DEVIL'S FLOAT
This is a quick dessert that any chocolate lover will flip over. It is also low in sugar and low in fat. Any variety of nut can be substituted for the pecans. Great with ice cream.

- Preheat oven to 350 degrees F (175 degrees C).
- Sift flour, 3/4 cup white sugar, 2 tablespoons cocoa powder, baking powder, and salt together in a bowl. Stir milk, butter, and vanilla extract into flour mixture until batter is just combined; fold in pecans. Pour batter into an 8x8-inch baking dish.
- Mix 1/2 cup white sugar, brown sugar, and 2 tablespoons cocoa powder together in a bowl; sprinkle over batter. Pour hot water over batter and sugar layer.
- Bake in the preheated oven until top cake layer is floating on bottom pudding layer, about 40 minutes.

- Place marshmallows in square baking pan. Bring 1/2 cup sugar and water to a rolling boil, then pour over marshmallows. Melt chocolate and margarine in saucepan. Add remaining sugar, vanilla, flour, salt, baking powder and milk. Drop batter by spoonfuls over marshmallow mixture. Sprinkle pecans over top. Bake at 350 degrees F for 40 minutes. Serve with whipped cream.

- Adjust oven rack to upper- and lower-middle positions; heat oven to 350 degrees.
- Grease three 8-inch pans, line bottom of each pan with parchment paper round, grease agin and flour.
- Combine chocolate and cocoa in medium bowl; pour boiling water over and whisk until smooth.
- Sift together flours, baking soda, and salt onto large bowl and set aside.
- Place butter in bowl of standing mixer and beat at medium-high speed until creamy, about 1 minute.
- Add brown sugar and beat on high until light and fluffy, about 3 minutes.
- Stop mixer and scrape down bowl.
- Increase speed to medium-high and add eggs one at a time, beating 30 seconds after each addition.
- Reduce speed to medium; add sour cream and vanilla and beat until combined, about 10 seconds.
- Stop mixer and scrape down bowl.
- With mixer on low, add about one third of flour mixture, followed by about one half of chocolate mixture.
- Repeat, ending with flour mixture; beat until just combined, about 15 seconds.
- Do not overbeat.
- Remove bowl from mixer; scrape bottom and sides of bowl and mix gently to be certain all ingredients are combined.
- Divide batter evenly among cake pans, smooth batter to edges of pan with angled spatula.
- If baking three 8-inch cakes, place two pans on lower-middle rack and one on upper-middle rack.
- Bake until skewer inserted in center comes out clean, 20 to 23 minutes for 8-inch cakes.
- Cool on wire rack 15 to 20 minutes.
- Run knife around pan perimeter to loosen.
- Invert cakes onto large plate; peel off parchment, and reinvert onto lightly greased rack.
- Cool completely before frosting.
VEGAN DEVIL'S FOOD CAKE
Deep, dark, rich, moist, and luxuriously everything Devil's Food cake should be - but vegan!

- Preheat oven to 350 degrees Fahrenheit. Grease two 8-inch round cake pans with oil or non-stick spray. Set aside.
- Make the cake. In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda and salt.
- Into the bowl of a stand mixer or in another large bowl (to mix with a hand mixer), add the soy milk, oil, sugar, maple syrup, vinegar, and vanilla. Mix on medium speed for two minutes.
- Add half the dry ingredients and mix to blend. Add the remaining dry ingredients and mix at medium speed for 1 minute. The batter will be quite runny. Divide the batter between the two cake pans.
- Bake until the top springs back when you poke it and a toothpick inserted into the center comes back clean, 25 - 30 minutes. Remove the cake pans from the oven and place on wire racks to start cooling. After 10 minutes, run a butter knife around the edges of the cakes to loosen them from the side, then invert onto a wire rack, removing the cake pan. Let cake rounds cool completely, 30-45 minutes. To expedite the cooling process, you can place the cakes in the freezer for about 10 minutes for the fridge for 20.
- Meanwhile, make the frosting. In the clean stand mixer bowl affixed with a beater blade (or in a medium mixing bowl if you are using a hand mixer), add the vegan butter. If you're using the recommended brand (Melt) and it's room temperature, it should be very very soft. Add 3 tablespoons of the soy milk and beat until as incorporated as possible. Add the cocoa powder and mix until well combined and glossy. Mix in the vanilla extract. Add the powdered sugar 1 cup at a time, beating until incorporated after each addition. Once all the powdered sugar has been added, beat frosting at medium speed for about 1 minute until it has lightened up a bit and is a bit fluffier. If the frosting seems too soft to spread on the cake, add more powdered sugar, 1/2 cup at a time. If it's too stiff, add more soy milk, 1 teaspoon at a time, until the frosting is perfectly spreadable.
- Once the layers are cool, place the first layer on your cake plate. Add about 1/3 of the frosting to the top of the first layer and with a butter knife or offset spatula, smooth to the edges. Top with the second layer. Smooth a thin layer of frosting around the sides of the cake, then add another, thicker layer (the thinner layer first will help hold the crumbs in). Add the remaining frosting to the top of the cake and smooth with the knife or spatula, adding swoops and swirls how you see fit (or smoothing it all out - however you want, it's your cake!)
- Cut into slices, serve, and enjoy!
DEVIL'S FOOD CAKE I
This is an old-fashioned, but easy-to-make devil's food cake recipe. Pound cake like texture and sinfully chocolately. This is from an old Philadelphia Bakery. Great when frosted with Chocolate Fudge Buttercream Frosting.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour one 9x13 inch pan or two 9 inch round pans.
- In a small pan melt the butter or margarine with the unsweetened chocolate. Set aside to cool slightly.
- Cream together the sugar and the eggs until light in color. Add the chocolate mixture to the eggs and temper mixture by beating well (so you don't end up with scrambled eggs!) Add 1 cup boiled water (still warm) and blend well. Mixture will be very liquid.
- Mix together the flour, baking soda, and salt. Add this mixture to the chocolate mixture and blend well.
- Mix together the vinegar and the milk and stir into the chocolate batter. Pour into prepared pan(s).
- Bake at 350 degrees F (175 degrees C) for 30 minutes or until a toothpick inserted in the center comes out clean. Cake divides well for filling with mousse, or ganache, or black forest fillings. The best clue to this cake being nearly done is that you will start to smell the aroma of chocolate filling your house!

- Preheat oven to 350 degrees F. On a double boiler melt 1 cup of buttermilk and chocolate chips. Let it cool.
- Mix eggs, applesauce, sugar, remaining buttermilk, and vanilla. Beat until combined.
- Sift flours, cocoa powder, baking soda, and cream of tartar into a bowl. Gradually add dry ingredients to wet ones and combine.
- Add melted chocolate stirring at the same time as you incorporate the melted chocolate into the bowl.
- Grease and flour a 9 inch spring from pan and add cake butter into the pan.
- Bake for 40 to 50 minutes depending on the oven. Cool in pan before frosting.
- For the frosting, combine cream cheese and sugar with electric mixer. Fold whip cream and frost cake. Decorate as desired.

- Preheat oven to 350 degrees. Butter an 11- by-2-inch round cake pan and a 9-by-2- inch round cake pan. Line bottoms with parchment rounds, then butter parchment. Dust pans with cocoa powder, and tap out excess.
- Mix cocoa powder and the boiling water in a bowl until smooth. Let cool. Sift together cake flour, baking soda, and salt into a large bowl. With an electric mixer on medium-high speed, beat butter and sugar until pale and fluffy, 3 to 4 minutes. Beat in vanilla. Add eggs, 1 at a time, beating well after each addition, and scraping sides of bowl as needed.
- Whisking constantly, pour milk into cocoa mixture in a slow, steady stream; whisk until smooth. With mixer on low speed, add flour mixture to butter mixture in three additions, alternating with cocoa-milk mixture, and starting and ending with flour mixture.
- Transfer 5 cups batter to the 11-inch pan and 3 cups batter to the 9-inch pan. Bake, rotating pans halfway through, until a cake tester inserted in centers comes out clean, 40 to 45 minutes. Transfer pans to wire racks and let cool completely. Invert cakes onto racks, then remove parchment and re-invert, top sides up. Use a serrated knife to trim top of each cake to make level.
