Easy Greek Tossed Green Salad is a great way to incorporate the flavors of the Mediterranean in one healthy dish. This simple salad goes together in a pinch and tastes amazing with a smooth and tasty 6-ingredient homemade dressing!

6-8 cups chopped romaine lettuce or mixed greens
1 cucumber (peeled and sliced)
⅓ cup kalamata olives (sliced)
½ cup cherry tomatoes (halved)
½ small red onion (thinly sliced)
⅓ cup crumbled feta cheese
¼ cup extra virgin olive oil
⅓ cup red wine vinegar (or balsamic vinegar)
1 teaspoon minced garlic (or 1/2 teaspoon garlic powder)
1 teaspoon dijon mustard
1 tablespoon finely chopped fresh oregano (or 1 teaspoon dried oregano flakes)
1 tablespoon fresh squeezed lemon juice
salt and pepper to taste

Steps:

  • In a large bowl combine lettuce, cucumber, olives, tomatoes, red onion, and cheese.
  • Combine all dressing ingredients in a jar, cover and shake well. Pour over salad and toss to combine just before serving.

3/4 cup water
2/3 cup white wine or cider vinegar
2 teaspoons sugar
1 teaspoon kosher salt
1 medium red onion, thinly sliced
Optional: fresh rosemary, thyme or dill sprigs, whole black peppercorns, small dried chili or garlic clove

Steps:

  • In a bowl, whisk together the first four ingredients until sugar and salt dissolve. Place onions and optional ingredients, if desired, into large glass jar; pour vinegar mixture over onions. Seal and let stand at least 2 hours at room temperature. Refrigerate for up to 2 weeks.

1 cup baby spinach
1/4 cup hummus
2 tablespoons olive oil
2 tablespoons pesto
1 tablespoon honey
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 lemon, zested and juiced
4 cups chopped romaine lettuce
2 cups chopped kale
1 cup frozen peas, thawed
1/2 cup grated Pecorino Romano
1/4 cup fresh basil leaves
2 mini cucumbers, sliced into rounds
2 scallions, thinly sliced
1 avocado, diced
1 green bell pepper, finely diced

Steps:

  • For the dressing: Add the spinach, hummus, olive oil, pesto, honey, salt, pepper and lemon zest and juice to a small blender, then blend until smooth.
  • For the salad: Add the romaine, kale, peas, Pecorino Romano, basil, cucumber, scallion, avocado and green pepper to a large bowl. Add the dressing and toss to combine. Transfer to a serving platter or bowl.

1 bunch watercress, about 6 ounces
2 small heads lettuce, about 1 pound
1 head endive, about 1/4 pound
1 small red onion, about 1/4 pound
1 tablespoon Dijon-style mustard
3 tablespoons red-wine vinegar
1/2 cup olive oil
Salt to taste if desired
Freshly ground pepper to taste

Steps:

  • Pull off and discard any tough stems of the watercress. Rinse the watercress and pat dry, then put it in a mixing bowl or salad bowl.
  • Cut away and discard the core from the lettuces and trim off and discard any tough outer leaves. Break or cut the lettuces into bite-size pieces.Rinse and pat dry. There should be about 6 cups. Add this to the bowl.
  • Trim off and discard the end of the endive. Cut the endive into bite-size pieces. There should be about 1 cup. Add this to the bowl.
  • Cut the onion into 1/4-inch cubes. There should be about 1 cup. Add this to the bowl.
  • Put the mustard in a small mixing bowl and add the vinegar. Start beating while adding the oil. Add salt and pepper.
  • Pour the vinaigrette over the greens and toss to blend.

1/4 red onion, sliced thin
1/4 European cucumber, cut into thin sticks resembling shape and size of green beans
1/2 pint grape tomatoes, halved
Extra-virgin olive oil, for drizzling
1/2 lemon, juiced
Coarse salt and pepper

Steps:

  • Steam green beans in 1/2 inch boiling water covered for 3 or 4 minutes. Cold shock beans by running under cold water and drain well. Place beans in a bowl and combine with onions, cucumber and tomato. Dress salad with a generous drizzle of extra-virgin olive oil and the juice of 1/2 lemon. Season salad with coarse salt and pepper, to taste.

Small red mild radish are a favorite salad ingredient with many Germans. One of the many salad variations we usually eat. We prefer the mild nutty flavor of a medium-priced walnut oil to the fruity flavor of olive oil, the grainy texture of the country-style mustard and some tang from the vinegar, but feel free to use what you like best. I often sub the onions with 1 tablespoon chives.

10 -12 cups salad greens, torn into bite-sized pieces (we like romaine)
3/4 cup red radish, cut into 1/16 inch slices
1/4 cup green onion, cut into 1/8 inch slices
1 tablespoon cider vinegar
1 1/2 tablespoons apple juice (100% juice)
1 teaspoon country-style dijon mustard
1 pinch salt
1 pinch pepper
3 tablespoons walnut oil
1 pinch sugar (optional)

Steps:

  • Put salad greens in a large bowl. Arrange radish and onions on top.
  • For the dressing mix all ingredients except oil in a small bowl until blended.Stirring constantly with a fork or small whisker add oil gradually until emulsified. Taste. If too sour add a little sugar.
  • Pour dressing over salad and toss well.
  • Note: Country-style mustard gets hotter when you prepare the dressing in advance. If you do so, you should consider reducing the amount of mustard used.

Salt to taste
1 teaspoon Dijon-style mustard
1 tablespoon red-wine vinegar
3 tablespoons vegetable oil
Freshly ground pepper to taste
1/2 cup coarsely chopped red onions

Steps:

  • Cut off and discard the tips of the beans. Break the beans into 2-inch lengths. Drop the beans into boiling salted water to cover and return to a boil. Simmer about 7 minutes or until crisp and tender. Do not overcook. Drain. Let cool.
  • To make the dressing, put the mustard in a salad bowl and add the vinegar. Start beating with a wire whisk while adding the oil. Add salt and pepper and the onions.
  • Add the beans and toss until blended. Serve at room temperature.
