Steps:
- Preheat oven to 250 degrees F. Line a big cookie sheet with parchment paper, and grease lightly.
- In a large bowl, combine your oats, wheat germ, coconut, flour, salt, and cinnamon.
- In a small bowl, whisk together your water, oil, honey, and vanilla.
- Pour the wet over the dry. Mix everything together, making sure there are no dry spots.
- Spread granola onto the prepared cookie sheet. The pan will be nice and full. Bake for about 1.5 hours total, stirring every 20 minutes to make sure everything bakes evenly. When you are stirring, don't get too crazy because you don't want to break up all of the clumps.
- When granola starts to turn a light golden color (about an hour into cooking), add your nuts and your dried fruit. Continue cooking, until everything is a nice golden color, taking care not to burn the nuts. The granola will still be slightly sticky when you take it out and will crisp up after it cools.
- Store in an airtight container.

HOMEMADE CINNAMON GRANOLA
Why buy bagged granola for $5/6 a bag when you can make your own. Most of the pre-made granolas you buy in the store are made with tons of sugar or high fructose corn syrup, AND a lot of them (I've found) contain milk powder. This was so easy to make at home and tasted AMAZING. The nuts I used were all raw, unsalted. Feel free to swap out whatever nuts or dried fruit you might have on hand. I actually used pecans in place of the walnuts, and a mix of half raisins and half dried cranberries for the dried fruit. Next time I might try some dried blueberries

HOMEMADE GRANOLA
My husband found this recipe in a mountain bike magazine that we changed just a bit. This granola is really easy to make and very good. You can use oats, but I like to use multi-grain hot cereal that includes oats, barley, rye, and wheat. Enjoy!

Steps:
- Preheat oven to 360 degrees.
- Toast nuts in pan over stove until lightly brown.
- Mix the fruit juice, honey, maple syrup, oil, vanilla, and spices in a large bowl. It's okay to add more honey, maple syrup, cinnamon, or spices - just depends how you like your granola to taste.
- Add oats and nuts into honey mixture and combine together.
- Spread mixture on a baking sheet and bake 30 minutes until golden. Stir occasionally. Use your best judgement when baking. I like mine a little crunchy, so sometimes I bake it 40 minutes.
- Leave on pan to cool.
- If you are using dried fruit stir in once completely cooled.
- Store granola in container with lid (not in refrigerator). It will last about a week or a little longer. Add granola to vanilla yogurt, or with milk, or eat plain.

CINNAMON WALNUT GRANOLA
Got this from a nutritionist friend of mine. It has flax seed, and walnuts are good for you - the only nut that has omega 3's. Sometimes I'll also add a cup of sunflower seeds. My daughter loves it and a 8 yo friend was over and tried it. His comment: "This is tasty!" I gave the recipe to his mom and she made it for a school function and it was a hit! I use rolled oats, but you could use quick oats too. I use this on top of fruit and yogurt for a healthy breakfast.
