2 cups rolled oats
1/4 teaspoon cinnamon
1/2 cup walnuts (, ground or smashed into small pieces)
1 teaspoon baking powder
1/2 teaspoon salt
1 egg
2 tablespoons butter (, melted)
2 bananas (, very ripe, smashed (can have some small chunks))
1.5 cups low fat milk or plan almond milk
1 teaspoon vanilla
brown sugar for serving
extra banana slices and nuts for topping ((optional))

Steps:

  • Preheat oven to 375 degrees
  • In medium sized bowl, combine dry ingredients (oatmeal, cinnamon, nuts, baking powder, salt)
  • In another bowl, combine the remaining ingredients (wet ingredients; egg, butter, banana, milk, vanilla)
  • Pour wet ingredients into dry ingredients and stir for about 1 minute to combine
  • Grease a small 8x8 casserole dish and pour ingredients in dish
  • Bake in oven for 20 to 25 minutes
  • Let cool for about 5 minutes before serving
  • Serve with brown sugar and extra fruit for topping

3 cups rolled oats (see Tip)
1 ½ cups low-fat milk
2 ripe bananas, mashed (about 3/4 cup)
⅓ cup packed brown sugar
2 large eggs, lightly beaten
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
½ teaspoon salt
½ cup toasted chopped pecans

Steps:

  • Preheat oven to 375 degrees F. Coat a muffin tin with cooking spray.
  • Combine oats, milk, bananas, brown sugar, eggs, baking powder, cinnamon, vanilla and salt in a large bowl. Fold in pecans. Divide the mixture among the muffin cups (about 1/3 cup each). Bake until a toothpick inserted in the center comes out clean, about 25 minutes. Cool in the pan for 10 minutes, then turn out onto a wire rack. Serve warm or at room temperature.

1 cup butter
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon banana extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
3 cups rolled oats
2 cups chopped pecans

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Cream butter or margarine with mixer. Blend in whole eggs, sugar, and extract. Add flour, baking soda, and salt. When the ingredients are thoroughly mixed, add oats and pecans. Mix on lower speed until consistent.
  • Drop pieces of the dough using an ice cream scoop onto an ungreased cookie tray roughly 3 to 4 inches apart.
  • Bake 8 to 10 minutes. Eight minutes would yield crispy cookies with a chewy, slightly doughy center. For harder, crispier cookies, bake longer. Cool on wire rack.

2 cups rolled oats or 2 cups quick oats
1 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon cinnamon
3 tablespoons sugar
1 egg, beat
2 -3 bananas (1 mashed and 1 or 2 sliced)
1 1/2 cups skim milk
1 teaspoon vanilla
1 -2 tablespoon brown sugar
cooking spray

Steps:

  • Preheat oven to 375.
  • Spray an 8 inch square pan with cooking spray.
  • Stir together oats, baking powder, salt and cinnamon.
  • Add sugar, an egg, 1 mashed banana, milk and vanilla. Stir just until combined.
  • Pour into prepared pan and top with a layer of sliced bananas.
  • Bake for 25 minutes.

2 fully-ripened large bananas (1 1/2 diced and 1/2 thinly sliced crosswise)

2 tablespoons unsweetened cocoa powder
2 tablespoons honey or agave nectar
1/3 cup toasted and chopped walnuts
Pinch ground cinnamon

Steps:

  • Bring the almond milk, 1 3/4 cups water, the diced bananas, almond and vanilla extracts and pinch of salt to a boil in a large saucepan over high heat.
  • Stir in the oats, cocoa powder and 1 tablespoon of the honey and reduce the heat to medium. Cook, stirring frequently, until the oats are fully cooked to desired consistency, 6 to 7 minutes.
  • Transfer to 4 bowls, top with the sliced bananas, walnuts, the remaining 1 tablespoon honey, cinnamon and chocolate chips and serve.

2 cups nonfat milk

Steps:

  • Preheat oven to 350°F.

½ cup shortening
¾ cup white sugar
2 eggs
1 cup mashed bananas
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
  • In a large bowl, cream together the shortening and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition, then stir in the banana and vanilla.
