OVEN-ROASTED CORN ON THE COB
Oven-roasted corn on the cob with homemade garlic butter is buttery, juicy, crunchy, and perfectly charred on the outside - without a grill.

- Preheat oven to 350 F.
- In a small mixing bowl, cream together the butter, garlic, salt and pepper. Spread the butter mixture over each corn.
- Wrap each corn in aluminum foil and place on a large half sheet baking pan. Roast in the preheated oven for 40 minutes, turning the corn over halfway.
- Take out the corn and open the foil on top to expose it. Turn on the broiler function on the oven and place corn back in. Broil on high for 2-3 minutes.
- Serve with a piece of butter on top. Sprinkle more salt and pepper as desired.

CORN AND THYME SOUP
This summery soup gets the most out of each ear of corn: Use the cobs to make a thyme-infused broth and saute the kernels to puree into the soup.

- Cut the corn kernels off the cobs and set aside. Use the back of a chef's knife to scrape the juice from the cobs into a medium saucepan. Add the cobs to the saucepan along with the sprig of thyme and enough water to just cover the cobs. Bring to a boil, then reduce the heat to a simmer and cook for 30 minutes. Remove the cobs and thyme and then strain the corn broth into a medium bowl or large measuring cup. (You should have about 4 cups. Add water if you have less. If you have more than 4 cups, then return to the saucepan and simmer until reduced to that amount.)
- Heat the oil in the saucepan over medium heat. Add the onion, garlic, thyme leaves and a pinch each of salt and pepper. Cook, stirring occasionally until the onion is soft, 3 to 5 minutes. Add the reserved corn kernels and cook until the corn is just cooked through, 2 to 4 minutes. Stir in the corn broth and remove from the heat.
- Working in batches, puree the corn mixture in a blender until very smooth, 3 to 4 minutes per batch. Return all the soup to the saucepan and simmer until hot, about 5 minutes. Season with salt and pepper.
ROASTED CORN WITH CHILI LIME BUTTER
Steps:
- Preheat oven to 350 degrees F.
- Place the corn in its husks directly on the oven rack and roast until the corn is soft when you press on it, 30 to 40 minutes.
- While the corn is roasting, combine the butter with the chili powder and lime zest.
- Peel down the husks and tie in a knot to use as a handle while eating. Rub the corn with soft butter mixture, and garnish with a lime wedge. (This roasting method produces the sweetest corn I have ever tasted.)
PEAS AND CORN WITH THYME BUTTER

- In 12-inch nonstick skillet, cook bacon over medium heat, stirring frequently, until crisp. Remove bacon with slotted spoon; drain on paper towels. Reserve 1 tablespoon drippings in skillet.
- Add peas, corn and water to bacon drippings in skillet. Cover; cook over medium heat 6 to 8 minutes, stirring occasionally, until vegetables are tender and water has evaporated.
- Stir in thyme and butter until vegetables are coated. Spoon into serving bowl. Sprinkle with bacon.

THYME CORN STICKS

- Preheat oven to 400°F. Grease 5- by 1 1/2-inch corn-stick molds generously with shortening and on a baking sheet heat in oven for 10 minutes.
- While molds are heating, in a large bowl whisk together eggs, butter, oil, and yogurt. In a bowl whisk together remaining ingredients. Add flour mixture to egg mixture and combine batter well.
- Remove molds from oven carefully and pour 1/4 cup batter into each mold. Bake corn sticks in batches in middle of oven until a tester comes out clean, about 15 to 17 minutes, and remove from molds. Corn sticks may be made 3 days in advance and kept chilled in resealable plastic bags. Reheat corn sticks on a baking sheet in 400°F. oven about 5 minutes.

- Melt 2 tablespoons butter in heavy small skillet over medium heat. Add shallots and sauté until brown, about 4 minutes. Cool. Combine remaining 6 tablespoons butter and thyme in small bowl. - Remove all the husks and silks from the corn cobs.
- To make the Herb & Garlic Butter- mix all ingredients together is a small mixing bowl.
- Smear the flavoured butter over the corn cobs. Wrap the corn cobs in aluminium foil and secrely seal.
- Place the corn cobs on a baking tray and bake in a preheated oven for 25 minutes.
- When cooked remove from the oven and allow to stand for 5 minutes before opening the foil to remove cooked corn. The corn will still be very hot-be careful not to burn yourself on the steam.
