This recipe would be great for a brunch, or for house guest. If available you can use fresh berries. For an extra tasty top, sprinkle a tablespoon or so of extra brown sugar.

Steps:
- Preheat oven to 375.
- Spray the inside of a 10-1/2 by 7 inch baking dish with cooking spray and place on a baking sheet.
- In a large bowl, mix together the oats, sugar, baking powder, cinnamon, salt, half the walnuts/pecans, half the berries and half the chocolate chips. (Save the other half of berries, walnuts/pecans and chocolate chips for the top of the oatmeal).
- In another bowl, whisk together the milk, egg, butter and vanilla extract. Add the oat mixture to prepared baking dish.
- Arrange the remaining berries, walnuts/pecans and chocolate on top.
- Add the banana slices to the top then pour the milk mixture over everything.
- Gently shake the baking dish to help the milk mixture go throughout the oats.
- Bake 35 to 40 minutes or until the top is nicely golden brown and the milk mixture has set.

- Preheat the oven to 375°F / 190° C. Grease an 8x8 pan with oil.
- In a medium bowl, mix together the oats, almonds, baking powder, and salt. Set aside.
- In a large bowl, beat the egg. Whisk in the almond butter and maple syrup. Stir in the milk and vanilla extract. Stir in the oat mixture.
- Pour the mixture into the prepared pan. Sprinkle the dark chocolate chips on top. Stir it very slightly, just enough so some of the dark chocolate chips mix into the batter.
- Place in the oven and bake for 45 minutes, until the oatmeal is set in the middle. Allow to cool for about 10 minutes, then dust with powdered sugar (if desired) and serve. Top with additional maple syrup if desired.

- Lightly toast walnuts and set aside.
- Preheat oven to 350 degrees.
- Coat a 1 1/2 quart casserole dish with butter or margarine substitute.
- In a medium saucepan, bring the soy milk (or substitute) and butter to the boil. Slowly stir in the oats with a fork.
- Stir in the apple and/or pears, dried fruit of choice, toasted walnuts, 2 tablespoons brown sugar, vanilla extract if using, cinnamon, and the salt.
- Cook mixture, stirring constantly for 1 minute. Be careful not to burn! Pour the oatmeal mixture into the prepared casserole dish.
- Bake, uncovered for 15 minutes. The last 5 minutes of cooking, sprinkle the remaining 1 tablespoon of brown sugar on top and bake until the top is bubbly.
- Serve warm with additional warmed soymilk or milk served on the side if you wish.
- For vegan use soy milk, rice milk and soy margarine options.

- Gather the ingredients.

- Melt 1/4 cup of butter in a small saucepan over low heat or microwave in a microwave-safe bowl until melted. Set aside.

- Preheat the oven to 375°F/190°C with a rack in the top third of the oven. Generously butter the inside of an 8-inch/20cm square baking dish.
- In a bowl, mix together the oats, half the walnuts, the sugar, if using, the baking powder, cinnamon, and salt.
- In another bowl, whisk together the maple syrup, if using, the milk, egg, half of the butter, and the vanilla.
- Arrange the bananas in a single layer in the bottom of the prepared baking dish. Sprinkle two-thirds of the berries over the top. Cover the fruit with the oat mixture. Slowly drizzle the milk mixture over the oats. Gently give the baking dish a couple thwacks on the countertop to make sure the milk moves through the oats. - Bake for 35 to 45 minutes, until the top is nicely golden and the oat mixture has set. Remove from the oven and let cool for a few minutes. Drizzle the remaining melted butter on the top and serve. Sprinkle with a bit more sugar or drizzle with maple syrup if you want it a bit sweeter.
