Steps:

  • Preheat oven to 325°. In a large bowl, mix all ingredients. Transfer to a greased 3-qt. baking dish. Bake, uncovered, 1-1/4 to 1-1/2 hours or until bubbly.

2 red onions
2 cloves of garlic
1 fresh red chilli
2 large carrots
olive oil
1 heaped teaspoon sweet smoked paprika
1 level teaspoon cumin seeds
1 level teaspoon dried chilli flakes
6 medium sweet potatoes
1 x 700 ml jar of passata
2 x 400 g tins of mixed beans
100 ml quality BBQ sauce
a few sprigs of fresh rosemary
½ a loaf of ciabatta or stale bread
40 g Cheddar cheese, optional
fat-free natural yoghurt, to serve

Steps:

  • Preheat the oven to 180°C/350°F/gas 4.
  • Peel the onions and garlic, then finely slice with the chilli. Peel and chop the carrots. Put all these into a large roasting tray and place on a medium heat with a lug of oil, the paprika, cumin and chilli flakes. Cook for 20 minutes, or until softened, stirring regularly.
  • Meanwhile, scrub the sweet potatoes clean, then rub them with a little oil, sea salt and black pepper, place on a baking tray and put aside.
  • When the time's up, stir the passata into the tray, add a splash of water to the empty jar, swirl it around and pour it in along with the beans (juice and all). Drizzle over the BBQ sauce, season lightly and stir well.
  • Pick and roughly chop the rosemary leaves, toss in a little oil and sprinkle over the top, then place in the oven for around 1 hour, or until bubbling, baked and gorgeous, adding a splash or two of water to loosen, if needed.
  • Put the tray of sweet potatoes into the oven for the same amount of time, or until soft and cooked through.
  • Around 20 minutes before the beans are ready, tear the bread into rough chunks and toss with a drizzle of oil in a roasting tray.
  • Grate over the Cheddar (if using), then place on the bottom shelf of the oven for around 15 minutes, or until crispy and golden, to make croutons.
  • Remove everything from the oven, tear up or squidge open the potatoes, and serve with the beans, dollops of yoghurt and the homemade croutons to mop up that delicious sauce, with a simple green salad on the side.

Steps:

  • Fry up the bacon and crumble in pieces. Cut up the green pepper and onion and cook in the bacon grease until soft. Combine all ingredients together. Let simmer in pan on low for at least an hour.
  • Preheat oven to 350 degrees. Fry up the bacon and crumble in pieces. Remove the bacon with a slotted spoon and discard some grease. Add the green pepper and onion and fry until tender.

1 tablespoon Worcestershire sauce
¼ cup unsulphured molasses
¼ cup dark brown sugar
¼ cup ketchup
1 teaspoon prepared yellow mustard
2 slices bacon (halved)
1 teaspoon brown sugar

Steps:

  • Preheat oven to 325º F.
  • Pour navy beans into medium stockpot.
  • In a medium skillet, add diced bacon, onion, and garlic. Cook until bacon is crisp and onion is tender. Remove from heat and add to navy beans.
  • Add Worcestershire sauce, molasses, brown sugar, ketchup, and yellow mustard. Stir to combine well. Pour into deep dish you plan to serve from or leave in stockpot. Top with bacon and sprinkle top with brown sugar.

2 twenty-eight ounce cans red beans, drained and rinsed

Steps:

  • Preheat the oven to 325 degrees F.
  • Put a heavy-bottomed pot (with a lid) over medium-high heat. Add the bacon and cook, stirring often, until the fat renders and bacon begins to crisp, about 6-8 minutes. Add the onion and cook until softened, about 5 minutes more. Stir in the ketchup, tomato puree, brown sugar, vinegar, Worcestershire, salt, pepper, and cayenne and mix well. Bring to a simmer and cook for 5 minutes. Stir in the beans until well coated, cover, and bake in the oven for 1 hour. Remove the lid and continue baking until sauce thickens and the beans begin to brown, about 15 minutes more. Remove from the oven and allow to cool at least 15 minutes before serving.

400g/14oz dried white beans (such as haricot blanc), soaked overnight in cold water
75ml/2½oz rapeseed oil
200g/7oz smoked streaky bacon, chopped
200g/7oz onion, finely chopped
2 garlic cloves, grated
2 x 400g/14oz chopped tinned tomatoes
2 tbsp tomato purée
150g/5½oz soft dark brown sugar
200ml/7fl oz red wine vinegar
salt and freshly ground black pepper
340g/11¾oz wholemeal flour
340g/11¾oz strong white flour, plus extra for dusting
2 tsp bicarbonate of soda
1½ tsp salt
1 tsp cracked black pepper
85g/3oz butter, softened, plus extra to serve
625ml/21fl oz buttermilk

Steps:

  • Drain the white beans and put them in a large pan. Cover with water and bring to the boil. Drain again and return to the pan. Cover with water and cook for approximately one hour, or until just soft. Remove from the heat and drain.
  • In a large saucepan, heat the rapeseed oil over a medium heat. Add the streaky bacon and fry until crisp. Add the onion and garlic to the pan and cook until the onion is soft. Add the tinned tomatoes, tomato purée, sugar, vinegar and 500ml/18fl oz water. Bring to the boil and then add the soaked beans. Reduce the heat to low and cook for 1½-2 hours, or until you have a thick sauce with soft tender beans
  • Meanwhile, make the soda bread. Preheat the oven to 200C/400F/Gas 6.
  • Mix all the ingredients together and form into a loaf shape of your choice.
  • Place on a baking tray, dust with flour and bake in the oven for 45-50 minutes, or until the loaf is golden-brown and sounds hollow when tapped.
  • Remove from the oven and leave to cool. Slice and toast when needed.
  • Season the beans with salt and pepper and serve with slices of toasted soda bread.

  • Rinse and pick through beans thoroughly. (You want to pick out any bad beans that are cracked, darker then the rest, has holes or is shriveled. Also keep an eye out for small rocks - I rarely see these but I know it can happen.)
  • Combine beans, onion, dark brown sugar, molasses, apple cider vinegar, mustard, water, and black pepper in a 6 quart slow cooker. (Bacon gets added here if you are using.)
  • Stir just until ingredients are combined. Cover and cook on low until the beans are tender, about 12 hours.
  • Stir in salt to taste and additional pepper if desired. Start with half a teaspoon and go from there.
  • Turn slow cooker to warm until ready to serve.

water for soaking and precooking
1 medium onion
¼ cup pure maple syrup
⅓ cup brown sugar
2 tablespoons unsulfured molasses
2 tablespoons tomato paste (in a pinch I have substituted with ketchup)
2 teaspoons dry mustard
3 cups water (for cooking)
1 teaspoon salt
pepper to taste

Steps:

  • Rinse and sort the beans; remove any pebbles or debris.
  • Place the beans in a large bowl.
  • Fill with water to submerge the beans with at least two inches of water.
  • Soak overnight (8-12 hours).
  • The next day, transfer the drained and rinsed beans again to a large pot.
  • Re-fill with water and bring to a boil.
  • Turn down the heat and simmer for about 45 minutes.
  • Remove from heat and rinse again.
  • Transfer the rinsed precooked beans to your slow cooker.
  • Add the rest of the ingredients, stir together and place the whole onion in the center.
  • Cover and cook on low heat for 6 to 8 hours or until the beans are tender. If the mixture appears dry, you can add some water.
  • Preheat oven to 225°F.
  • Once again, transfer the precooked beans to your dutch oven or a large oven-proof pot.
  • Add the rest of the ingredients, cover and cook for approximately 6 hours.
  • Remove the lid for the last 30 minutes or so to obtain a nice golden color. As with the slow cooker method, if the beans appear dry, add a little water.

8 ounces thick cut bacon (, diced)
1 medium yellow onion (, finely chopped)
2 cloves garlic (, minced)
1/2 cup plain tomato sauce or ketchup
1/4 cup molasses
1/2 cup brown sugar
2 tablespoons apple cider vinegar
1 tablespoon prepared yellow mustard
2 teaspoons Worcestershire sauce
1 teaspoon smoked paprika
2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1 bay leaf

Steps:

  • Place the dried beans in a pot of water covered by a few inches of water and let soak overnight. Drain the beans, place them back in the pot with fresh water and bring to a boil. Simmer for one hour, then drain, reserving the liquid. See NOTE.
  • In a Dutch oven or other oven-proof pot fry the bacon until crispy then add the onions and cook until soft and translucent, 5-7 minutes. Add the garlic and cook for another minute.Stir in the tomato sauce, molasses, brown sugar, apple cider vinegar, mustard, Worcestershire sauce, smoked paprika, salt, pepper and bay leaf.Add 1 1/2 cups of the reserved bean water and the beans.Bring everything to a simmer for a minute or two to heat it up. In the meantime preheat the oven to 325 degrees F.
  • Transfer the Dutch oven with the lid on to the middle rack of the oven. Bake for 2 to 3 hours or until the beans are tender and the sauce has thickened, removing the lid during the last 20-30 minutes to help the sauce thicken. NOTE: If at any point during the cooking process too much liquid evaporates and the beans get dry, add a little more of the reserved bean water. The beans themselves can vary from batch to batch and you may end up either needing to add more liquid if the beans are too dry or you may need to bake the beans longer with the lid off if there is too much liquid. Adjust as needed.Add more salt the pepper to taste.Serve immediately or let cool completely and refrigerate until ready to serve. Can be reheated on the stovetop or in the microwave.
  • SLOW COOKER METHOD: Follow steps 1 and 2 and then pour everything into the slow cooker. Cook on LOW for 6-7 hours or on HIGH for 3-4 hours or until the beans are tender. Open the lid for the last 30 minutes or longer until the sauce has thickened. If the beans are too thick at any point and too much liquid has evaporated, stir in a little extra water.

3/4 c. barbecue sauce
1/2 c. brown sugar
1/4 c. distilled or cider vinegar
2 tsp. dry mustard or 2 tablespoons Dijon

Steps:

  • Adjust oven rack to lower-middle position and heat oven to 325 degrees.
  • Fry bacon in large, deep sauté pan skillet until bacon has partially cooked and released about 1/4 cup drippings. Remove bacon from pan and drain on paper towels.
  • Add onions and peppers to drippings in pan and sauté until tender, about 5 minutes.
  • Add beans and remaining ingredients bring to a simmer. (If skillet is not large enough, add beans and heat to a simmer then transfer to a large bowl and stir in remaining ingredients).
  • Pour flavored beans into a greased 13-by 9-inch (or similar size) ovenproof pan. Top with bacon, then bake until beans are bubbly and sauce is the consistency of pancake syrup, about 2 hours. Let stand to thicken slightly and serve.

1 lb bacon (applewood smoked )
1 large yellow onion (chopped)
2 cloves garlic (minced)
1 lb ground beef
48 ounces baked beans ((don't drain))
32 ounces kidney beans ((drain))
16 ounces cannellini beans ((drain) )
32 ounces black beans ((drain))
1/4 cup brown sugar
1/4 cup apple cider vinegar
1 cup ketchup
2 tablespoons yellow mustard

Steps:

  • Decide if you are going to make them in a slow cooker or bake in the oven. You can use a deep casserole dish or large pot like a dutch oven. I like a large heavy cast iron pot so I can cook in it and finish baking all in one. Slow cookers are great for parties to keep them warm for several hours.
  • Chop the sliced uncooked bacon into small pieces, over medium heat, brown the bacon in a heavy cast-iron skillet or a large cast iron dutch oven on the stove top using a wooden spoon. Tip, you can cut the bacon into small pieces with clean kitchen scissors right into the pot-I find this faster!
  • Remove the crispy cooked bacon to a small bowl with a slotted spoon. Don't remove the bacon drippings from the pan. Next add the chopped onion and brown for 5-6 minutes until translucent, add the minced garlic, stir for one minute.
  • Next, brown the ground beef, cook for 6-8 minutes. Next, add the bacon, back in with the cooked ground beef, onion, and garlic.
  • Next, add 3 cans of baked beans (don't drain), 2 cans of kidney beans (drain), 1 can of cannellini beans (drain), and 2 cans of black beans (drain).
  • Add the remaining ingredients; brown sugar, cider vinegar, ketchup, and yellow mustard. Stir all the ingredients well to combine.
  • Place into the slow cooker or large dutch oven or large deep casserole dish. The baked beans usually doesn't all fit in one standard 9 x 13, you need a deeper dish.
  • Cook in slow cooker crockpot on low for 2 hours OR bake 350 degrees for 1 1/2 hours in a large covered dish. Serve hot.

Homemade Baked Beans from dried beans image

Classic homemade Boston-style baked beans, flavoured with molasses and cooked low and slow with bacon and onion.

1 lb. dried navy beans
1 1/2 cups onion (diced)
1/2 lb. bacon (diced)
1 1/2 tsp salt
1/4 tsp pepper
5 Tbsp molasses (Fancy (not Cooking or Blackstrap))
1 1/2 tsp dry mustard powder
3/4 cup light brown sugar
3/4 cup ketchup
1 1/2 cups boiling water

Steps:

  • Soak beans in a large bowl over-night, covering with about 2 inches of cold water.
  • In the morning, drain soaked beans and place in a large pot. Cover with several inches of water and bring just to a boil, then immediately reduce heat to somewhere between medium and medium-low or whatever level maintains a gentle simmer. Cook beans for 50-60 minutes, or until beans are tender (but not mushy). Taste test to be sure they are tender before you stop cooking. Drain beans and rinse under cold water to stop the cooking process.
  • Preheat oven to 275F. Start 1 1/2 cups water to boil.
  • In a large oven-safe casserole dish with a lid (or alternately, to be covered with aluminum foil), scatter 1/2 of the onion and 1/2 of the bacon over the bottom of the dish. Add 1/2 of the cooked beans. Scatter the remaining onion and bacon, then top with the remaining cooked beans.
  • In a 4-cup measuring cup or similar sized bowl, stir together the sauce ingredients well. Add 1 1/2 cups of boiling water and stir. Pour over beans and mix gently with a fork. If necessary, add a bit more hot water so that the liquid just barely covers the beans. Cover the pot with a lid or doubled up aluminum foil and place in preheated 275F oven.
  • Beans will cook in the oven for a total of 6 hours, but should be checked at intervals to ensure there is enough liquid in the pot.
  • Cook beans for 4 hours, then remove from oven and gently stir with a fork. There should still be enough liquid in the pot to just barely cover the beans, but if not, add more as needed.
  • Return pot to the oven, covered, checking beans every 30 minutes for the last 2 hours of cooking, first stirring, then adding a bit more water to the pot, if needed. You want to have some puddles of liquid showing on the top of the beans, but you don't want to add too much water to the pot.
  • After 6 hours of cooking, remove from oven and stir gently with a fork. Let stand, uncovered for 5 minutes or covered for 10-15 minutes before serving.

  • Mix all ingredients together. Place in 2-qt casserole dish with cover and bake at 400 for one hour. Cook on LOW in crockpot till done.

They also have cooked their baked beans in a cast iron pot or ceramic pot, plus they made it over night in a wood burning stove. This recipe for baked beans I have recreated to take you back to those earlier days, by baking your beans in a cast iron pot and locking in the aroma you remember has a child. Onion
Cold Water
Cider vinegar
Brown sugar
Yellow Mustard
Molasses
Ketchup
Black pepper
Sea salt
Fat pork or bacon
White Pea beans

Steps:

  • Pre-heat 325° bake for 3:30 to 4:00 hours, covered. 1. In a medium bowl with lid add 2 cups of white pea beans top with cold water then cover, 1/2 tsp sea salt, leave soaking over night. 2. When ready to start making baked beans, you will need a cast iron pot or ceramic pot with cover. ( Also you can cook these beans in your slow cooker ) 3. Start with chopping your onions and add to the bottom of your cast iron pot. 4. Next drain all water off beans then put beans in a medium boiler with cover and top with new cold water and boil for 1 1/2 hours on medium heat with cover part way opened. 5. When boiling have completed drain water into a container and keep for soup or your baking, then add the beans to your cast iron pot. 6. Then add 5 cups of cold water to your pot, in a small bowl mix together the remainder of your ingredients except your pork. 7. Mix together, then pour over onions and beans in pot, mix together then top with fat pork or bacon. 8. Put lid on bake pot then place in a 325° oven for 3:30 to 4:00 hours, check half way through the bake time add more water if needed then cover and continue baking. 9. This is a serving for eight people if you like more double recipe. Bake beans can take a long time to make, I reduced bake time by adding a extra hour on the boiling process. 10. When baked beans are done remove from heat, serve hot or cold. If you would like to bottle them just follow the canning process. Always label and date your bottles before storing them.
