An American in Canada told me how much he missed the dirty rice he used to have at home. This is something we slapped together from about 10 different recipes we found on the web.

10 -12 links hot Italian sausages, crumbled
1 large onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
4 cloves garlic, crushed
1/4 teaspoon red pepper flakes
1/2 teaspoon cayenne pepper
1/2 teaspoon garlic powder
3/4 cup water
1 tablespoon Worcestershire sauce
1 teaspoon Frank's red hot sauce or 1 teaspoon Tabasco sauce
1/2 cup chopped green onion
1/2 cup minced parsley
4 cups hot cooked rice
salt

Steps:

  • Spray a large non-stick pan with vegetable oil spray.
  • Brown crumbled sausages in pan along with diced onion, bell peppers, and garlic.
  • Drain fat and season with cayenne pepper, red pepper flakes and garlic powder.
  • Add water and simmer for about 20- 30 minutes, until the vegetables are cooked down.
  • Add Worcestershire sauce and Franks Hot Sauce (Tabasco).
  • Simmer for 15 minutes.
  • Add cooked rice, stir gently, until all rice is moistened.
  • Top with green onion and parsley, stir lightly and serve.

Dirty rice is packed with Cajun flavor and the texture is to die for! It has the most amazing blend of delicious spices, meats, and rice that will definitely be something that your family will go crazy for!

1/2 pound ground beef
1/2 pound ground pork
1 small onion (diced)
1 green bell pepper (diced)
2 stalks celery (diced)
3 garlic cloves (minced)
1 Tablespoon Cajun Seasoning
1 1/2 cups long grain rice
3 1/2 cups beef broth
salt to taste

Steps:

  • In a large pot cook and crumble the ground beef and pork until no longer pink. Add in the onion, bell pepper, celery, garlic, and cajun and cook until they start to soften.
  • Add in rice and beef broth. Bring to a boil and reduce heat and let simmer for 20 minutes or until rice is tender. Fluff and serve.

Found on an advertising flyer, nutritious and full of flavour and texture. Prep time does not allow for the bean preparation, although if you substitute canned beans, then the time stated is the time it will take!

2 tablespoons olive oil
3 garlic cloves, minced
1 cup chopped onion
1 green bell pepper, chopped
1 tablespoon chili powder
1/4 teaspoon crushed red pepper flakes
1 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1 1/3 cups uncooked white rice
2 3/4 cups water
1 teaspoon salt
1 1/3 cups corn kernels, blanched
1 cup black beans, cooked and drained
1 (410 g) can chopped tomatoes with juice (I use a 420 gr can of tomatoees)
1/4 cup toasted pine nuts
fresh ground black pepper
1 red onion, thinly sliced
1 tablespoon fresh lime juice
2 tablespoons chopped fresh cilantro
1 lime, cut into wedges

Steps:

  • Beans : Soak for 2 - 4 hours.
  • To cook, drain the soaking water and add cold water, 1 part beans to 2 or 3 parts cold water. Bring to a boil, then reduce heat to a very slow simmer, so the beans stay in their jackets. Simmer for 2 hours.
  • Lightly toast pine nuts.
  • In a heavy saucepan, heat 1 tablespoon of the olive oil over medium heat.
  • Add the garlic and the chopped onions; saute for 5 minutes, stirring frequently.
  • Mix in the bell pepper, chili powder, chili flakes, cumin, and cinnamon.
  • Saute for 2 minutes.
  • Pour the rice into the saucepan and stir to coat.
  • Add the water and 1 teaspoon salt, and bring the rice to a boil over high heat.
  • Cover the pan and turn the heat to low.
  • Simmer the rice for 25 minutes.
  • When the rice is cooked, mix in tomatoes, corn, black beans, and pine nuts.
  • Stir in salt, pepper and lime juice.
  • When the mixture is heated through, spoon it onto plates and top with the sliced red onion and cilantro.
  • Serve a wedge or two of lime with each plate to squeeze over the rice.

2 tablespoons canola oil
5 garlic cloves (peeled and minced)
1 onion (medium chopped)
1/2 cup celery (chopped)
1/2 cup bell pepper (chopped)
1 lb ground turkey
1 lb hot Italian sausage (remove from casing)
2 tablespoons jalapenos (finely chopped)
1 cup long grain white rice (uncooked)
2 1/2 cups light chicken broth
1/2 cup scallion (chopped)
2 teaspoons seasoned pepper
salt and pepper

Steps:

  • Het oil in large nonstick skillet over medium heat. Add the garlic, onion, celery, and bell pepper, stirring to blend.
  • Cook, stirring frequently , for about 3 minutes or uniil the veggies have wilted and the garlic is golden. Add the turkey (both), cook for about 7 minutes or until nicely browned. Add the jalapenos and season to taste with salt and pepper.
  • Stir in rice. Add the broth and blackened spice and bring to a boil.
  • Lower the heat, cover, and simmer for about 25 minutes or until the rice is tender.
  • Remove fro heat. Stir in the scallions. Taste and, if necessary, add salt and pepper and serve.

My favorite dirty rice recipe straight from "A COOKS TOUR of SHREVEPORT" cookbook.Some of the ingredients are optional and if you prefer you can use white long grain rice in place of the brown,I prefer the brown,though I would not recommend using fragrant rice.This recipe is extremely versatile and can be used as main dish,along with salad and garlic bread,or as a side,or stuffing mixture.I like to season mine up with some additional creole seasoning such as zatarin's but would suggest tasting in between seasoning.ENJOY!

1 (12 ounce) package brown rice
2 bell peppers
2 onions
4 celery ribs (tops and all)
1/2 lb chicken liver (optional)
1/8 lb ground beef or 1/8 lb pork (I like to use both 1 clove garlic 4 tablespoons pecans or walnuts(optional)
2 tablespoons bacon drippings
Tabasco sauce
Worcestershire sauce
salt
cayenne
black pepper

Steps:

  • Boil rice according to package directions.
  • Drain.
  • Brown rice has a slightly coarser grain than white.
  • Chop onions,celery,bell peppers and garlic finely (use blender).
  • In bacon drippings saute chopped vegetables until the mixture cooks down,about 30 minutes.
  • Add chopped chicken livers and ground meats and cook until done,then mash.
  • The mixture looks"dirty" and soupy.
  • Add remaining seasonings and nuts to taste,and mix with rice.
  • May be prepared in morning and reheated.
  • Additional water may be needed.
  • When adding seasoning use your own judjement,I like mine spicy.
