste), minced
1/4 cup tomato paste
2 tablespoons honey or agave nectar
2 chipotles in adobo, seeded and minced
2 large sweet potatoes (1 1/2 to 2 pounds), peeled and cut in large dice

Steps:

  • Place beans and soaking water in an ovenproof casserole. Add bay leaf and bring to a gentle boil over medium heat. Reduce heat to low, cover and simmer 1 hour. Check beans at regular intervals to make sure they are submerged, and add water as necessary.
  • Meanwhile, heat oven to 300 degrees . Heat 1 tablespoon of the oil in a heavy skillet and add onion. Cook, stirring often, until tender, about 5 minutes. Add a generous pinch of salt and the garlic and cook, stirring, until garlic is fragrant, 30 seconds to a minute. Stir onion and garlic into beans, along with salt to taste, tomato paste, honey or agave nectar, and chipotles, and stir together. Add sweet potatoes and bring back to a simmer, drizzle with remaining olive oil, and place in oven.
  • Bake 1 to 1 1/2 hours, until beans are thoroughly soft and sweet potatoes are beginning to fall apart, checking and stirring from time to time to make sure that beans are submerged. Either add liquid or push them down into the simmering broth if necessary. Remove from heat and serve hot or warm.

BLACK BEAN-SMOTHERED SWEET POTATOES

Black Bean-Smothered Sweet Potatoes image

For a quick and satisfying last-minute supper, it's hard to beat a sweet potato zapped in the microwave. The fragrant filling of beans and tomato adds protein, making it a nutritionally complete entree. Be sure to eat the potato skin; it's full of fiber.

LOADED SWEET POTATOES WITH BLACK BEANS AND CHEDDAR

Loaded Sweet Potatoes With Black Beans and Cheddar image

To make a halved sweet potato into a more substantial side, load it with black beans and sharp Cheddar, then send it back into the oven until the cheese melts and sizzles. Pair it with something a bit lighter, like fish tacos or a green salad, or build it into its own meal by adding sliced avocado, torn cilantro, a squeeze of lime juice, or even a fried egg.

Time 50m

Yield 4 servings

Number Of Ingredients 6

2 medium sweet potatoes (8 to 10 ounces each), scrubbed and dried
1 tablespoon olive oil
Kosher salt
1 cup cooked black beans (if canned, rinsed and drained)
1 cup shredded sharp Cheddar
Black pepper

Steps:

  • Heat the oven to 425 degrees and line a sheet pan with parchment paper. Halve sweet potatoes lengthwise, then brush all over with olive oil and sprinkle both sides with salt.
  • Place cut side down on prepared sheet and roast for 30 to 40 minutes, or until completely cooked through. Take sweet potatoes out of the oven, turn them over and let cool slightly. Use a fork to rough up the flesh and slightly flatten the potatoes. Season with salt and pepper.
  • Divide half the cheese among the potato halves. Spoon the black beans over them, then cover with the remaining cheese. Return the pan to the oven and bake for another 5 minutes, until the cheese has melted and the beans have warmed through. Season with salt and pepper. Serve warm.

BBQ BAKED BEANS

BBQ baked beans image

Comforting and delicious, this is a great meat-free dinner idea or, without the killer croutons, it makes a damn fine side with roasted meats.

Provided by Jamie Oliver

Categories     Cheap & cheerful     Save with Jamie     Vegetables     Bonfire night recipes     American     Bread     Sweet potato

Time 1h25m

Yield 6

Number Of Ingredients 16

2 red onions
2 cloves of garlic
1 fresh red chilli
2 large carrots
olive oil
1 heaped teaspoon sweet smoked paprika
1 level teaspoon cumin seeds
1 level teaspoon dried chilli flakes
6 medium sweet potatoes
1 x 700 ml jar of passata
2 x 400 g tins of mixed beans
100 ml quality BBQ sauce
a few sprigs of fresh rosemary
½ a loaf of ciabatta or stale bread
40 g Cheddar cheese, optional
fat-free natural yoghurt, to serve

Steps:

  • Preheat the oven to 180°C/350°F/gas 4.
  • Peel the onions and garlic, then finely slice with the chilli. Peel and chop the carrots. Put all these into a large roasting tray and place on a medium heat with a lug of oil, the paprika, cumin and chilli flakes. Cook for 20 minutes, or until softened, stirring regularly.
  • Meanwhile, scrub the sweet potatoes clean, then rub them with a little oil, sea salt and black pepper, place on a baking tray and put aside.
  • When the time's up, stir the passata into the tray, add a splash of water to the empty jar, swirl it around and pour it in along with the beans (juice and all). Drizzle over the BBQ sauce, season lightly and stir well.
  • Pick and roughly chop the rosemary leaves, toss in a little oil and sprinkle over the top, then place in the oven for around 1 hour, or until bubbling, baked and gorgeous, adding a splash or two of water to loosen, if needed.
  • Put the tray of sweet potatoes into the oven for the same amount of time, or until soft and cooked through.
  • Around 20 minutes before the beans are ready, tear the bread into rough chunks and toss with a drizzle of oil in a roasting tray.
  • Grate over the Cheddar (if using), then place on the bottom shelf of the oven for around 15 minutes, or until crispy and golden, to make croutons.
  • Remove everything from the oven, tear up or squidge open the potatoes, and serve with the beans, dollops of yoghurt and the homemade croutons to mop up that delicious sauce, with a simple green salad on the side.

GRILLED SWEET POTATOES WITH BBQ BAKED BEANS AND CILANTRO CREAM

Grilled Sweet Potatoes with BBQ Baked Beans and Cilantro Cream image

Veggie lovers delight in these sweet potatoes from Jodi Moreno of What's Cooking Good Looking. Baked using Reynolds Wrap® Aluminum Foil, stuffed with simmering BBQ black beans and finished with a crisp yogurt-based cilantro cream, you won't be able to resist this flavorful dish.

Provided by Reynolds Kitchens(R)

Categories     Trusted Brands: Recipes and Tips     Reynolds®

Time 1h10m

Yield 2

Number Of Ingredients 12

2 large sweet potatoes
2 tablespoons sunflower seed oil
1 red onion, diced
2 cloves garlic, minced
1 (15 ounce) can black beans, drained
1 cup barbeque sauce
6 ounces plain yogurt
2 tablespoons minced shallots
¼ teaspoon salt
1 tablespoon lemon juice
½ cup cilantro leaves, plus more for garnish
Reynolds Wrap® Aluminum Foil

Steps:

  • Preheat the grill to medium heat.
  • Wrap the sweet potatoes in Reynolds Wrap® Aluminum Foil individually so they are completely covered. Place them onto the grill, cover and cook for 45 minutes to 1 hour. You want the potatoes to feel very soft inside the foil. When they are done, remove them from the grill and keep them in the foil until ready to assemble and serve.
  • Make the beans while the potatoes are baking. Heat oil in a medium-sized pan over medium heat. Add the onions and cook for 7 to 10 minutes until soft and starting to brown. Add the garlic and cook for another 2 minutes. Then add the beans and BBQ sauce. Stir to combine the ingredients, bring the heat to low and continue cooking for another couple of minutes to heat all of the ingredients.
  • Make the cilantro cream. Place the yogurt, shallots, salt and lemon juice into a food processor and pulse several times until smooth. Add in the cilantro leaves and pulse a couple of times just until they are chopped and incorporated.
  • Assemble the potatoes. Cut a slit down the center lengthwise of the potato and gently pull the sides apart just enough to create a well for the beans. Then add a couple spoonfuls of the BBQ beans and finish with a drizzle of the cilantro cream. Garnish with some roughly chopped cilantro leaves.

ROASTED SWEET POTATOES WITH CRISPY CHICKPEAS

Roasted Sweet Potatoes with Crispy Chickpeas image

I'm always trying to come up with different side dishes that are healthy, flavorful and not too heavy. The chickpeas really add texture and a pop of flavor.

Provided by Marc Murphy

Categories     side-dish

Time 1h25m

Yield 4 to 6 servings

Number Of Ingredients 13

4 medium sweet potatoes, peeled and medium diced
4 medium shallots, peeled and cut in half lengthwise
1/4 cup olive oil
Kosher salt and freshly ground black pepper
Two 15.5-ounce cans chickpeas, drained and rinsed
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon ground turmeric
1/2 teaspoon ground cinnamon
1/2 tablespoon cayenne pepper
Kosher salt and freshly ground black pepper
6 tablespoons canola oil
1/4 cup fresh mint, roughly chopped

Steps:

  • Preheat the oven to 400 degrees F.
  • Divide the potatoes and shallots between two 10-inch cast-iron skillets. Evenly drizzle with the olive oil and sprinkle with salt and pepper. Roast until the potatoes are cooked through, about 25 minutes.
  • For the chickpeas: Lay the chickpeas out on a flat surface and dry them as much as you can using paper towels. In a small bowl, stir together the coriander, cumin, turmeric, cinnamon, cayenne and salt and pepper to taste. Set aside.
  • In a 10-inch cast-iron skillet, heat the oil over medium heat until shimmering. Line a large plate with paper towels. Working in two batches, add the chickpeas to the skillet so they are in a single layer and cook, stirring frequently, until golden and crispy, 15 to 20 minutes.
  • Use a slotted spoon to transfer the chickpeas to the prepared plate and add the spice mixture. Toss everything together until combined; this helps to bloom the spices while the chickpeas are still warm.
  • Garnish the potatoes in the skillets with the chickpeas and finish with the mint.

HEALTHY AIR FRYER TWICE BAKED SWEET POTATO WITH BLACK BEANS

Healthy Air Fryer Twice Baked Sweet Potato with Black Beans image

Using an air fryer to cook this healthy Southwest twist on a twice-baked potato ensures delicious crispy skin and creamy filling. These sweet potatoes are also great to make ahead of time; refrigerate after scooping and filling, and then when you are ready to serve just add a couple minutes onto the second cook in the air fryer.

Provided by Food Network Kitchen

Time 1h10m

Yield 4 servings

Number Of Ingredients 15

4 medium sweet potatoes (10 to 12 ounces each), scrubbed
1 tablespoon olive oil
Kosher salt and freshly ground black pepper
1/4 cup plain Greek yogurt
1 tablespoon unsalted butter, at room temperature
2 teaspoons fresh lime juice
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
1/4 teaspoon cumin
One 15-ounce can black beans, rinsed and drained
1/2 cup plus 3 tablespoons shredded pepper jack cheese or sharp Cheddar
1 avocado, diced
2 scallions, greens thinly sliced
Hot sauce, for serving, optional
Honey, for serving, optional

Steps:

  • Toss the sweet potatoes with the olive oil, 1 teaspoon salt and a few grinds of pepper in a large bowl until evenly coated. Add the potatoes to a 6-quart air fryer and cook at 380 degrees F, flipping halfway through, until crispy on the outside and tender on the inside, about 40 minutes (see Cook's Note). Let cool slightly.
  • Use a paring knife to trim the top off the potatoes lengthwise, then carefully scoop out the flesh, leaving a 1/2-inch border. Your potatoes should look like little boats. Place the scooped flesh and any flesh trimmed off the top in a medium bowl and mash it with the yogurt, butter, lime juice, chili powder, garlic powder, cumin, 1 teaspoon salt and a couple grinds of pepper until smooth. Fold in the black beans and 1/2 cup of the shredded cheese. Spoon the filling into the sweet potato shells, creating a heaping mound in each, and top with the remaining 3 tablespoons cheese. Cook in the air fryer at 380 degrees F until the cheese is melted, 6 to 8 minutes.
  • Top the sweet potatoes with the diced avocado and sliced scallion greens and drizzle with some hot sauce and/or honey if using.

  • Bake the sweet potatoes: Place a rack in the center of your oven and preheat to 400 degrees F. Line a rimmed baking sheet with foil for easy cleanup. Scrub the sweet potatoes and pat dry. Prick the outsides all over with the tines of a fork. Place on the prepared baking sheet and bake until fork tender, about 45 minutes to 1 hour, depending on size. Remove from the oven and let rest until cool enough to handle. Leave the oven turned on.
  • Meanwhile, cook the quinoa according to package instructions. You should have about 1 cup cooked total. Set aside.
  • While the sweet potatoes bake and the quinoa cooks, prepare the filling. Heat the olive oil in a large, deep nonstick skillet over medium. Add the onion, bell pepper, jalapeno, and salt. Cook until the vegetables soften and the onion begins to brown, about 8 minutes. Add the garlic, chili powder, smoked paprika, and cumin. Stir to coat the vegetables in the spices, then cook until the spices are fragrant, about 30 seconds. Stir in the black beans and quinoa. Remove from the heat. Stir in the Greek yogurt, lime juice, and 1/2 cup cheese. Taste and adjust the seasonings as desired.
  • Once the baked sweet potatoes are cool enough to handle, make a slit in the top. With a fork, open the split and lightly fluff the insides to make space for the toppings. Place the sweet potatoes back on the baking sheet, then stuff with the quinoa–black bean mixture (you will have about 1/2 cup filling per potato). Sprinkle the remaining cheese over the top, then return the sweet potatoes to the oven. Cook until the filling is heated through and the cheese melts, about 5 minutes. Enjoy hot, sprinkled with toppings of choice.

BAKED BEANS WITH SWEET POTATOES AND CHIPOTLES - BLUE CAYENNE

  • Rinse dry beans and put into 2 quarts of water to soak overnight. On the next day, add a bay leaf to the soaking water and bring beans to a slow boil over medium head. Reduce the heat of low and cover and simmer for one hour or until the beans are tender. Beans need to be kept submerged and you can add extra water if you need to do so. Be sure not to overcook the beans. You want them to keep their shape in your baked bean dish. Remove and discard the bay leaf when your beans have finished cooking.
  • Heat one tablespoon of the oil in a large pan and sauté the chopped onion until tender. This will take about 5 minutes. Add a generous amount of salt and the minced garlic to the pan and continue to cook until the garlic is fragrant--about 30 seconds. Add chopped sautéed onion, raw quartered onions and garlic to the beans. Add salt to taste, tomato paste, honey, molasses and chipotles. Stir well. Bake (covered) until the beans are soft but not falling apart and the cooking liquid has boiled down to form a thick, sweet sauce. This will take several hours. If your beans have too much liquid, you can take the cover off the pan and continue to bake in the oven until the liquid is reduced to the thickness you want.
  • While the beans are baking, drizzle the remaining tablespoon of olive oil over the diced sweet potatoes. Put into a shallow baking pan and roast at 375 degrees F. for about 25-30 minutes. When the sweet potatoes are baked through and soft, stir them into the baking beans about half an hour before the beans are finished baking. You want the sweet potatoes to absorb some of the delicious baked bean sauce. Alternatively, you could add the raw sweet potatoes to the baking beans earlier in the baking process. I found that my sweet potatoes were overdone and mushy when baked this way. For that reason, I opted to roast them separately and add them in at the end.

BAKED SWEET POTATOES - ELAVEGAN | RECIPES
Cooking sweet potatoes in the oven is incredibly simple and requires just three steps. First, preheat the oven to 400 °F (205 °C). Then wash and scrub the sweet potatoes to remove any dirt, patting them dry afterward. If the potatoes are wet, they’re more likely to steam in the oven, and the skin won’t become amazingly crispy.
