BAKED FISH IN MAYONNAISE AND MUSTARD
An old recipe I have in my fish collection that's simple, fast and tasty. I've also used this with Walleye and Bass fillets.

Steps:
- Preheat oven to 400°.
- Place fish in lightly greased shallow baking dish.
- Stir mayonnaise, mustard, onion, cayenne and dill weed in a small bowl until blended.
- Spread mixture on the fish.
- Bake at 400°F for approx 20 minutes or until fish flakes easy with a fork.
BAKED SALMON WITH HONEY MUSTARD SAUCE

Steps:
- Preheat the oven to 375 degrees F. Line a large baking sheet with a nonstick silicone liner, and lay the salmon, skin side down, on top. Set aside.
- Combine the mayonnaise, mustard, honey and chives in a medium bowl and stir to thoroughly combine. Reserve half of the sauce. Spoon the remaining sauce over the fish, spreading it evenly all over the top and sides of each fillet. Sprinkle with salt and pepper.
- Roast just until the fish is opaque in the center, 7 minutes. Increase the oven to broil. Broil the fish for 6 to 7 minutes, but keep your eye on it to avoid overcooking. Garnish with chives and serve with the reserved sauce.
MAYONNAISE BAKED FISH
Really simple recipe that even pleases the non fish lovers among us! My favorite fish to use is tilapia, but any mild, white fish will work nicely.

- Preheat oven to 400°F.
- Place fish, in a lightly greased 9x13 baking dish.
- In a bowl, combine mayonnaise, butter, onion, cheese, lemon juice, Old Bay, and pepper. Mix until a thick paste is formed.
- Spread mixture evenly over fish filets, then top with bread crumbs.
- Bake for about 10 minutes, or until fish is flaky.
- To finish cooking, place fish under the broiler, for another 2-3 minutes, or until fish is golden brown.

PAN-FRIED MUSTARD MAYONNAISE TILAPIA
Steps:
- Stir together the panko crumbs, salt, paprika, thyme, black pepper, and dried parsley in a bowl until thoroughly combined. In another bowl, mix the brown mustard and mayonnaise until smooth.
- Heat vegetable oil in a skillet over medium heat until the oil shimmers. Dip each tilapia fillet into the mustard mixture, then coat on all sides with the seasoned panko crumbs. Lay the coated fillets gently into the hot oil, and cook until golden brown, about 4 minutes per side.

- For the fish: Place the flour on a large plate, the breadcrumbs on another and the egg in a shallow bowl. Dredge a fillet of fish in the flour, shaking off excess. Dip fish into the egg mixture until it is well coated. Allow excess to drip off. Place fish in the breadcrumbs and gently pat down on each side, ensuring it is well coated. Place on a tray and repeat with remaining fish fillets.
- Meanwhile, place the pancetta in a shallow baking tray and place under the grill. Grill until crisp, then remove and place on kitchen paper to drain.

- Half fill a deep frying pan with water and bring to simmer on low. Add the fish (ensuring it is submerged) and simmer gently for 5 minutes. Remove from the heat and set aside for 10 minutes to complete cooking. Transfer to a plate to cool.
- Meanwhile, in a medium saucepan of salted water, boil the potatoes and garlic together until very tender. Drain well and mash.
- Flake the fish into the mash. Stir in the corn, onion, dill and zest. Shape ½ cups of the mixture into 3cm thick patties. Arrange on a tray. Chill for 1 hour.
- Dust the fish cakes in flour, shaking off excess. Dip into the beaten eggs, then roll in crumbs to coat. If freezing, layer in an airtight container between sheets of baking paper, seal and freeze.
