TWO CHEESE SCONES WITH A TOUCH OF CAYENNE
Plain cheese scones that are jazzed up a tad by the addition of some cayenne pepper. Great for a hearty brunch or served along side some soup. My sis and me just threw this together for breakkie some morning, so feel free to use other cheeses or spices according to what you have on hand.

Steps:
- In a big bowl combine flour, soda, baking powder and cayenne pepper.
- Rub in the butter using your finger tips.
- Stir in the two cheeses.
- Add the yogurt and knead briefly until a soft (but not sticky) dough has formed. You might need a little more yogurt (or water) to reach the right consistency.
- Flatten dough and cut out scones of desired size. I use a 3 inch glass for cutting out the scones.
- Place on a paper-lined baking sheet and brush tops with some yogurt (if desired).
- Bake in the preheated oven at 200°C/400°F for 15-20 minutes or until a toothpick inserted in the centre comes out clean.

SAVORY GARLIC SCONES WITH CHEESY HERB SPREAD
Steps:
- Preheat the oven to 375 degrees F; position a rack in the center of the oven. Line a baking sheet with parchment paper or lightly coat with cooking spray; set aside.
- With a serrated knife, cut the top quarter off the garlic head to expose the tops of the cloves. Place the garlic, cut side up, on a sheet of foil large enough to enclose it; drizzle with olive oil. Close the foil completely around garlic, crimping the sides and top so no steam can escape. Roast the garlic in the oven until softened and cooked through, about 30 minutes. Carefully remove the garlic from the foil and, squeezing from the bottom, release the roasted cloves into a medium bowl. Add the eggs and milk, stir to combine, and set aside.
- In a large bowl, whisk to combine the flour, baking powder, pepper and salt. Use a pastry blender, two knives or your fingers to combine the butter to make the mixture crumbly.
- Add the wet garlic mixture to the dry flour mixture and gently stir. Add the scallions; gently combine to evenly distribute. If the dough seems too dry, add more milk, a tablespoon at a time.
- Turn the dough out onto a well-floured work surface. With your hands, pat into a 6-by-9-inch rectangle. Cut into 6 squares and then cut the squares in half diagonally. Place the scones on prepared baking sheet, spaced 1-inch apart.
- Bake until golden and cooked through, 25 minutes. Serve with the Cheesy Herb Spread.
- Place the cream cheese, Gorgonzola, butter, garlic powder, onion powder, salt and cayenne in a food processor and pulse until well blended. Add the herbs and pulse until combined. (Alternatively, mix all ingredients with a spoon in a large bowl until combined.) Chill in refrigerator until ready to use.
- Yield: 1 1/2 cups

Steps:
- Preheat oven to very hot- 225 degrees C.
- Mix flour, cheese, milk and salt together until combined.
- The mixture is fairly moist and sticky.
- Put about a rounded tablespoon of mixture onto a greased tray.
- Makes 10- 12 scones approx.
- Sprinkle on the paprika if you wish.
- Bake for about 15 minutes.
- I turn the tray round half way through cooking for an even result.
- Best served warm- split and serve with butter (optional).

- Heat the oven to 200C/180C fan/gas 6 with a large baking tray inside. Sift the flour, salt, cayenne pepper and baking powder into a bowl, then sift again to make sure the ingredients are thoroughly combined.
- Add the butter to the bowl and combine with your fingertips to make breadcrumbs. Sprinkle 100g of the cheese into the breadcrumb mixture and rub together until evenly distributed. Try not to mix too much as the heat from your hands may start to melt the butter.
- Make a well in the centre of the mixture and pour in enough milk to give a fairly soft but firm dough. Do not pour in all the milk at once as you may not need it all to get the right consistency.
- Lightly flour a surface and roll out the dough to approximately 2cm thick. Cut out the scones with a medium (about 8cm) cutter, then put on a sheet of baking parchment, glaze with a little milk and sprinkle with the remaining cheese. Slide onto the hot oven tray.
- Bake in the oven for 15-20 mins or until golden brown and cooked through.

CHEESE SCONES
This is one of a few recipes that I got from doing home economics in school, so is one of the first things I cooked/baked. The mustard and pepper are optional, and along with the salt and cheese, you can experiment and vary the quantities of these ingredients to suit your own tastes. Diabetics may also appreciate this recipe as it has no added sugar.

- Sieve flour, salt, pepper and mustard together into a mixing bowl.
- Cut the margarine into smaller blocks, and then rub in until the mixture resembles fine breadcrumbs.
- Beat the egg and mix with the milk in a small basin.
- Make a well in the centre of flour mixture, add the cheese (save a little to sprinkle over the scones) and pour in a bit of the egg and milk mixture at a time, mixing with a blunt knife, until you get a soft, but not sticky dough. If you find the mixture too dry, you can add some more milk.
- Lightly flour the work surface so the dough doesn't stick, and roll out the dough until it is about half an inch (1cm) thick.
- Use a scone cutter (you can lightly dust it with flour to stop it from sticking) of a size of your choice and cut out the scones from the dough. You can keep gathering up the off-cuts and re-rolling it out until you use it all.
- Place the scones on a greased baking tray, or on baking paper in the tray and brush the tops with milk and sprinkle on some cheese.
- Bake at gas mark 8, 500 Fahrenheit or 250 Celsius for about 10 minutes, or until the tops have turned a golden brown.

- Heat oven to 400ºF.
- Mix first 4 ingredients in large bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Stir in cheeses.
- Whisk eggs and milk until blended. Make well in center of flour mixture. Add egg mixture; stir with fork until mixture forms stiff dough. Lightly knead dough just until it holds together. Pat or roll out to 1/2-inch thickness; cut into 3-inch rounds with floured biscuit cutter, rerolling scraps as necessary to make 10 rounds. Place on parchment-covered baking sheet.
- Bake 15 to 17 min. or until golden brown. Serve warm.
