Steps:
- Preheat the oven to 400 degrees F.
- Melt the butter in a large skillet over medium-high heat. Add the onions, season with salt and pepper, to taste, and saute until just brown, about 10 minutes. Add 1/2 cup of water and cook stirring often, until dark golden brown, about 15 minutes. Let the mixture cool to room temperature.
- Roll each sheet of pastry to a 12-inch square on a marble surface or parchment paper to prevent sticking. Divide the caramelized onions in the center of each pastry. Put a brie round on top of the onions and brush edges of both pastry squares with beaten egg. Fold pastry up and over cheese to completely enclose the cheese in the pastry. Press the seams together to completely seal. Arrange each pastry round, seam side down, on a silicone mat or parchment lined baking sheet. Brush the top of each pastry round with beaten egg. Bake until golden brown. 20 to 25 minutes. Let stand 15 to 20 minutes before indulging. Enjoy!

Steps:
- Place a large skillet over medium-high heat, and drizzle in about 2-3 tablespoons of oil; once hot, add in the sliced onions along with a pinch of salt and pepper, and cook the onions, stirring occasionally, until they become deeply golden-brown and caramelized, about 20 minutes.
- Once golden, stir in the teaspoon of sugar, followed by the balsamic vinegar, and allow the mixture to bubble up and reduce, stirring to incorporate; allow the onions to cook for another 3-5 minutes, stirring frequently now, until jam-like and deeply browned; then, add the 1 teaspoon of thyme leaves, stir to combine, and remove from pan and allow to cool (you should have roughly 1/2 cup).
- To prepare the baked brie, lightly flour your work surface, and roll out the thawed puff pastry sheet to about 1/8" thickness, a bit larger than the wheel of brie (trim the puff pastry a little bit if it's considerably too large for your brie); place the brie in the center of it, spoon over top of it the cooled, balsamic caramelized onions, then fold the puff pastry sheet over top to cover everything, creating a little "package" with pleats.
- Place the wrapped brie "package" onto a small baking sheet lined with parchment paper, and very gently brush some egg wash over the puff pastry (avoid allowing it to pool underneath), and place into the fridge to chill for 30 minutes (or even overnight), covering lightly with plastic wrap.
- Preheat the oven to 400°.
- Once ready to bake, place the brie into the oven and bake for roughly 35-40 minutes, or until deeply golden and puffed; allow the baked brie to stand for 10 minutes before serving, to avoid it oozing out too much.
- To serve, add a couple of decorative sprigs of thyme, and surround the brie with crackers, sliced baguette, or even fruit such as apples or pears.

BAKED BRIE CHEESE WITH CARAMELIZED ONIONS
YUMMY! That is all I can think of when I am getting ready to make this! This is a great appetizer for a get together, shower or really just any time. This dish is perfect with entertainer crackers. If you like brie you are going to love this! I personally love the onions and will use the whole onion even though the recipe calls for only 1/2. This recipe pretty much is basic and can be altered to your liking. I have added more onion, I have added sometimes more or less butter, more or less sugar and every time the dish is wonderful! Once you make this you will decide what you like best. The melty, gooey cheese, the sweet sauce or the yummy sweet onions. Then go from there!

- Heat the olive oil in an eight inch cast iron skillet over medium heat. Add the onions and reduce the heat to low. Allow the onions to caramelize slowly, stirring occasionally, every five to ten minutes. They are done when they are a deep golden brown. About 45 minutes.
- Once the onions are caramelized to your desire (around 30 minutes) deglaze the pan with the white wine. Scrape up any stuck-on bits of caramelization and stir it into the onions.
- Turn off the heat and stir in the brie cheese until it is melted. Season with salt and pepper and sprinkle the fresh thyme on top. Serve the hot caramelized onion dip with your favorite breads, chips, fruits, and vegetables.

- Heat the oven to 400°F. Arrange a rack in the middle of the oven and heat to 400°F. Line a baking sheet with parchment and set aside.
- Dust a work surface with a small amount of flour. Unwrap the puff pastry and place it on the flour. Coat a rolling pin with a little flour and roll out the puff pastry into a rough 11-inch square.
- Wrap the brie in the pastry. Place the round of brie in the middle of the pastry. Top with the fig jam and caramelized onions. Fold the corners over the brie, forming a neat package. Use your hand to gently press the edges against the brie and neaten up the sides. Transfer the wrapped brie to the baking sheet and chill in the fridge for 10 minutes.
- Brush the pastry all over with the beaten egg and then transfer to the oven. Bake until the pastry is deep golden-brown, 35 to 40 minutes. Set aside to cool for 5 to 10 minutes. This gives the hot cheese time to firm up a little. Serve warm. Arrange sliced baguette or crackers around the brie and serve while warm
