24 frozen chicken nuggets
cooking spray
1 ¼ cups all-purpose flour
¼ cup cornmeal
1 ½ teaspoons white sugar
1 ½ teaspoons baking powder
1 teaspoon salt
¾ teaspoon baking soda
½ teaspoon ground black pepper
¼ teaspoon cayenne pepper
1 ¾ cups buttermilk
⅓ cup vegetable oil
2 eggs, beaten

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spread chicken nuggets out on a baking sheet.
  • Bake nuggets in the preheated oven until hot and crispy, 11 to 13 minutes.
  • Preheat a waffle iron according to manufacturer's instructions and lightly coat with cooking spray.
  • Whisk flour, cornmeal, sugar, baking powder, salt, baking soda, black pepper, and cayenne pepper together in a bowl. Whisk buttermilk, oil, and eggs together in another bowl. Pour buttermilk mixture into flour mixture and stir until batter is just-combined.
  • Place 1 chicken nugget in the center of each waffle section on the waffle iron. Cover each nugget with about 1 tablespoon of batter, close the waffle iron, and cook until golden and crisp, about 4 minutes. Repeat with remaining nuggets and batter.

Crispy Chicken and Buttermilk Waffles With Sriracha Honey image

Crispy baked chicken nuggets paired with buttermilk waffles and topped with a quick and easy homemade sriracha honey sauce!

1 lb chicken breast, cut into bite size pieces
5 c sun chips, crushed up
3/4 tsp paprika
1/2 tsp salt
1/4 tsp onion powder
1 egg
2 tbsp buttermilk
honey
sriracha
2 c flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
2 c buttermilk, room temp
3 eggs, room temp
4 tbsp butter, melted

Steps:

  • Preheat oven to 400
  • Line a baking sheet with parchment paper
  • Sprinkle the cut up chicken with 1/4 tsp paprika, 1/2 tsp salt and 1/4 tsp onion powder, toss around
  • Crunch up the sun chips and add 1/2 tsp paprika in a large bowl
  • In a bowl whisk together the egg and 2 tbsp of buttermilk until combined
  • Add a handful of chicken to the wet batter, shake off the excess and then toss it into sun chips, toss this around to coat all the sides
  • Place them on the baking sheet, not touching
  • Hold off on putting them in the oven until the waffle batter is done
  • In a bowl combine the flour, salt, baking soda and baking powder, stir
  • In a separate bowl combine the butter, buttermilk and eggs, whisking together (if you add cold milk and eggs to warm butter the butter will sort of seize up and you don't want this)
  • Make a well in the flour mixture and pour in the liquid, mix just until combine, lumps are okay
  • Let it sit 10 minutes, give it another stir and start making your waffles in a waffle maker
  • Now put the chicken in the oven and bake for 20 minutes
  • Meanwhile mix up some sriracha honey, you only need a little squeeze of sriracha
  • Serve a buttermilk waffle with the crispy chicken nuggets on top drizzled with the sriracha honey

1 1/4 lb boneless skinless chicken breasts, cut into 1-inch cubes
1/4 cup Italian dressing
1 cup Original Bisquick™ mix
1 teaspoon seasoned salt
1/2 teaspoon pepper
2 tablespoons butter or margarine, melted
2 cups Original Bisquick™ mix
1 1/3 cups milk
1 egg
2 tablespoons vegetable oil
2 teaspoons vanilla, if desired
Maple syrup, if desired

Steps:

  • Heat oven to 450°F. Line cookie sheet with foil; spray foil with cooking spray.
  • In medium bowl, place chicken and dressing; toss to coat chicken. Refrigerate 15 to 20 minutes, stirring twice.
  • In another medium bowl, stir 1 cup Bisquick mix, the seasoned salt and pepper. Coat chicken in mixture a few pieces at a time, coating all sides. Place on cookie sheet; drizzle melted butter over chicken. Bake uncovered 11 to 14 minutes, turning once, until chicken is no longer pink in center.
  • Meanwhile, heat waffle iron; grease with shortening or vegetable oil.
  • Stir all waffle ingredients except syrup until blended. For each waffle, pour slightly less than 2/3 cup batter onto center of hot waffle iron. Close lid of waffle iron. Bake about 5 minutes or until steaming stops. Carefully remove waffle. Serve with chicken nuggets and syrup.

  • Preheat the oven to 425 degrees F (220 degrees C). Spray a baking sheet with cooking spray.
  • Place 20 chicken nuggets in a single layer on the prepared baking sheet. Reserve any remaining nuggets for another use.
  • Bake nuggets in the preheated oven for 6 minutes. Flip and bake until crispy, 5 to 7 minutes more.

  • Add the first 5 ingredients to a zip-top plastic bag; shake to combine.
