1 garlic clove, minced
2 tablespoons soy sauce
1 to 2 teaspoons sugar or honey
Sesame seeds, optional

Steps:

  • In a large skillet, heat oil over medium-high heat. Add green beans; cook and stir until heated through. Add garlic; cook 1 minute longer. Stir in soy sauce and sugar until sugar is dissolved. If desired, sprinkle with sesame seeds.

Steps:

  • 1. Cok green beans in boiling salted water to cover about 5 minutes or until desired degree of coneness. Drain; cover and keep warm.
  • Cook garlic in hot sesame oil in a small skillet over medium heat 1 minute. Stir in soy sauce. Add beans and cook one minute until heated through.
  • Sprinkle with sesame seeds and serve.

1 1/2 pounds green beans, washed and trimmed
1 tablespoon wok or vegetable oil, 1 turn of the pan in a slow stream
1 teaspoon dark sesame oil, several drops or a drizzle
1/2 teaspoon crushed red pepper flakes
2 tablespoons toasted sesame seeds (a handful)
Coarse salt

Steps:

  • Steam green beans covered in 1/2-inch boiling water for 2 minutes. Transfer beans to a colander and run under cold water. Drain well.
  • Heat a wok shaped skillet or large nonstick frying pan over high heat. Go once-around-the-pan with wok or vegetable oil, add several drops sesame oil, and crushed pepper flakes. The pan will smoke. Add beans and stir-fry for 2 minutes. Add sesame seeds and coarse salt and toss to coat beans evenly.

  • Add olive oil to a large saucepan over medium heat. Add green beans and saute, until just tender, about 3 minutes. Season lightly with salt to taste and remove from heat.

1 pound green beans, trimmed
2 tablespoons soy sauce
2 teaspoons toasted sesame oil
1/2 teaspoon cornstarch
1/4 teaspoon crushed red pepper flakes
1 tablespoon peanut or vegetable oil
3 medium shallots, thinly sliced
2 cloves garlic, finely chopped
2 teaspoons chopped peeled ginger
1 tablespoon sesame seeds
2 teaspoons rice wine vinegar

Steps:

  • Bring a large pot of salted water to a boil. Add the beans and cook until just tender, 6 to 8 minutes. Drain and rinse under cold water and set aside.
  • Meanwhile, whisk the soy sauce, sesame oil, cornstarch, pepper flakes and 2 tablespoons water in a small bowl until smooth.
  • Heat the peanut oil in a large skillet over medium-high heat. Add the shallots, garlic, ginger and sesame seeds and cook, stirring occasionally, until the shallots are golden and tender, about 3 minutes. Add the green beans and soy sauce mixture and cook, stirring, until the soy mixture thickens and glazes the green beans, about 1 minute. Remove from the heat and stir in the vinegar.

I discovered this dish at my mother-in-law's house during a family holiday buffet. Her being Japanese, she had many friends who brought wonderful Japanese dishes, and this was and has remained one of my favorites. It's light and fresh any time of the year.

1 tablespoon canola oil
1 ½ teaspoons sesame oil
1 pound fresh green beans, washed
1 tablespoon soy sauce
1 tablespoon toasted sesame seeds

Steps:

  • Warm a large skillet or wok over medium heat. When the skillet is hot, pour in canola and sesame oils, then place whole green beans into the skillet. Stir the beans to coat with oil. Cook until the beans are bright green and slightly browned in spots, about 10 minutes. Remove from heat, and stir in soy sauce; cover, and let sit about 5 minutes. Transfer to a serving platter, and sprinkle with toasted sesame seeds.

1 1/4 lbs green beans, cleaned and trimmed
1/2 tablespoon olive oil
1 tablespoon sesame seeds
1/2 tablespoon toasted sesame oil
soy sauce

Steps:

  • Mix beans with olive oil and place in 13x9 pan.
  • Bake at 450º until beans are slightly browned and tender when pierced- about 7 to 10 minutes.
  • Stir sesame seeds and sesame oil into beans and continue baking until seeds are golden brown, about 5 minutes longer.
  • Pour into a bowl and add soy sauce to taste.
  • Mix well and enjoy!

500 g fresh green beans
3 tablespoons sesame seeds
3 tablespoons soy sauce
2 tablespoons yellow sugar
1 pinch salt

Steps:

  • For the dressing, dry roast sesame seeds in a frying pan for about a couple of minutes, gently jiggling the pan. Careful not to burn them.
  • With a pestle and a mortar, partially grind the sesame seeds.
  • In a large bowl, mix together ground sesame seeds, soy sauce, sugar, and a pinch of salt.
  • Cut the green beans if they are too long. Cook the green beans by boiling until desired tenderness is reached. Drain and briefly run them under running water so that the beans stay green.
  • While the green beans still warm, toss them in the sesame dressing.
  • The dressing looks more like a paste than dressing but that's exactly how you want it to be, otherwise when mixed with the green beans, the dressing gets too runny and the green beans won't taste as nice.

This is my interpretation of the green beans from my favorite Japanese restaurant. Serve with a grilled steak! You can omit the miso paste if you choose.

8 ounces fresh green beans, trimmed
2 tablespoons low sodium soy sauce
½ tablespoon miso paste
½ teaspoon red pepper flakes
4 cloves garlic, minced
1 teaspoon grated fresh ginger root
1 tablespoon sesame seeds, toasted

Steps:

  • Place the green beans into a steamer insert and set in a pot over one inch of water. Bring to a boil, cover and steam for 5 minutes. Remove from the heat and transfer beans to a serving bowl.
  • Meanwhile, in a small bowl, stir together the soy sauce, miso paste, red pepper flakes, garlic and ginger. Pour over the green beans and toss to coat. Sprinkle sesame seeds on top.

These are green beans with attitude. I think I got the recipe from Vegetarian Times, and it's never missed yet when served alongside a nice piece of fish or tuna steak. I like to cook the beans early in the day so I can throw it together in a snap at mealtime. I also use more garlic.

1 lb green beans, ends trimmed
1 tablespoon peanut oil
3 cloves garlic, quartered lengthwise
1 tablespoon sesame seeds
1 teaspoon salt
1 teaspoon sesame oil
1 teaspoon soy sauce

Steps:

  • Cook beans 4 minutes, transfer to ice water to stop cooking.
  • Drain and dry.
  • This can be done up to 8 hours in advance- store in fridge.
  • Heat peanut oil in wok over high heat.
  • Add garlic and stir fry until golden, about a minute.
  • Transfer to paper towel to drain.
  • Add green beans, salt and sesame seeds to the wok.
  • Stir fry 3-4 minutes, pressing beans against side of pan so they char in places.
  • Combine sesame oil and soy sauce.
  • Add to pan along with the garlic from earlier.
  • Heat through (less than a minute) and serve.
  • These are great hot, room temperature, and even cold.

2 teaspoons fresh lime juice
1 teaspoon superfine sugar
1 cup all-purpose flour
1/4 cup sesame seeds
1 cup beer (not dark)
3/4 lb green beans, trimmed

Steps:

  • Heat 2 inches oil in a 4-quart heavy pot over moderate heat until a deep-fat thermometer registers 365°F
  • While oil is heating, make dipping sauce by stirring together soy sauce, lime juice, and sugar until sugar is dissolved.
  • Whisk together flour and sesame seeds and whisk in beer until batter is smooth.
  • Toss about 10 beans in batter until coated. Add to oil 1 at a time (to keep separate) and fry, turning, until golden, about 1 1/2 minutes.
  • Transfer with tongs to paper towels to drain and sprinkle with salt to taste. Coat and fry remaining beans in same manner.
  • Serve beans with dipping sauce.

I found this at allrecipes.com and have made it a bunch of times this summer with beautiful green beans. Even my bf who doesn't care for green beans will eat this! The recipe says you can also try it with broccoli instead of the beans. (Sometimes I use more chicken broth, just depends on how fast you want them done, and more or less flavor.)

1 lb fresh green beans, cut into 2 inch pieces
1/4 cup chicken broth
1/4 teaspoon salt
black pepper (to taste)

Steps:

  • Heat oil in large skillet or wok over medium heat. Add sesame seeds. When seeds start to darken, stir in green beans. Cook, stirring until the beans turn bright green. (I never notice a "bright green" color, I just cook about 10 minutes or so.).
  • Pour in chicken broth, salt, and pepper. Cover and cook until beans are tender-crisp, about 10 minutes. (I like mine much more done -- about 30 minutes!) Uncover and cook until liquid evaporates. You can serve these hot like normal, but I even like these babies cold! ;-).
