Tiramisu-flavored cheesecake combines the flavors and richness of tiramisu and NY Cheesecake. Just before serving, grate some semisweet chocolate on the top.

1 (12 ounce) package ladyfingers
¼ cup butter, melted
¼ cup coffee-flavored liqueur, divided
3 (8 ounce) packages cream cheese
1 (8 ounce) container mascarpone cheese
1 cup white sugar
2 eggs
¼ cup all-purpose flour
1 (1 ounce) square semisweet chocolate

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place a pan of water on the bottom of the oven.
  • Crush the package of ladyfingers to fine crumbs. Mix the melted butter into the crumbs. Moisten with 2 tablespoons of the coffee liqueur. Press into an 8-inch springform pan.
  • In a large bowl, mix cream cheese, mascarpone, and sugar until very smooth. Add 2 tablespoons coffee liqueur, and mix. Add the eggs and the flour; mix slowly just until smooth. Pour batter over crust in the springform pan.
  • Place pan on middle rack of oven. Bake until just set, 40 to 45 minutes. Open oven door, and turn off the heat. Leave cake to cool in oven for 20 minutes. Remove from oven, and let it finish cooling, about 30 minutes. Refrigerate for at least 3 hours, or overnight.
  • Grate semisweet chocolate over the top right before serving.

1 sleeve graham crackers, finely crushed
5 tbsp. melted butter
1/4 c. sugar
1 tbsp. cocoa powder
For the cheesecake
4 (8-oz.) bars cream cheese, softened
1 1/2 c. sugar
1/4 c. cornstarch
4 large eggs
1/3 c. rum
1/3 c. brewed espresso or coffee
1 tsp. pure vanilla extract
12 lady fingers
For serving
2 c. Whipped topping
1/4 c. Cocoa powder, for dusting
2 tbsp. chocolate shavings

Steps:

  • Preheat oven to 325º and grease an 8" or 9" springform pan with cooking spray. Make crust: In a large bowl, mix together graham cracker crumbs, melted butter, sugar, and cocoa powder. Press mixture into prepared pan.
  • Make cheesecake: In a large bowl using a hand mixer, beat cream cheese and sugar until completely smooth and fluffy. Add cornstarch, then add eggs. Add rum, coffee and vanilla.
  • Pour 1/2 batter into springform pan, add a layer of ladyfingers, and top with the rest of the cheesecake mixture and bake until center of cheesecake is only slightly jiggly, 1 hour 20 minutes to 1 hour 30 minutes. Turn oven of and let cheesecake cool in oven, 1 hour, then refrigerate until completely cool, 4 hours or up to overnight. (If you'd like to use a water bath, tightly wrap outside of springform pan with two layers of aluminum foil. Transfer to a deep roasting pan and pour in enough boiling water to reach halfway up the cheesecake pan. Bake as directed).
  • When ready to serve, dust with cocoa powder, pipe dollops of whipped topping, and sprinkle with chocolate shavings. Serve.

Steps:

  • Dip the ladyfingers in coffee.
  • In two spring form pans lined with parchment paper, layer the coffee-dipped lady fingers in a single layer.
  • Freeze until the ladyfingers are frozen.
  • In a bowl, add the cream cheese, mascarpone cheese, and vanilla extract. Stir to combine.
  • Add the milk, sugar, and gelatin to a bowl and whisk until the gelatin has dissolved.
  • Pour the milk mixture through a sieve into the bowl of cream cheese.
  • Pour 1 cup (290 g) of cheesecake batter into a springform pan. Refrigerate until firm, about 2 hours
  • Add one layer of frozen ladyfingers on top of the refrigerated cheesecake layer.
  • Add another cup (290 g) of cheesecake batter on top. Refrigerate for two hours, and repeat with remaining batter and ladyfinger layer.
  • Refrigerate for 2 hours or until firm.
  • Dust the top with cocoa powder.

1/2 cup butter or margarine, softened
8 oz mascarpone cheese

Steps:

  • Heat oven to 350°F. Line 13x9-inch pan with foil; spray with cooking spray. In medium bowl, place cookie mix; cut in butter using pastry blender or fork until mixture is crumbly. Press mixture in bottom of pan. Bake 8 to 10 minutes or until set.
  • Meanwhile, in large bowl, beat mascarpone, cream cheese, sugar, flour and egg with electric mixer on medium speed until smooth. Remove 3/4 cup of the cheesecake mixture, and place in small bowl; set aside. Stir pumpkin and pumpkin pie spice into original bowl of remaining cheesecake mixture. Stir melted chocolate, cognac and espresso powder into reserved 3/4 cup cheesecake mixture.
  • Pour pumpkin cheesecake mixture on top of crust. Spoon chocolate cheesecake mixture over pumpkin mixture; use knife to carefully swirl mixtures.
  • Bake 30 to 35 minutes or until edges are set (center will be just slightly jiggly). Cool 30 minutes.
  • In microwavable bowl, microwave heavy whipping cream 1 minute to 1 minute 30 seconds or until hot. Add 2/3 cup chocolate chips; stir until smooth. Spread mixture on top of cheesecake.
  • Refrigerate about 4 hours or until completely cool. Cut into bars to serve. Top each bar with a dollop of whipped cream just before serving.

2 tablespoons instant espresso powder
2 tablespoons dark rum
2/3 cup boiling water
36 ladyfinger cookies

Steps:

  • Preheat the oven to 325 degrees F. Lightly spray a 9-inch springform pan with nonstick cooking spray and wrap the bottom in aluminum foil.
  • Combine the espresso powder and rum in a medium heat-safe bowl; stir in the boiling water until the espresso is dissolved.

Easy to transport and serve, this is a great dessert to take to a party. Everyone loves tiramisu and everyone loves cheesecake so it's a winner all round

300g pack dark chocolate digestives
80g butter , melted
500g milk chocolate , the best quality you can find, finely chopped
300ml double cream
100ml Tia Maria
300g cream cheese
200ml double cream
1 tsp vanilla extract
1 orange , zested
50g icing sugar
cocoa powder and crushed coffee beans, to serve

Steps:

  • Line the base of a 23cm springform cake tin with baking parchment. Crush the biscuits as finely as possible in a food bag using a rolling pin, or in a food processor, and mix with the melted butter. Tip into the tin, pressing down to flatten and set aside in the fridge.
  • For the chocolate layer, tip the chocolate, cream and Tia Maria into a bowl and melt over a pan of simmering water. Once melted, quickly stir together and pour over the biscuit base, then chill in the fridge for at least 3 hrs, or until set.
  • When the chocolate layer is set, beat the cream cheese, double cream, vanilla, orange and sugar together, then spread and swirl the mix evenly over the chocolate layer. Put the cake back in the fridge for a couple of hours or overnight. Can be made up to two days in advance and kept covered in the fridge.
  • To serve, remove from the fridge, sieve over the cocoa powder and sprinkle over the crushed coffee beans. Run a knife around the edge of the cheesecake and release from the tin and serve. For a neater finish, blowtorch the outside of the tin to release the sides.

Steps:

  • 1. Preheat oven to 350°F. Spray bottom and sides of 13x9-inch pan with cooking spray. In large bowl, stir cookie base ingredients until soft dough forms. Press dough in bottom of pan. Bake 15 to 18 minutes or until light golden brown. Cool 15 minutes.
  • 2. Meanwhile, in another large bowl, beat 2 packages (8 oz each) cream cheese with electric mixer on medium speed until smooth. Add milk; beat until well blended. Add coffee, vanilla and eggs; beat until well blended. Stir in chocolate chips. Pour over cookie base.
  • 3. Bake 35 to 40 minutes or until set. Cool at room temperature 30 minutes. Refrigerate 30 minutes to cool completely.
  • 4. In small bowl, beat 6 oz cream cheese on medium speed until smooth. Gradually beat in whipping cream; beat about 2 minutes longer or until fluffy. Spread mixture over cooled bars. Sprinkle chocolate curls over topping.
  • 5. Refrigerate about 2 hours or until chilled. For bars, cut into 9 rows by 4 rows. Store covered in refrigerator.

A creamy no bake Tiramisu Cheesecake, Classic Tiramisu meets cheesecake, works perfectly and tastes even better! The perfect dessert idea.

1 1/2 cups chocolate cookie crumbs ((150 grams - wafer cookie))
1/4 cup butter melted ((50 grams))
1/4-1/2 cup strong coffee ((59 - 118 grams -regular or decaf))
8-`10 lady fingers
10 1/2 ounces cream cheese (room temperature) ((300 grams))
1 cup mascarpone (room temperature) ((250 grams))
1 1/4 cup icing / powdered sugar sifted ((150 grams))
1 teaspoon vanilla
1 cup whole / whipping cream divided (cold from the fridge) ((220 grams))
1 tablespoon powdered gelatine ((15 ml))

Steps:

  • Mix together the cookie crumbs and melted butter and press down in a lightly buttered 7.5 - 8 inch (19 -20 cm) springform pan, place in the refrigerator for 20 minutes.
  • Meanwhile in a large bowl beat together the cream cheese and mascarpone until light and fluffy, add the sugar and vanilla beat to combine.
  • Beat the cold whipping / whole cream until soft peaks appear, then add the cream cheese mixture and beat just until combined.
  • In a small pot mix the gelatine and 1/4 cup (55 grams) of whipping cream, let sit for 5 minutes. Then heat and stir just until the gelatine dissolves, do not boil. Add a tablespoon of the tiramisu filling and stir to combine. Then add to the bowl of tiramisu filling, beat just to combine.
  • Remove the base from the fridge, spread 1/3 of the tiramisu filling over the crumbs and top with the lady fingers soaked in coffee*, top with another third of the filling, make a decorative topping on top with the remaining filling. Refrigerate for 12 hours or over night, sprinkle with unsweetened cocoa before serving**. Enjoy!

  • Make the crust: Place the Oreos and instant espresso powder into a food processor and pulse until a fine consistency. Pour in the melted butter and pulse until fully combined. Press the mixture into the bottom of the spring-form pan making sure it is compact and bake for 10 minutes. Remove and set aside to cool while you make the filling.
  • Prepare the water bath: Turn the oven down to 320°F. Place a large roasting pan in the oven on the middle rack. Pour hot water into the pan, making sure it is about 1" in depth. Close the oven door.
  • Make the filling: Using a stand or electric mixer, beat the cream cheese, butter and sugar on low speed until smooth. Scrape down the sides a few times. Add eggs one at a time making sure they are fully incorporated after each addition. Add the vanilla extract, 6 tablespoons of prepared espresso and flour, scraping down the sides of the bowl as needed to make sure everything is well combined. Pour half of the cheesecake filling into the spring-form pan.
