- Place crackers in a resealable bag; crush into coarse crumbs. Mix cracker crumbs, potato flakes, seasoned salt, and black pepper together in a shallow bowl. Beat egg in a separate small bowl. Place flour in a third shallow bowl.
- Coat chicken pieces in flour, beaten egg, and cracker mixture, respectively.
- Heat vegetable oil in a large skillet over medium heat. Pan-fry chicken strips until no longer pink in the center and coating is golden brown, 15 to 20 minutes.

SOUTHERN FRIED CHICKEN
Thanks Paula Deen (FoodTV) for the best fried chicken I have ever made! It has a nice, savory flavor and a coating that has just the right amount of crispiness. It was a good thing I had an extra cut-up chicken in the refrigerator because my family was begging for it again the next day. Although it calls for what seems like a lot of hot pepper sauce, it isn't any spicier than Jack-In-the Box's Spicy Crispy Chicken--you can take it!! FYI I made this using 10 pounds of wings--enough of the hot sauce/egg mixture to cover, but you will need to double flour mixture if you want to do this much. I'm not saying it tastes like KFC--only that you won't be doing business with them anymore.

- Heat peanut oil in a large deep pot to 350°F (do not fill more than half full--you don't want a hot-oil spill-over accident!).
- For sauce mixture: in a medium-sized bowl, beat the eggs with the water.
- Add hot sauce and whisk together well.
- Pour this mixture into a large plastic zip-top bag.
- For seasoning mixture: In a small bowl, combine 1 teaspoon salt, 1/4 teaspoon freshly ground black pepper and 1/4 teaspoon garlic powder.
- For dredging mixture: In a another bowl, mix flour, baking powder and 1/4 teaspoon salt.
- Rinse and pat dry chicken pieces with a paper towel.
- Cut breast pieces in half across ribs.
- Sprinkle chicken generously on both sides with seasoning blend.
- Drop a few chicken pieces of chicken into bag of sauce mixture and squish around to coat thoroughly.
- One piece at a time, roll chicken in flour mixture and drop into hot oil.
- Don't crowd chicken pieces--I cook about half the chicken at a time.
- Fry chicken until brown and crisp.
- Drain on paper toweling.
- Dark meat will take about 14 minutes, white meat about 10 minutes.
- Remember smaller pieces cook faster than the larger ones.
- You can check for doneness by piercing to the bone in the thickest part with a fork.
- If the juices run clear, it is done.

- PREHEAT DEEP FAT FRYER TO 170 DEGREES CELSIUS. MEASURE OUT AND MIX ALL THE DRY SPICES AND HERBS INTO A SMALL BOWL AND MIX THOROUGHLY. MEASURE OUT THE TWO CUPS OF FLOUR INTO A LARGE DISH AND THOROUGHLY MIX THE SPICE MIX THROUGH IT.
- ASSEMBLE 3 DISHES LEFT TO RIGHT FOR THE DREDGING PROCESS. EGG MIX FIRST, THEN THE FLOUR AND SPICE MIX AND THEN A LIGHTLY FLOURED PLATE TO PLACE THE BATTERED STRIPS ON. DIP EACH STRIP IN THE EGG WASH, THEN THE FLOUR MIX, THEN REPEAT FOR A NICE CRISPY BATTER.

- Please note all the spices and herbs used are dry spices. Chicken thighs and drumsticks can also be used. Deep fry for 7 minutes then place the thighs on a wire rack and place into an oven at 210 degrees celcius for 25/30 mins to cook through. Turn the pieces a couple of times during cooking so batter remains crisp.

- Heat your oil to 350 degrees, very important to maintain this temperature, do not overcrowd!
- Combine sifted flour and seasonings in a pie plate.
- Scramble eggs and milk in another pie plate.
- Dip a tender first in the soy flour mixture, shaking off excess, then into milk mixture, making sure it's coated all over, then back into soy flour mixture.
- Make sure it's covered good!
- Lay slowly away from you in the hot oil!
- DO NOT OVERCROWD YOUR PAN, YOUR CHICKEN WILL BE GREASY!
- Fry just until the coating gets good and golden brown.
- Lay on newsprint to drain well.
- Sometimes the chicken will brown before the chicken is cooked all the way.
- If this happens, spread it out on a cookie sheet and put in a preheated 350 degree oven until done.
- USUALLY this will not happen with tenders as they're thin and cook quickly.

- Combine flour, salt, and pepper in a medium bowl. Mix eggs and water together in a small bowl.
- Place some chicken strips in the flour mixture to coat, then gently shake to remove any excess flour. Coat strips in egg. Return to the flour mixture and coat again; repeat with egg mixture. Coat once more in the flour mixture, placing strips on a plate while you continue with remaining chicken.
- Let strips sit for 5 minutes to allow flour to set.
- Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C); oil is ready if you drop some water in and it sizzles.
- Working in batches if needed, place strips in the hot oil. Cook for 8 minutes. Turn over and continue to cook until golden brown, no longer pink in the centers, and juices run clear, about 8 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Place strips on a paper towel-lined plate to drain excess grease.
