Steps:
- Heat oven to 200C/fan 180C/gas 6. Tear 1 medium ciabatta into big, ragged croutons or, if you prefer, cut with a bread knife. Spread over a large baking sheet or tray and sprinkle over 2 tbsp olive oil.
- Rub the oil into the bread and season with a little salt if you like (sea salt crystals are best for this). Bake for 8-10 mins, turning the croutons a few times during cooking so they brown evenly.
- Rub 2 skinless, boneless chicken breasts with 1 tbsp olive oil, season. Place pan over a medium heat for 1 min, until hot, but not smoking. Lay the chicken on the pan (it will sizzle if it's hot enough) and leave for 4 mins.
- Turn the chicken, then cook for 4 mins more. Check if it's cooked by poking the tip of a sharp knife into the thickest part; there should be no sign of pink and juices will run clear.
- Bash 1 garlic clove with the flat of a knife and peel off the skin. Crush with a garlic crusher. Mash 2 anchovies with a fork against the side of a small bowl.
- Grate a handful of parmesan cheese and mix with the garlic, anchovies, 5 tbsp mayonnaise and 1 tbsp white wine vinegar. Season to taste. It should be the consistency of yogurt - if yours is thicker, stir in a few tsps water to thin it.
- Shave the cheese with a peeler. Tear 1 large cos or romaine lettuce into large pieces and put in a large bowl. Pull chicken into bite-size strips and scatter half over the leaves, along with half the croutons.
- Add most of the dressing and toss with your fingers. Scatter the rest of the chicken and croutons, then drizzle with the remaining dressing. Sprinkle the parmesan on top and serve straight away.

Steps:
- Prepare the Simple Pizza Dough according to recipe.
- Preheat the oven to 500 degrees F.
- On a baking sheet brushed liberally with olive oil, stretch the dough to desired shape and thickness. Brush the crust with olive oil and top with the mozzarella slices. Bake the pizza until the dough crisps up and cheese is melted, about 15 minutes.
- Remove the pizza from oven. Top the melted mozzarella with the grated Parmesan and sliced chicken. Toss the romaine hearts with the Caesar Salad Dressing and season with salt and pepper. Top the pizza with the Caesar salad and shave over some Parmesan. Serve and enjoy!
- Cook's Note: If you don't have a pizza stone at home, no worries, use a well-oiled sheet tray and a hot oven to achieve a crisp bottom on your pizza! Also place the dough on the very bottom rack of your oven. It will help to create that crispy crust.
- In a blender or food processor, process the Parmesan, mayonnaise, lemon juice, olive oil, mustard, Worcestershire, salt, pepper, garlic and anchovy until emulsified and smooth. Refrigerate until ready to use.;
- In a liquid measuring cup, combine the warm water, yeast and sugar. Allow the yeast to dissolve and bloom, about 5 minutes. Once bloomed, add the olive oil.
- Meanwhile, in the bowl of a stand mixer fitted with the paddle attachment, combine the flour and salt. Stream in the water/yeast mixture and as the dough begins to come together, switch to a dough hook attachment. Allow the dough to knead, adding a bit more flour if needed, so that the dough releases from the sides of the bowl, 1 to 3 minutes. You should be able to touch the dough and not have the dough stick to your fingers. Once the dough has kneaded and has pulled away from the sides of the bowl, remove the dough from bowl to a floured work surface and, with floured hands, continue to knead it by hand for 1 to 2 minutes. Then form the dough into a round ball and place it into a large bowl sprayed with nonstick spray. Cover the bowl with plastic wrap or a clean dish towel and let the dough rise in a warm area of your kitchen until it doubles in size, 1 1/2 to 2 hours. After the dough has risen it is ready to be cooked however you'd like!
- Cook's Notes: This dough is wet dough, keep bench flour at the ready and make sure to flour your hands when working with the dough. Trust your gut as a chef, if the dough is to wet, add more flour, if it is too stiff, add a little water.
- Sugar is used to feed the yeast which will help the dough to grow. Bread flour will give you a chewier texture because the flour has more gluten. You don't need to use a thermometer to get the water temperature, it should just feel warm to the touch.

Steps:
- For the pizza dough: Heat 1/4 cup of the olive oil and the garlic in a small saucepan over medium-low heat until the garlic is softened but not browned, about 5 minutes. Stir in 1/2 teaspoon pepper. Cool slightly.
- Whisk the water and sugar in a bowl; sprinkle the yeast over top. Set aside until foamy, about 10 minutes. Stir in the olive oil-garlic mixture.
- Whisk the flour and 2 teaspoons salt in a large bowl. Make a well in the center of the flour and pour in the yeast mixture. Gradually stir with a wooden spoon to make a rough dough.
- Turn the dough out onto a lightly floured surface. Knead until smooth and elastic, about 5 minutes, dusting with more flour as necessary. Form into a large ball. Brush a large bowl with olive oil, add the dough and turn to coat. Cover tightly with plastic wrap and set aside at room temperature until doubled in size, about 1 hour.
- Meanwhile, adjust an oven rack to the lowest position and preheat to 450 degrees F. Put a baking sheet on the rack to heat up while the dough rises. (The baking sheet should be the same size or slightly larger than the baking sheet that you will later form the dough on.)
- Once the dough has doubled in size, brush a rimmed baking sheet generously with half of the remaining olive oil. Put the dough onto the oiled baking sheet and stretch and pat evenly into the pan, making sure that it reaches the edges. Use your fingertips to make dimples all over the dough. Brush with the remaining olive oil and sprinkle lightly with salt. Arrange the tomato slices on the pizza in a single layer, making sure that each bite will have a piece of tomato. Sprinkle the tomatoes lightly with salt. Place the baking sheet with the dough directly on top of the preheated baking sheet in the oven (this helps with a crispy crust). Bake for 15 minutes. Remove the baking sheets and sprinkle the Parmesan over the dough. Continue to bake until the dough is golden brown and the cheese is melted, 10 to 15 minutes
- While the pizza is baking, make the Caesar dressing: Whisk together the lemon zest and juice, egg yolk, anchovies, garlic and honey in a large bowl. Slowly whisk in the olive oil, season with 1/4 teaspoon salt and a few grinds of pepper.
- Remove the pizza from the oven and transfer to a large platter or cutting board. Toss the romaine with the dressing. Season with additional salt and pepper if needed. Top the pizza with the salad. Use a vegetables peeler to shave ribbons of Parmesan over the salad. Drizzle with olive oil, cut into pieces and serve.

- To make the crust, add yeast and sugar to warm water and allow to proof for 5 minutes. While the yeast is proofing, combine the salt, olive oil, and flour in the bowl of a stand mixer with the dough hook attached. When your yeast mixture is nice and bubbly, add it to the bowl of the stand mixer, turn it on, and let it go for about 5 minutes. It should mix the dough and then start to knead it. The dough should be soft but not sticky; add more flour if necessary. Remove the dough from the bowl and form it into a nice ball. Pour a little more olive oil into the bottom of the bowl and put the dough back in, turning it once to coat with olive oil. Cover the bowl with plastic wrap, set it in a warm spot, and allow to rise for 30 minutes.
- When the dough has risen, punch it down, remove it from the bowl, and place it on a clean, well-floured counter. At this point, I always divide the dough into 3 equal portions so that my pizzas are a manageable size. Roll each portion out to a thickness of 1/8-1/4".

- Sprinkle the yeast over 1 1/2 cups of warm--not lukewarm--water.
- In a mixer with a paddle attachment, combine the flour and salt. With the mixer running on low speed, drizzle in the olive oil and mix until combined. Pour in the yeast mixture and mix until combined.
- Coat a separate mixing bowl with a light drizzle of olive oil and tip the dough in. Form a ball and toss to coat the dough ball in the olive oil. Divide into 2 balls. Cover tightly with plastic wrap and allow to rise for at least 1 hour, or up to 3 or 4 days refrigerated.

The dressing will go green at this stage. Refrigerate the dressing for a few hours before using it on the salad.

- DRESSING: If making a homemade dressing, start here! Add all the dressing ingredients to a blender jar. Blend until smooth. Taste and adjust any flavors to personal preference and then place (covered) in the fridge to chill and for flavors to meld and intensify.
- COOK CHICKEN: Pat the chicken breast dry with a paper towel or napkin. Cut the chicken in half horizontally to get two equal sized pieces. Pound if needed to get chicken to even thickness (we don't want to flatten the chicken, just ensure it's even for cooking). Drizzle with olive oil -- about 1/2 teaspoon per side per piece of chicken. Sprinkle each side evenly with salt, pepper, and lemon pepper. I add about 1/4 teaspoon per side of each, but add to personal preference (remember Parmesan cheese will make the pizza salty). Cook the chicken on a grill, in a grill pan or skillet for about 3-5 minutes per side over medium high heat or until juices run clear. It's okay if the chicken isn't totally cooked through (to 165 degrees F), since we're cooking it further in the oven. When the chicken is done, remove and tent it with foil. Let cool 5 or so minutes before very thinly slicing it.
- PIZZA PREP: Preheat the oven to 400 degrees F. Set the naan bread on the cookie sheet (2 per sheet). Lightly drizzle the naan breads with olive oil (about 1/2 teaspoon per naan). Bake in the oven for 2 minutes and then remove.
- CHEESE/VEGGIES: While naan is baking, thinly slice the mozzarella and grate the Parmesan cheese.Remove the naan breads from the oven after 2 minutes and evenly spread the mozzarella cheese across the top (1.5 ounces (1/3 cup) per naan bread). Evenly spread the sliced chicken across the top. Sprinkle about 2 tablespoons Parmesan cheese across the top of each pizza.

- Prepare a gas or charcoal grill to high heat. Brush the grill with a bit of oil. While the grill is getting warm, make the Caesar Dressing. In a blender or food processor, process the Parmesan, mayonnaise, lemon juice, olive oil, mustard, Worcestershire, salt, pepper and garlic until emulsified and smooth. Refrigerate until ready to use.
- Shape the dough into 2 medium-ish pizzas while on a clean floured surface. Let the dough sit for 5 minutes and then re-form to make sure it's as big as you'd like. Place the pizza dough on a lightly floured rimless baking sheet, or pizza peel. Transfer the dough over to the grill, and slide the pizza dough directly onto the grill. Grill the dough for about 2 minutes with the lid closed. Using a pair of tongs, lift the lid, and flip the dough over onto the other side and cook for about 2 minutes more. The dough should be golden brown with grill marks on both sides.
- Brush the olive oil over the pizza and sprinkle with garlic. Arrange the mozzarella, parmesan and chicken breast slices on top. and place back onto the grill until the cheese has melted. Using tongs, remove the pizza from the grill and top with the dressed romaine leaves and season with salt and pepper as needed. Garnish with long strips of parmesan cheese. Slice and serve immediately.

- With your grill set to medium heat, brush olive oil on one side of each prepared pizza crust, and place crusts oil-side-down on the grill. Cook--with the cover up--until the bottom of the crust has nice grill marks on it and it is stiff enough to be flipped. Brush more olive oil on the top of the crust and flip it over. Sprinkle minced garlic and chicken evenly over crusts, drizzle with pesto, and top with shredded mozzarella. Close cover and cook until cheese is completely melted. Place cooked pizzas on a large cutting board or cookie sheet and allow to cool slightly.
- Preheat your oven to 500°F. Sprinkle corn meal evenly over as many cookie sheets as you need to accommodate all of your crusts, and place crusts on cookie sheets. I'm assuming that if you have a pizza stone and a pizza paddle, you know how to use them, so I'm not going to get into that methodology! Brush olive oil on the top of each crust. Sprinkle minced garlic and chicken evenly over crusts, drizzle with pesto, and top with shredded mozzarella. Bake until crusts are golden and cheese is melted, 5- 10 minutes. Remove from oven and set aside to cool.
