1 (3- to 4-pound) fully cooked boneless cured ham
1 cup orange juice
1/4 cup firmly packed brown sugar
1/4 cup country-style Dijon mustard
1/4 cup honey
1 Half Stick (1/4 cup) Land O Lakes® Butter melted

Steps:

  • Heat oven to 350°F.
  • Place ham into ungreased 13x9-inch baking pan. Pour orange juice over ham.
  • Combine remaining ingredients in bowl. Spoon sauce over entire ham. Bake, basting every 15 minutes with pan juice, 70-80 minutes or until heated through. Serve ham with pan juices.

1 (12-pound) joint (mild cure boneless) ham
7 quarts dry ginger ale
1 cup chunky ginger preserves*
2 tablespoons hot English mustard
1/2 cup soft dark brown sugar
1/2 teaspoon ground cloves

Steps:

  • Place the joint in a large pan over the hob, or burner, and add 7 quarts of dry ginger ale. Bring the pan to the boil then lower the heat slightly so that it keeps bubbling steadily for 4 1/2 hours.
  • Towards the end of the 4 1/2 hours, preheat the oven to 425 degrees F and begin the glaze.
  • In a bowl, add 1 cup of chunky ginger preserves. Stir in 2 tablespoons of hot English mustard. Add 1/2 a cup of soft, dark brown sugar and sprinkle in 1/2 a teaspoon of ground cloves.
  • After 4 1/2 hours, gently lift the ham out of the pan and place on a foil-lined baking tray. Carefully cut away the skin, leaving a thin layer of fat. There is no need to score the surface, simply slap on the glaze and place the tray with the ham into the oven for 20 minutes.
  • Serve hot or cold.

1/4 cup orange marmalade
1 tablespoon gingerroot, minced
2 teaspoons Dijon mustard
1/2 cup ginger ale
1/4 cup orange juice
2 tablespoons orange juice
2 teaspoons brown sugar
1 tablespoon cornstarch

Steps:

  • Prepare and heat the ham according to directions.
  • Meanwhile combine marmalade, ginger root and mustard thoroughly.
  • Remove meat 30 minutes, before the ham is done.
  • Raise oven heat to 425°F.
  • Brush with marmalade mixture.
  • Pour ginger ale and 1/4 orange juice into the roasting pan.
  • Bake uncovered for 30 minutes, basting the ham with the pan juices every 10 minutes.
  • Remove from pan, put on a board, cover lightly with foil and let rest for approx 15 minutes.
  • Pour cooking juices into a small sauce pan. Stir in brown sugar; heat and let simmer.
  • Combine the remaining orange juice with the cornstarch.
  • Add to the mix and let simmer until the sauce thickens, about 1-2 minutes.
  • Drizzle ham slices before serving.

1 4 lb. bone-in ham (fully cooked)
Whole cloves (optional)
1 cup light brown sugar (packed)
½ cup grainy mustard
¼ cup honey
¼ cup fresh orange juice
2 Tsp. grated orange zest
1 Tsp. ground ginger

Steps:

  • To bake: Preheat the oven to 325° F / 165° C / gas mark 3. Line a shallow roasting pan with foil. To grill: Preheat the grill. Lightly grease the bottom of a foil pan.
  • Place the ham in the pan cut-side down. Using a paring knife, score the ham's fat in a diamond-shaped pattern, taking care not to cut into the meat. (Optional: insert cloves into the center of the diamonds.)
  • In a small saucepan, combine the glaze ingredients and bring to a boil over medium heat. Remove from heat and set aside.
  • Add 1/2 cup of water to the roasting pan with the ham in it. Cover the pan with foil and tightly crimp it at the edges. Bake or grill over indirect heat for 30 minutes.
  • Remove the foil and generously baste the ham with the glaze. Resume baking or grilling. Baste with more glaze every 10 minutes until the ham has reached an internal temperature of 140°F / 60°C (approximately 30 minutes).
  • Allow the ham to rest at room temperature for 10 minutes before serving. Remove cloves before serving.

1 (10- to 12-pound) fully cooked, trimmed, bone-in smoked ham (shank end), room temperature
2 cups freshly squeezed orange juice
1/2 cup packed dark brown sugar
3/4 cup bourbon
1/2 cup guava or apple jelly, warmed
2 large shallots, peeled and thinly sliced
3 whole allspice
3 whole cloves
Zest of 1 orange plus 2 oranges cut into 1/4-inch-thick slices
1 (2-inch-long) piece fresh ginger, peeled and grated
Special Equipment
1 (10- by 14-inch) roasting pan; toothpicks; pastry brush

Steps:

  • Position a rack in the lower third of oven and preheat to 325°F.
  • Using a sharp knife, score the fat covering the ham in a 3/4-inch-wide diamond pattern (do not cut into the meat). Place the ham in a 10-by-14-inch roasting pan and add 1 cup water. Roast the ham for 2 hours.
  • While the ham is roasting, prepare the glaze: In a heavy, medium saucepan over moderately low heat, combine 1 cup orange juice, brown sugar, and bourbon. Bring to a simmer and continue simmering for 10 minutes. Add the guava or apple jelly, shallots, allspice, and cloves, and continue simmering until slightly reduced, about 5 minutes. Add the orange zest and the remaining 1 cup orange juice, and bring to a boil. Continue boiling until thickened, about 5 minutes. Add the orange slices and fresh ginger, and cook until the orange slices are tender, about 2 minutes.
  • Once the ham has been in the oven for two hours, drape the glazed orange slices over the ham, securing them with toothpicks, and brush the ham and oranges with about 1/2 cup of glaze, reserving the remainder for serving. Continue roasting the ham until an instant-read thermometer inserted into the thickest part registers 145°F, about 30 minutes.
  • To Serve:
  • Remove the toothpicks from the ham and arrange the orange slices on a platter. Slice the ham and arrange on top of the oranges. Warm the remaining glaze and serve alongside.
