1 large Kohlrabi (about 18 ounces)
salt
2 sprigs parsley
2 sprigs thyme
1 sprig rosemary
4 Tbsps breadcrumbs
2 Tbsps olive oil
1 tsp grainy Mustard
1 tsp honey
peppers
0.5 tsp softened butter

Steps:

  • Rinse and peel kohlrabi and reserve greens.
  • Cut the kohlrabi into thick slices, then into approximately 3/4-inch cubes. Cook in a pot of boiling salted water until crisp-tender, about 5 minutes.
  • Prepare a bowl of ice water. Drain kohlrabi and immediately plunge in ice water to preserve crispness. Drain well.
  • Rinse herbs, shake dry, and pluck leaves. Combine with the kohlrabi greens and chop finely. Place in a bowl.
  • Add breadcrumbs, olive oil, mustard and honey to herb mixture. Season with salt and pepper and mix well.
  • Brush a baking dish with the softened butter. Spread kohlrabi in the dish and sprinkle with the breadcrumb mixture. Bake in a preheated oven at 400°F until golden brown.

4 medium carrots, sliced
1/4 cup chopped onion
3 tablespoons butter, divided
2 tablespoons all-purpose flour
1/2 teaspoon salt
Dash pepper
1-1/2 cups 2% milk
1/4 cup minced fresh parsley
1 tablespoon lemon juice
3/4 cup soft bread crumbs

Steps:

  • Place kohlrabies and carrots in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Drain well; set aside. , In a large skillet, saute onion in 2 tablespoons butter until tender. Stir in the flour, salt and pepper until blended. Gradually whisk in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. , Remove from the heat. Stir in the vegetable mixture, parsley and lemon juice. Transfer to a shallow 2-qt. baking dish coated with cooking spray. , In a small skillet, melt remaining butter over medium heat. Add bread crumbs; cook and stir for 2-3 minutes or until lightly browned. Sprinkle over vegetable mixture. , Bake, uncovered, at 350° for 20-25 minutes or until heated through.

4 kohlrabi bulbs, peeled
1 tablespoon olive oil
1 clove garlic, minced
salt and pepper to taste
⅓ cup grated Parmesan cheese

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C).
  • Cut the kohlrabi into 1/4 inch thick slices, then cut each of the slices in half. Combine olive oil, garlic, salt and pepper in a large bowl. Toss kohlrabi slices in the olive oil mixture to coat. Spread kohlrabi in a single layer on a baking sheet.

The next time you buy a bunch of kohlrabi, COOK the leaves - they're delicious! They are firm & mild. This is most likely adapted from a recipe that I saw online while looking for guidelines. It's VERY quick & easy. The 'Asian Salt' I used is McCormick's Asian Style Spiced Sea Salt with sea salt, garlic, sesame seed, sugar, orange peel, ginger, coconut, red bell pepper, red pepper, onion, soy sauce, sesame oil, and some crap. Feel free to add your own flavorings in lieu of this mixture if you prefer.
