¾ teaspoon salt (or adjust to taste)
¾ teaspoon cayenne pepper (or adjust to taste)
2 teaspoons paprika

  • Take each potato wedge and dredge it in the seasoning.
  • Take a piece of bacon and wrap it around the potato beginning and ending on the same side. Place the potato down on the side where the bacon end pieces meet. (This will keep it from unwrapping as it cooks and you won't need toothpicks.) Repeat with each potato wedge.

Yield 4

Number Of Ingredients 8

12 ounces bacon strips, cut into thirds crosswise
1 ½ pounds sweet potatoes, peeled and cut in 1/2-inch cubes
1 tablespoon olive oil
1 tablespoon melted butter
¼ teaspoon ground cinnamon
1 pinch black pepper
1 pinch Sea salt to taste
1 sheet Reynolds Wrap® Aluminum Foil

Steps:

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet with Reynolds Wrap® Aluminum Foil. Set aside.
  • Wrap each sweet potato cube with a bacon slice, holding in place with a toothpick. Place on the prepared baking sheet, toothpicks facing up.
  • Combine the olive oil, melted butter, cinnamon and pepper, stirring until well mixed. Drizzle the mixture over the sweet potato bites. Sprinkle with sea salt. Loosely tent the toothpicks with damp paper towels and wrap the baking sheet with Reynolds Wrap® Aluminum Foil, being careful not to pierce the foil. Bake until the potatoes are just tender, about 20 minutes.
  • Remove the foil and paper towels and return to the oven; bake until the bacon is crispy and the fat starts to render, 15-20 more minutes. Blot the excess fat with the paper towels, then serve.

MAPLE-GLAZED SWEET POTATO WEDGES WITH BACON

Maple-Glazed Sweet Potato Wedges With Bacon image

To make maple-glazed sweet potatoes irresistible, you may want to look to bacon, another of maple syrup's best friends, for a salty, smoky boost. The bacon fries in the oven while the sweet potato cooks, leaving the stove open (grits? oatmeal? fried eggs?) and avoiding the messy sputtering of bacon cooking in a skillet.

Provided by Sarah Jampel

Categories     dinner, weekday, vegetables, side dish

Time 45m

Yield 4 to 6 servings

Number Of Ingredients 6

2 pounds sweet potatoes (about 4 medium potatoes), scrubbed and dried
2 tablespoons olive oil
2 teaspoons kosher salt
2 tablespoons plus 1 teaspoon maple syrup
8 ounces thick-cut bacon
Flaky salt, to serve

Steps:

  • Heat the oven to 425 degrees, and line a baking sheet with parchment paper. Cut each sweet potato in half lengthwise, then slice each half into 3 or 4 wedges, 1- to 1 1/2-inches thick.
  • In a large bowl, toss the sweet potatoes with the oil and salt. Spread onto the baking sheet in a single layer, leaving a little space between the pieces. (Use two baking sheets if you need to).
  • Bake for 20 minutes, then drizzle with the maple syrup, toss, and return to the oven for another 15 to 20 minutes, until the wedges are deeply brown on both sides.
  • Once you've tossed the potatoes, place the bacon on an unlined sheet pan. Bake for 13 to 15 minutes, until crisp and cooked through. Place on a paper towel to drain (pour fat from the sheet pan into a jar and store in your refrigerator to use later, or discard), then chop into 1/2-inch pieces and toss with sweet potato wedges and the remaining teaspoon maple syrup. Garnish with flaky salt and serve immediately.

BACON WRAPPED SWEET POTATO WEDGES

Bacon Wrapped Sweet Potato Wedges image

Once you start wrapping sweet potato wedges in bacon you won't have them any other way!

Provided by Chris

Categories     Side Dish

Time 40m

Number Of Ingredients 5

4 small Sweet Potatoes ((approx 800g/1.8lb/28oz in total))
16 slices of Bacon
1.5 tbsp Olive Oil
1/4 tsp EACH: Salt, Black Pepper ((plus more salt to serve - optional))
1 tsp EACH: Chilli Powder, Smoked Paprika (optional (see notes))

Steps:

  • Scrub the potatoes clean and thoroughly dry. Cut off any lumpy bits at either end or any wiry bits. Slice each potato into 4 even sized wedges.
  • Place on a baking tray and use your hands to coat in olive oil and seasoning. One by one fairly tightly wrap a wedge in bacon, starting at one end and finishing at the other. Place seam-side-down so they don't unwrap in the oven. Make sure they're spaced out (use 2 trays if you need to).
  • Place in the oven at 400F/200C for 30-35mins, or until soft right through the centre. Serve up and enjoy!
