BAKED BANANA-NUT OATMEAL CUPS
Muffins meet oatmeal in these moist and tasty grab-and-go oatmeal cups. Feel free to swap out the pecans for any other nut--walnuts would be great--or omit them altogether. Make a batch on the weekend and keep them in your fridge or freezer for quick and easy breakfasts all week. Reheat in the microwave for about 40 seconds.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Cream butter or margarine with mixer. Blend in whole eggs, sugar, and extract. Add flour, baking soda, and salt. When the ingredients are thoroughly mixed, add oats and pecans. Mix on lower speed until consistent.
- Drop pieces of the dough using an ice cream scoop onto an ungreased cookie tray roughly 3 to 4 inches apart.
- Bake 8 to 10 minutes. Eight minutes would yield crispy cookies with a chewy, slightly doughy center. For harder, crispier cookies, bake longer. Cool on wire rack.

BAKED BANANA OATMEAL
I love baked oatmeal and make many different versions, but this is one of my kids favorites. It is really easy to throw together and smells so good. We like to eat it topped with vanilla yogurt.

BANANA NUT OATMEAL
A warm, filling breakfast cereal with a fruity twist. When my bananas begin to get overly ripe, I peel them and put them in plastic freezer bags. This is a great recipe for using frozen bananas, but you can also use ripe bananas.

BAKED " BANANA BREAD" OATMEAL
For years I never ate oatmeal due to the "mushy" texture. After seeing a baked oatmeal prepared on FoodNetwork, it inspired me to come up with a few baked oatmeal recipes inspired by some popular baked goods. This oatmeal has a much more firm texture. Check out my recipes for Recipe #354497 and Recipe #354498.
