2 Tbsp. GREY POUPON Dijon Mustard
2 Tbsp. chopped fresh rosemary
1/2 cup KRAFT Zesty Italian Dressing, divided
1/4 cup maple-flavored or pancake syrup
3 slices OSCAR MAYER Bacon, cooked, crumbled
4 green onions, chopped
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken, prepared as directed on package

Steps:

  • Spread both sides of chops with mustard; press rosemary into chops.
  • Heat 1/4 cup dressing in large nonstick skillet on medium-high heat. Add chops; cook 4 min. each side or until browned on both sides. Add remaining dressing and syrup; top with bacon and onions. Cook 5 min. or until chops are done (160°F).
  • Serve chops over stuffing.

1 medium apple, chopped
1 medium onion, chopped
4 thick-cut boneless pork chops ((about 2 lbs. total))
2 teaspoons seasoned salt ((I used Lawry's brand seasoned salt))
2 teaspoons minced fresh rosemary ((or ½ teaspoon dried rosemary))
1 teaspoon minced fresh thyme ((or ¼ teaspoon dried thyme))
6 ounce box Stove Top stuffing mix, plus water and butter called for on package

Steps:

  • Preheat oven to 400 degrees F. Spray a large baking dish with cooking spray. Place apples and onions in the prepared dish; set aside.
  • Season pork chops on all sides with seasoned salt, rosemary and thyme.
  • Place seasoned pork chops on top of the apples and onions.
  • Prepare stuffing according to package instructions. Spoon stuffing onto each pork chop.
  • Spray a sheet of aluminum foil with cooking spray, and then place sprayed-side down to cover the dish.
  • Bake, covered, for 25 minutes. Remove cover and return to the oven for 5-10 more minutes, or until pork is cooked through and reaches an internal temperature of 145 degrees F. Garnish with additional fresh herbs, if desired, and serve!

1 cup chopped celery

My local butcher used to cut these nearly 2 inch thick gorgeous pork chops. We would slice open the chop to the bone and stuff with a sweet savory sausage stuffing, these thick pork chops are a summer time hit.

8 pork chops (Special Order 1 3/4-inch thick)
3 tablespoons fresh ground black pepper
3 tablespoons dark brown sugar
3 tablespoons paprika
2 tablespoons kosher salt
1 teaspoon cayenne pepper
2 tablespoons olive oil
2 cups finely chopped red onions
12 ounces sweet Italian sausage
8 ounces coarsely chopped apricots
1 cup chopped fresh parsley
1/2 cup dried currant (rehydrate in orange juice)
3 minced garlic cloves
2 oranges, zest of
2 teaspoons dried thyme
1 teaspoon fresh ground pepper
1/2 teaspoon salt
1 cup bitter orange marmalade

  • Ask your butcher to cut up some inch and half nearly two inch thick bone in pork chops.
  • Prepare rub and coat pork chops up to one day before grilling.
  • Brown sausage, drain, set aside to cool. Cook down onions in hot oil until slightly brown and translucent. Not looking for the caramelized onions you might put on your burger here. Return sausage to pan, add remaining ingredients for stuffing, heat and then cool to touch.
  • Cut center slit in pork chops to the bone, stuff with sausage, onion, fruit mixture. Over stuffing these monsters is okay. A saturated bamboo stick could help hold it together but not necessary.
  • Warm marmalade over low heat until slightly liquid form.
  • Heat grill to medium high, MOM on a three burner Weber (medium-off-medium) , or about a 7-8 count (hand over heat) for charcoal.
  • Grill on indirect heat for 8-10 minutes on first side, flipping and grilling for a remaining 6-8 minutes. This can be one of those times that a fine set of grill marks will pay off big dividends on presentation, so if you're thinking grill marks I am sure you know what to do. When only a few minutes are left coat chop with glaze, being careful not to put on too soon and have sugars burn. Grilling pork can be a personal choice as to when they are done. Because of the moist stuffing, these do not tend to dry out. But with the glaze you can blacken them and give that bitter burnt taste to what was going to be your best meal of summer.
  • Check temp of pork chop and remove from heat. Let rest for 5-10 minutes before serving. I might use a tinfoil tent from time to time if I need to stretch out the time before serving.

4 large boneless pork chops (cut 1 ½ inch thick)
2 tablespoons butter
1 tablespoon Dijon mustard
Salt and pepper
4 tablespoons butter
1/3 cup chopped onion
1/3 cup chopped celery
1 firm apple (peeled, cored, and diced)
1 tablespoon fresh chopped sage
½ cup chicken broth
2 tablespoons bourbon
1 ½ cups dried cornbread stuffing crumbs

Steps:

  • Preheat the oven to 425 degrees F. Set out a rimmed baking sheet lined with parchment paper. Set a large skillet on the stovetop.
  • Lay the pork chops on a cutting board. Along the flattest edge, cut a deep even pocket into each pork chop, leaving three sides intact. Brush the pork chops with Dijon mustard, and sprinkle generously with salt and pepper on both sides.
  • Add 2 tablespoon butter to the skillet and turn the heat on medium. Once the butter has melted, place the pork chops in the skillet and brown, about 2-3 minutes per side. (The pork chops will still be raw in the middle.) Move the seared pork chops to the prepared baking sheet.
  • Use the same skillet to make the stuffing. Add 4 tablespoon butter to the skillet. Once melted, add the chopped onions, celery, apples, and sage. Sauté for 3-5 minutes to soften. Then add in the chicken broth and bourbon. Stir to combine, then mix in the cornbread crumbs. Mix well, then turn off the heat.
  • Use a spoon to stuff the pork chops with the apple stuffing. Press it down in the pocket of each chop, then press more on top of the pocket. You can set the pork chops upward, or lay them on their sides.
  • Bake for 10-12 minutes, or until the thickest part of the pork chop reaches 160 degrees F. Serve warm.

4 pork chops (boneless or bone-in)
4 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon ground pepper
1 teaspoon smoked paprika (optional)
6 cherry tomatoes
1 cup low-sodium chicken broth
1 tablespoon apple cider vinegar
2 teaspoons maple syrup
1 tablespoon brown sugar
2 tablespoons butter
4 rosemary sprigs
2 tablespoons chopped fresh parsley (optional)

Steps:

  • Pat dry pork chops with a paper towel.
  • Rub pork chops with 2 tablespoons of olive oil.
  • In a small bowl mix salt, pepper and paprika and rub onto the pork chops. Set aside.
  • Place a medium skillet (to which you have a lid for) over medium-high heat. Add the remaining 2 tablespoons of oil and once it is hot add the pork.
  • Cook until golden, for about 2 to 3 minutes.
  • Flip the pork chops to the other side, cook for one minute and reduce the heat to low. Cover the skillet with a lid and cook 5 to 12 minutes (check every 2 minutes after 5 mins), or until an instant-read thermometer reads 145 degrees F when inserted into the thickest part of the chop. If you do not have a thermometer.
  • Transfer pork chops to a plate or cutting board and cover loosely with aluminum foil.
  • Let the pork rest for 5-10 minutes.
  • Using the same skillet, increase the heat to medium-high and add the cherry tomatoes, sear them until lightly charred, remove and set aside on a plate.
  • Add the chicken stock, vinegar, maple syrup, and brown sugar to the skillet, stir and add 2 sprigs of fresh rosemary.
  • Use a wooden spoon to scrape the bottom of the skillet to remove any bits that stuck to it. Bring the mixture a simmer and cook until reduced by half.
  • Taste and adjust for salt, acidity or sweetness.
  • Take the skillet off the stove, and when the sauce is no longer simmering, stir in the butter. Discard rosemary.
  • Add back the pork chops back into the pan and drizzle some of the sauce on top. Add back the tomatoes.
  • Sprinkle some chopped fresh parsley on top and garnish with a few fresh rosemary sprigs before serving.

2 bone-in thick cut pork chops ((about 1 1/2" thick))
salt and pepper ((to taste))
1 tablespoon olive oil ((for browning the chops))
3/4 cup butter
1/2 cup chopped celery
1/2 cup diced onion
7 cups dry bread cubes*
1 teaspoon teaspoon salt
1/2 teaspoon ground black pepper
3/4 tablespoon poultry seasoning
3/4 cup chicken stock

Steps:

  • If the pork chops do not already have a pocket cut in them, slice the meaty side of the pork chop in half almost to the bone so that it creates a pocket.
  • On both sides, sprinkle the pork chops with salt and pepper.
  • Heat the oil in a skillet over medium heat. Once the oil is hot, sear the pork chop on both sides just until golden brown.
  • Remove the pork chops to a plate.
  • Preheat the oven to 350 degrees Fahrenheit.
  • In a skillet, melt the butter. Add the celery and onion. Saute the celery and onion until tender, about 10 minutes.
  • In a large bowl, combine the bread cubes, butter mixture and the remaining stuffing ingredients. Mix well.
  • Stuff about 1/2 cup to 3/4 cup stuffing in each pork chop so that it fills the pork chops and also sticks out a little bit. This will give the pork chop a pretty look!
  • Place the pork chops in a baking dish, either 9x13" or a bit smaller.
  • Arrange the remaining stuffing around the pork chops.
  • Bake the pork chops for about 20-25 minutes or until the internal temperature of the pork reaches 145 degrees Fahrenheit. At this temperature there will be a blush of pink in the pork which means they will be nice and juicy!
  • Allow the chops to rest for 3-4 minutes, then serve.

STUFFED SAVORY PORK CHOPS

These are the way I have made stuffed pork chops all my married life. I usually only serve one pork chop per person because they make a large serving. You can use either thick boneless pork chops or thick regular pork chops. I prefer using those with bones as I feel they give a richer moister flavor. I have given the recipe for one serving. Simply multiply the ingredients for as many people as you wish to serve. You don't have to sew the pocket shut if you do not wish...I just prefer this method since it retains all the stuffing better inside the meat and keeps the moisture inside as well. Sewing utensils: Button Thread or cooking cord and a large needle with a big eye.(You need strong thread so that it can be easily removed prior to serving.)

  • Let the stuffing sit for about 5 minutes so that the dry bread will absorb the liquid.
  • Stuff the pork chop with all the stuffing.
  • You can keep mounding it inside the pocket so that the the meat actually forms a mound.
  • Thread a long piece of button thread or cooking cord through the large needle.
  • Stick the needle through one side of the meat then through the other side and knot the thread.
  • Using an overcast stitch gently sew the entire pocket shut.(Do not pull too tightly).
  • In a hot skillet with a light coating of oil, brown both sides of the meat on both sides.
  • Turn heat down to medium low, cover with a lid and simmer for about 1 hour until the meat is tender. (Add a few tablespoons of water while simmering only if needed.).
  • Serve with a nice green salad and a hot vegetable.

Steps:

  • Preheat your oven to 375°F (190°C) and grease a 9x13 pan or baking dish with oil or non-stick cooking spray.
  • Heat your chicken broth in the microwave for 2 minutes on high, or heat to a low boil in a small saucepan on the stovetop.
  • In a large mixing bowl, combine the Stove Top Stuffing Mix with heated broth, butter, and milk. Add optional ingredients onion, celery, and/or the dried cranberries if desired. Mix until well combined and set aside.

  • Heat a cast iron pan to medium high. Melt one tablespoon butter in it. Once melted add apples, bread, mushrooms, sage, parsley and onion and sautée for 5 minutes until apples are softened and onions are translucent. Remove from pan and place in a bowl to cool.
  • Salt and pepper all sides of pork chops. Cut a 2 inch slit in side of pork chop to create a pocket. The slit will only be 2 inches at the incision but inside the pork chop you will create a large pocket to have the stuffing and goat cheese fit into. Remove skillet from stovetop, turn off burner but dont wash the pan. You will reuse the pan once you stuff the chops.
