MOM'S STUFFED EGGPLANT

1 large eggplant
3 tablespoons extra-virgin olive oil, divided
1/2 pound ground beef
Salt and freshly ground black pepper
1 onion, small diced
1 red pepper, small diced
3 cloves garlic, minced
1/2 cup freshly chopped parsley leaves
1/2 cup freshly chopped basil leaves, chopped
1 1/4 cup grated Pecorino Romano, divided
1/4 cup bread crumbs
1 egg
2 chopped tomatoes

Steps:

  • Preheat oven to 350 degrees F.
  • Cut the eggplant in half and scoop out the center, leaving enough meat inside the skin so that it holds its shape when baked. Boil the scooped-out center part until very soft, about 10 to 12 minutes.
  • Meanwhile, in a medium saute pan heat 1 tablespoon olive oil over medium heat. Season the beef with salt and pepper. Add the seasoned ground beef to the pan and saute until all of its liquid is evaporated and the beef begins to brown slightly. Drain the beef, removing the extra, unnecessary fat. Let cool briefly and chop the cooked beef so that there are no large chunks of meat. In another medium saute pan over medium heat add the remaining 2 tablespoons olive oil and saute the onions, peppers and garlic together.
  • In a bowl mix together the cooked eggplant, vegetables, cooked beef, herbs, 1 cup of the cheese, bread crumbs, and the egg.
  • Fill the scooped-out eggplant halves with this mixture, dividing it evenly among the 2 halves.
  • Top with chopped tomatoes and the remaining 1/4 cup of grated cheese, season with salt and pepper, place on an oiled oven tray or baking dish, and bake for 50 minutes in preheated oven. Let cool briefly, slice widthwise and serve.

¼ cup bread crumbs
2 tablespoons vegetable oil, or more to taste
½ pound ground beef
1 small onion, chopped
1 clove garlic, chopped
1 eggplant, halved lengthwise and pulp scooped from peel leaving two shells
1 (14.5 ounce) can whole tomatoes with juice, divided
¼ cup cooked rice
¼ cup shredded Italian cheese blend
1 hard-boiled egg, diced
¼ teaspoon dried basil
1 pinch salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Put bread crumbs in a bowl with enough water to cover; set aside to soak.
  • Heat vegetable oil in a large skillet. Cook and stir ground beef, onion, and garlic in hot oil until the beef is completely browned and no large chunks remain, 7 to 10 minutes.
  • Stir eggplant into ground beef mixture; cook and stir until eggplant is tender, about 5 minutes. Remove skillet from heat and set aside to allow mixture to cool.
  • Drain excess water from bread crumbs and dump into a large bowl; add ground beef mixture, half the tomatoes, rice, Italian cheese blend, egg, and basil. Stir the mixture until ingredients are evenly mixed, adding more liquid from the tomatoes if too dry; season with salt and pepper. Fill the eggplant shells with the mixture and put into a large baking dish. Top with remaining tomatoes and cover dish with aluminum foil.
  • Bake in preheated oven for 20 minutes, remove foil, and continue baking until beginning to brown around the edges, about 10 minutes more.

1 large eggplant (about 2 pounds), ends trimmed and halved lengthwise
3 tablespoons vegetable oil
1 pound lean ground beef
2 cloves garlic, minced
1 (15-ounce) can diced tomatoes
1 (6-ounce) can tomato paste
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 1/2 cups fresh soft bread crumbs (made from about 3 slices)
1/4 cup grated Parmesan cheese
1 cups shredded Mozzarella cheese (or 3 to 4 slices)

Steps:

  • Gather the ingredients.
  • Preheat oven to 350 F. Hollow out inside of eggplant, leaving a sturdy shell for stuffing.
  • Place shells in a foil-lined baking pan and set aside.
  • Dice eggplant that was removed from "shells."
  • Heat vegetable oil in a large skillet over medium heat. Add reserved diced eggplant and sauté until soft.
  • Remove with a slotted spoon to paper towels to drain.
  • Add ground beef to skillet; cook while breaking up.
  • Add garlic to skillet and sauté for about 1 minute longer.
  • Stir in tomatoes, tomato paste, salt, and pepper. Simmer, stirring frequently, for about 15 minutes.
  • Add breadcrumbs, Parmesan cheese, and sautéed eggplant to sauce mixture and stir to blend.
  • Spoon sauce mixture into eggplant shells.
  • Cut mozzarella cheese slices into triangles and arrange on top of eggplant halves, or top eggplant with shredded mozzarella cheese.
  • Bake stuffed eggplant Parmesan oven for about 25 minutes.
  • To serve, place eggplant halves on a bed of cooked buttered green beans or spaghetti squash. Or serve stuffed eggplant on heated marinara sauce with cooked spaghetti.

1 kg small eggplant
400 g coarsely ground beef
1 medium onion, finely chopped
2 large tomatoes, peeled and sliced
2 tablespoons tomato paste, dissolved in 3 cups water
1/4 cup raw pine nuts
1/2 teaspoon cinnamon
1/4 teaspoon pepper
1/4 teaspoon ground nutmeg
1 1/2 teaspoons salt
3/4 cup vegetable oil, for frying eggplants
2 tablespoons vegetable oil, for frying onion, pine nuts and meat

Steps:

  • In a deep skillet, heat the vegetable oil and fry the eggplants on high heat until tender and brown. Remove from oil and place on a kitchen absorbent paper.
  • In another skillet fry the chopped onion until golden and tender, add the pine nuts, toss for a few seconds then add the ground meat with the cinnamon, nutmeg, salt and pepper and stir until meat is brown. Set aside.
  • In a baking tray, place the fried eggplants and make a slit, lengthwise, in the middle of each one. Fill each eggplant with enough ground meat.
  • Layer the tomato slices over them and pour the dissolved tomato paste. Make sure the eggplants are covered with water. Sprinkle with salt.
  • Bake in the oven on medium heat for around 30 minute Do not allow all liquid to evaporate.
  • Serve with vermicelli rice on the side.

2 lbs small eggplants or 2 medium eggplants
salt and pepper
1 -2 tablespoon tomato paste
4 cloves garlic, halved
1 tablespoon olive oil or 1 tablespoon vegetable oil
1/2 cup long-grain rice, rinsed and drained
salt & freshly ground black pepper
3 tablespoons olive oil or 3 tablespoons vegetable oil
1 medium onion, finely chopped
1/2 lb lean ground beef
2 tablespoons chopped parsley
1/2 teaspoon ground cumin
1/4 teaspoon turmeric
3 tablespoons slivered almonds, toasted (optional)

Steps:

  • Cut the stem ends from the eggplants.
  • Halve the eggplants lengthwise.
  • Peel if desired; if the eggplant is fresh, there is no need to peel it.
  • Use a spoon to scoop out the centers, leaving boat-shaped shells.
  • Keep the flesh you scooped out to add to the stuffing.
  • Sprinkle the shells with salt.
  • Put them in a colander upside down and leave to drain for 1/2 hour.
  • Preheat oven to 425 degrees C.
  • Prepare the stuffing: Add the rice to 3 cups boiling salted water and boil for 10 minutes until not quite tender.
  • Rinse under cold running water and drain well.
  • Heat 1 tablespoon of the oil in a frying pan, add the onion and cook over low heat until soft but not brown.
  • Leave to cool.
  • Mix with the beef, parsley, cumin, turmeric and almonds.
  • Chop the flesh removed from the eggplant.
  • Heat 2 tablespoons oil, add the chopped eggplant and sprinkle with salt.
  • Saute over medium-low heat, stirring often, until tender, about 10 minutes.
  • Leave to cool and mix with the stuffing.
  • Taste for seasoning; if you prefer not to taste a mixture that contains raw beef, broil or microwave a teaspoon of the mixture and taste it for seasoning.
  • Rinse the eggplant shells, pat them dry and put them in a baking dish.
  • Fill them with the stuffing.
  • Mix the tomato paste with 1/4 cup water and spoon the mixture over the eggplant.
  • Add enough water to the dish to cover the eggplant by one third.
  • Add the garlic to the dish.
  • Spoon 1 tablespoon oil over the eggplant.
  • Cover and bake 15 minutes.
  • Reduce the heat to 350 F and continue baking, covered, 15 more minutes.
  • Uncover and bake, basting occasionally, 30 minutes or until the eggplant is very tender.
