BAKED SEAFOOD DIP

Baked Seafood Dip image

Provided by Emma Chapman

Number Of Ingredients 8

8 oz. softened cream cheese
1/2 cup mayo
1/2 teaspoon anchovy paste*
3-4 cloves of garlic (minced)
4 oz. canned tiny shrimp (drained)
3/4 cup grated Parmesan cheese
1/4-1/2 teaspoon Old Bay seasoning
1/2 tablespoon fresh parsley (chopped)

Steps:

  • In a mixing bowl combine the cream cheese, mayo, anchovy paste, garlic, seasoning and parsley until well combined. Then stir in the tiny shrimp and 1/2 cup grated Parmesan cheese. The anchovy paste and Parmesan cheese are already quite salty so you really don't need to add much, if any, additional salt.
  • Scoop into a small baking dish or oven safe bowl. Top with the remaining Parmesan cheese. Bake at 350°F for 30-35 minutes until the cheese begins to look golden brown on the edges. Serve hot with crackers and fresh veggies.

BAKED CRAB DIP WITH OLD BAY AND RITZ CRACKERS

Baked Crab Dip With Old Bay and Ritz Crackers image

This crab dip is inspired by a recipe called "ritzy dip" from the "Three Rivers Cookbook," a Pittsburgh community cookbook published in 1973, in which canned crab is mixed with cream cheese, topped with Ritz crackers and baked. Fresh lump crab meat is the star in this updated version, with lemon juice, scallions and plenty of Old Bay seasoning to spice things up. This recipe doubles easily for larger groups, and the whole thing can be assembled and refrigerated up to a day in advance before being baked.

  • Prep shrimp and crab as needed by defrosting, cleaning, peeling and deveining your shrimp and shredding your crab. If you need a shrimp prep guide, I have some photos and mini tutorial [here] You can also buy yours already cleaned and shelled for ease of use! Whatever you do, skip the pre-cooked stuff; the texture always seems to be off. Once prepped, chop the raw shrimp and set aside.
