APPLE CHEDDAR GALETTE
This apple cheddar galette is made with honeycrisp apples, set in a cheddar herb crust and brushed with thyme butter! So delicious and perfect for fall.

Steps:
- Add the flour, sugar, thyme and salt to a food processor and pulse just until combined. In a small bowl, whisk mix together the egg, vinegar and water. Add the cold butter pieces and cheddar into the food processor and pulse until small coarse crumbs remain. Sprinkle the water/egg mixture over the flour and pulse again until the dough comes together.
- Remove the dough with your hands and wrap it in plastic wrap. This dough makes enough for 2 galette crusts, so you can either separate it into 2 sections now, or separate it after it's refrigerated. Refrigerate the dough for 30 minutes. (The other dough can be thrown in the fridge for a few months!)
- After 30 minutes, preheat the oven to 400 degrees F.
CHEDDAR AND APPLE GRILLED CHEESE SANDWICHES

- Put 2 slices of bread on a cutting board or work surface. Top each with two slices of cheese, the apple slices, a third slice of cheese and another piece of bread. Press down lightly.
- Heat 1 tablespoon butter in a large skillet over medium-low heat. Add the sandwiches and cook until the bread toasts and the cheese is slightly melted, 3 to 5 minutes. Flip with a spatula and add the remaining tablespoon of butter to the pan. Cook until the other side is toasted and the cheese is melted, about 3 minutes more, adjusting the heat as needed to keep the bread from burning before the cheese melts.?

Steps:
- Heat oven to 400°F.
- In large bowl, with a fork, toss together piecrust mix, 1/2 cup of the cheese and the apple juice; shape into a ball.
- Roll out on a floured surface to 14-inch circle.
- Roll pastry back onto rolling pin; unroll onto a large baking sheet.
- In a large bowl, toss together 1/2 cup of the shredded cheddar, apples, sugar, cornstarch and nutmeg.
- Set aside.
- Sprinkle remaining 1/2 cup cheddar cheese onto center of crust, leaving a 3-inch border.
- Mound apple mixture on top of cheese.
- Fold edge of crust up and partway over filling.
- Brush crust with egg yolk/water mixture.
- Bake 35-40 minutes until crust is lightly browned and apples are tender.
- Cut into wedgest and serve warm.

APPLE CROSTATA WITH CHEDDAR CRUST

- Make the crust: Roll out dough to a 13-inch round, about 1/8 inch thick, on a lightly floured surface. Transfer to a parchment-lined baking sheet. Refrigerate for 20 minutes.
- Make the filling: Toss together apples, granulated sugar, flour, lemon juice, and cinnamon.
- Preheat oven to 375 degrees. Spread filling over dough, leaving a 1 1/2-inch border. Fold edges in to form a crust; brush with egg wash, and sprinkle with sanding sugar. Refrigerate until edges are firm, about 30 minutes.
- Bake crostata until apples are tender and crust is golden, about 1 hour 20 minutes. Let cool slightly. Brush apples with apricot preserves.
TEA POACHED PEAR AND CHEDDAR GALETTE

- To poach the pears, bring 4 cups water to a boil in a medium saucepan. Remove from the heat and add the ginger and black tea bags; let steep 10 minutes. Squeeze the bags against the side of the pan, then discard them. Stir in the sugar, honey, peppercorns, ginger and lemon peel and bring to a simmer. Add the pears and additional water to cover the pears, if needed. Simmer, turning the pears occasionally, until just tender all the way through, 20 to 22 minutes. Let cool in the liquid. Halve and core the pears and pat dry. Slice the pears into 1/4-inch slices. (You'll get 6 or 7 slices from each pear.)
- Heat the butter in a medium skillet over medium heat. Add the leeks and cook, stirring occasionally, until tender, about 10 minutes. Season with salt and pepper. Set aside to cool.
- Preheat the oven to 400 degrees F.
- Unroll the pie crust on a floured work surface and roll to a 14-inch circle. Center on a parchment-lined baking sheet (it's OK if it overhangs at this point). Spread the leeks on the crust in a 9-inch circle. Sprinkle the cheese over the top. Top with the pears in a spiral. Fold over and pleat the edges of the dough, leaving the center of the galette open. Brush the dough with the beaten egg.
- Bake the galette until the juices are bubbling and the pastry is golden brown and crisp, 40 to 45 minutes. Remove to a baking rack to cool. Serve warm or at room temperature, sprinkled with the chives, if using.
NEW ENGLAND APPLE CHEDDAR GALETTE
Steps:
- Drain apple slices, sprinkle with maple syrup, cinnamon, minute tapioca, zest: Drain the apple slices. Place the apple slices back in the now empty bowl. Sprinkle with maple syrup and cinnamon and gently toss so that the apple slices are lightly coated with both. Add the minute tapioca and the lemon zest. Gently toss again.
- Arrange apple slices on the dough: Starting from 2 inches from the perimeter of the pastry round, arrange the apple slices, side by side, in a circular pattern, filling the circle. It's okay if some of the apple slices overlap a little.
