From the Caribbean...a deliciously sweet way to fix plaintains, also known as cooking bananas. Plaintains are sweet and soft when their skins are almost black! But in this recipe, with the sugary syrup, you can use fruit not quite at this point! YUM!

Steps:
- Peel, slice and arrange plaintains in baking dish.
- Combine all remaining ingredients in saucepan and slow boil until syrupy.
- Pour sauce over plaintains.
- Bake at 325 until tender, about 30 minutes or so.
- Lower heat and keep warm until ready to serve.

Steps:
- Pre-heat the oven to 200°C (400°F).
- Remove the peel from the plantains.
- Cover in melted butter.
- Bake for around 20 minutes then flip the plantains, cooking for another 20 minutes until golden brown on both sides.
- Chop the bacon into bits and fry until crispy.
- Cut the cooked plantains down the middle.
- Stuff with the mozzarella, bacon and extra mozzarella.
- Bake for another 5 minutes until the cheese has melted.

- Place the whole bananas or plantains on a baking sheet and bake, turning them every 10 minutes, until the peel starts to split and the inside is tender when tested with a skewer, about 40 minutes. Remove from the oven but keep on the baking sheet. Carefully slice the peel lengthwise to just reveal the flesh and drizzle with some crema and sprinkle with cheese. Transfer to plates to serve individually, on a platter, or directly on the baking sheet on the table. Either way, people should carve out their own banana. Serve the remaining crema and cheese in bowls on the side, in case anyone wants more.

PLANTAIN MASH WITH BACON

- Heat a Dutch oven over medium-high heat and add the onion, garlic and bacon. Cook until the bacon is crisp, about 12 to 15 minutes. Stir in the stock and 1 cup of the heavy cream. Reduce the heat to medium-low and add the plantains. Simmer the mixture until the plantains are tender, about 5 to 8 minutes. Add the remaining 1/4 cup of heavy cream and the salt and pepper. Mash together until well combined. Transfer to a serving bowl and serve.
- *Cook's Note: Add a little more stock if the mash is too dry.

- Using a sharp large heavy knife, cut ends off plantains and slit through peel lengthwise from end to end. Soak in a large bowl filled with 4 cups water and 1 teaspoon salt 5 minutes. (This makes peel easier to remove.) Remove tough outer peel, using a paring knife if necessary, and cut plantains into 1 1/2-inch pieces. Cook, covered, in a 2- to 3-quart saucepan of boiling salted water until tender, about 20 minutes.
- While plantains cook, cook bacon in a 10-inch heavy skillet over moderate heat, stirring occasionally, until crisp, about 4 minutes. Add onion and cook, stirring, until softened and browned, about 10 minutes. Reserve 1 tablespoon of mixture for garnish, then add milk, pepper, and remaining 1/2 teaspoon salt (mixture may appear curdled). Remove from heat and keep warm, covered.
- Drain plantains in a colander and return to saucepan. Reheat milk mixture and mash plantains with a potato masher, adding hot milk mixture and butter. Sprinkle reserved bacon and onion on top.

- Preheat oven to 350 degrees.
- Make a cut lengthwise on the plantain peel; open it and cut the plantain into two halves, again lengthwise.
- Grease a baking sheet or cover a sheet with foil; place the plantain over is peel on the tray.
- Insert the cloves, distributing them evenly along the two halves.
- Sprinkle some of the raw sugar and allspice over.
- Put small amounts of butter or oil on the plantain halves and sprinkle the coconut or cheese over top.

- Whisk soy sauce and honey together in a large bowl; add bananas and stir to coat bananas in marinade. Refrigerate for 30 minutes. Remove banana chunks and reserve marinade.
