SOUTHERN PECAN CATFISH

I coat the catfish in pecans, then top it with a thick, rich cream sauce. It looks like you spent all day on it, but it's actually very speedy to prepare. Garnish it with lemon wedges, parsley or more chopped pecans if you desire. -Mary Ann Griffin, Bowling Green, Kentucky

Number Of Ingredients 9

1 cup finely chopped pecans, divided
1/2 cup cornmeal
1 teaspoon salt, divided
1 teaspoon pepper, divided
4 catfish fillets (6 ounces each)
1/2 cup butter, divided
1/2 cup heavy whipping cream
2 tablespoons lemon juice
1 to 2 tablespoons minced fresh parsley

Steps:

  • In a shallow bowl, combine 1/2 cup pecans, cornmeal, 1/2 teaspoon salt and 1/2 teaspoon pepper. Coat catfish with pecan mixture. , In a large skillet, melt 1/4 cup butter over medium-high heat; fry fillets for 6-7 minutes on each side or until fish flakes easily with a fork. Remove and keep warm., In the same skillet, melt remaining butter over medium heat. Add remaining pecans; cook and stir for 1 minute. Add the cream, lemon juice and remaining salt and pepper; cook and stir for 1 minute. Stir in parsley. Serve with catfish.

Simple, delicious alternative to frying catfish southern style. I was dubious about the mixture of pecans and Dijon, but it worked and produced a slightly tangy, crusty finish to the fish. If you've never tried catfish, it is a real treat. The least "fishy" fish I've ever had. My fillets were huge, so I made 1 1/2 times the topping mixture. From Southern Church Suppers

Number Of Ingredients 6

4 catfish fillets
salt and pepper
4 tablespoons Dijon mustard
1/2 cup butter, melted
1/2 cup dry breadcrumbs
1/2 cup pecans, ground

Steps:

  • Preheat oven to 475.
  • Spray baking pan with Pam or equivalent.
  • Grind pecans in blender. Do not blend too long or you'll have powder.
  • In a small bowl, combine melted butter, breadcrumbs, and pecans.
  • Salt and pepper both side of fillets.
  • Place rounded side up on baking pan.
  • Rub 1 T of mustard on top of each fillet.
  • Pat crumb mixture onto top of fillet, pressing it firmly over the mustard.
  • Right before baking, spray each fillet lightly with Pam.
  • Bake for 13-15 minutes or until fish flakes easily.

1 tsp salt
1 c all purpose flour
1/4 tsp red pepper
1 tsp lemon rind, grated
1/2 c butter
1/4 c chopped pecans
1 Tbsp lemon juice
1 Tbsp worcestershire sauce

Steps:

  • 1. Make pecan sauce by combining 1/4 cup butter, chopped pecans, lemon juice and worcestershire sauce and blend well.
  • 2. Combine flour, salt, pepper and lemon rind.
  • 3. Roll filets in mixture, coating well.
  • 4. Melt 1/4 cup butter in large skillet.
  • 5. Brown filets over medium heat until light brown; turn once to brown both sides.
  • 6. Place filets in well-greased 12x8x2 baking dish.
  • 7. Sprinkle pecan butter sauce over filets.
  • 8. Sprinkle with additional chopped pecans if desired.
  • 9. Bake uncovered at 350 degrees for 12 minutes or until fish flakes easily when tested with a fork.

8 skinned catfish fillets
1 cup breadcrumbs
1 cup grated parmesan cheese
3/4 cup chopped fresh parsley
1/2 teaspoon dried oregano
1/4 teaspoon dried basil
1 teaspoon paprika
2 teaspoons salt
1 teaspoon black pepper
1/2 lb butter, melted
lemon wedge
parsley sprig

Steps:

  • Preheat the oven to 375°F.
  • Lightly coat a 13x9-inch baking dish with oil cooking spray.
  • Pat the fish dry.
  • Combine the dry ingredients in a shallow bowl and stir well.
  • Dip the catfish in the melted butter and roll in the bread crumb mixture.
  • Arrange the fillets in the prepared baking dish.
  • Bake uncovered for 20-30 minutes or until the fish flakes easily.
  • Garnish with lemon wedges and parsley sprigs.

This is a great, quick meal that's wonderful for doing after work. Any white fish fillet will work with this recipe and when you can get good, summery, red tomatoes you can sub them for the canned. I serve this with a white and wild rice pilaf but it's probably good over pasta as well.

1 (14 1/2 ounce) can diced tomatoes
5 green onions, sliced
2 cloves garlic, minced
1/2 cup toasted pecan halves
1/4 cup chopped cilantro
2 tablespoons extra virgin olive oil
1/2 teaspoon red pepper flakes
2 limes, juice of (cut 1 lime into wedges)
1 lime, zest of
1/2 teaspoon salt
fresh ground black pepper
4 catfish fillets or 4 other white fish fillets

Steps:

  • Heat oven to 400°.
  • Combine tomatoes, onions, garlic, pecans, cilantro, olive oil, red pepper flakes, lime juice, zest, salt and pepper (to taste) in a medium bowl and set aside.
  • Place fillets in a greased baking dish; season with remaining 1/4 teaspoon salt and pepper (to taste); pour tomato mixture over fish and bake until fish begins to flake, about 20 minutes.
  • Serve with the lime wedges.
