TWICE BAKED POTATOES WITH SOUR CREAM AND GREEN ONIONS



Twice Baked Potatoes With Sour Cream and Green Onions image

This makes a savory, fluffy potato that a great side for beef. My family loves with grilled steak or chicken. I make them ahead and warm them on the grill.

6 medium potatoes
4 tablespoons butter, at room temperature
1/3 cup whipping cream, at room temperature
3/4 cup sour cream, at room temperature
1 teaspoon salt
fresh ground black pepper
4 tablespoons finely chopped green onions

Steps:

  • Preheat oven to 350 degrees. Scrub potatoes, prick all over with fork and place directly on oven rack in center of oven. Bake until tender, about 1 hour and 10 minutes. Cool potatoes for 15 minutes.
  • Slice small portion of skin off one side of potatoes and carefully scoop out flesh. Side potato shells aside. Transfer flesh to mixing bowl. Rice or mash potato flesh.
  • Add sour cream and whipping cream and stir util incorporated into potatoes. Add butter and blend well. Add salt, pepper and green onions and stir. Adjust seasoning as necessary.
  • Spoon potato mixture into reserved potato shells. Top each with a few bits of butter. Can be made ahead and refrigerated. Allow to come to room temperature before baking.
  • Heat oven to 400 degrees. Place potatoes on baking sheet. Bake until heated through and beginning to brown on top, about 30 minutes. Can also place on grill, over indirect heat, for 20-30 minutes or until heated through.

6 medium potatoes
1/2 cup sour cream
1/4 cup fresh chives
1/2 teaspoon salt

Steps:

  • Wash the potatoes.
  • Wrap each one closely in aluminium foil.
  • Bake till tender in a medium oven, roughly 45 minutes.
  • Check for doneness by squeezing gently, if the potato gives it's done.
  • Chop the chives.
  • Combine the sour cream, salt and chives.
  • Adjust amount of salt to taste.
  • Serve the hot potatoes with the cold topping.
  • Each person peels the foil off their own potato and eats it with or without the jacket.

8 medium baking potatoes, scrubbed
2 tablespoons olive oil
1 large onion, finely chopped
1 cup reduced-fat sour cream
coarse salt and pepper
1/4 cup snipped chives

Steps:

  • Preheat oven to 400*.
  • Prick potatoes in several places with a fork.
  • Place on a baking sheet, and bake until easily pierced with the tip of a knife, 50 to 60 minutes.
  • Meanwhile, make onion sour cream. In a 10 inch skillet, heat oil over medium-low. Add onion and cook, stirring occasionally, until translucent, 8 to 10 minutes.
  • Transfer to a medium-bowl; cool to room temperature.
  • Add sour cream to onion; mix to combine. Season with salt and pepper.
  • Cut a deep cross in the top of each potato; push ends together to open. Season with salt and pepper.
  • Spoon some onion sour cream over each potato, and sprinkle with chives. Serve.

I don't know what it is about these potatoes, from the cookbook Second Helpings from Union Square Cafe, that is so good. Roasting them in sea salt in a cast iron skillet just does....something. I love preparing this recipe; it's almost like a ritual! :) Preparation and cooking times are close guesstimates. I hope you enjoy these as much as I do!

1 1/2 cups course sea salt
1 1/2 tablespoons olive oil
1 medium white onion, unpeeled
4 idaho potatoes, about 8 ounces each,scrubbed and unpeeled
4 -6 tablespoons sour cream

Steps:

  • Preheat oven to 400 degrees Farenheit.
  • Place the salt in an even layer over the bottom of a 12-inch cast-iron skillet.
  • Pour the olive oil into a medium bowl.
  • Dip onion in oil to coat all over.
  • Place onion on salt in the center of the skillet, and roast in oven for 10 minutes.
  • Coat the potatoes with the remaining oil and set them around the onion in the skillet.
  • Roast until the onion is tender and potatoes are cooked through, about an hour and 10 minutes.
  • Using tongs or a kitchen spoon, transfer the onion to a cutting board.
  • Measure 1/4 teaspoon of salt from the skillet and set aside.
  • Turn off the oven, and return the skillet with the potatoes to the oven, leaving door slightly ajar.
  • Peel and coursely chop the onion.
  • Transfer to a small bowl and season with the reserved salt.
  • Place the potatoes on a serving platter, split and open each.
  • Spoon one-quarter of the salted onion into each potato.
  • Top with sour cream, serve hot.

6 large idaho potatoes
vegetable oil, for coating
8 tablespoons butter
2 cups grated cheddar cheese, plus more for sprinkling
2 cups grated monterey jack cheese
2 cups sour cream
salt and pepper
1 lb shrimp, peeled and sauteed
paprika

Steps:

  • Preheat oven to 350°F.
  • Wash potatoes, then dry them and gently prick with a fork on the sides.
  • Coat each potato with vegetable oil, place on foil-covered pan, and bake for approximately 1- 1 1/2 hours until cooked through.
  • Place the butter in a large bowl.
  • Remove the potatoes from the oven and slice each potato in half.
  • Gently scoop out the potato and place in the bowl.
  • Using a mixer on high, mix the potatoes, butter, sour cream, salt and pepper.
  • Fold the shrimp and both cheeses into the mixture.
  • Gently stuff the mixture back into the potato shells, making sure not to break them.
  • Pile the mixture as high as you can on top of the potato shells.
  • Sprinkle each potato with cheese and paprika for color.

These potatoes go well with any meat dish..we just love them..such a wonderful comfort food. I grew up eating these potatoes, my Gram made the best.. My pictures.

2 lb potatoes, (about 6 ) peeled and cubed, about an inch size
1/4 c flour
3 Tbsp butter
1 tsp salt
1/4 tsp pepper
2 c milk
pinch nutmeg
fresh minced parsley

Steps:

  • 1. In a large saucepan, place potatoes and cover with water. Bring to a boil, reduce heat and continue cooking until fork tender, about 15 minutes.
  • 2. In another saucepan, melt butter. Stir in the flour salt, pepper, nutmeg, until smooth. Gradually stir in the milk. Bring to a boil and cook until thickened, while constantly stirring.
  • 3. Drain the potatoes well, place in your serving dish; pour the cream mixture over the potatoes and lightly toss to coat. Sprinkle with fresh parsley. Sometimes I slice a sweet onion and add to the potatoes while they are cooking..adds even more delicious flavor. Enjoy!

  • If baking in the oven preheat to 400°F.
  • Scrub the potatoes well with a vegetable brush and water, then dry.
  • Poke potatoes with a fork several times so they won't explode, and, if desired, dust with salt while still wet.
  • Bake directly on oven rack until tender (for one hour) or wrap in tin foil and bake in campfire or on the grill (over high heat) for 45 minutes, turning once.
  • In a small bowl, combine chives, bacon bits and sour cream; mix well.
  • Let potatoes cool for several minutes, open, spread with butter and sprinkle with salt and pepper and serve with sour cream topping.
