1/2 tablespoon honey
cinnamon (to taste)

Steps:

  • Preheat oven to 400F degrees.
  • Arrange banana on an oven safe dish or foil.
  • Sprinkle with cinnamon and honey.
  • Cover tight with foil and bake for 10 to 15 minutes, depending on how soft you like them.
  • Enjoy as is, or (optional) add some whipped cream or light ice cream on the side.

2 tablespoons all-purpose flour
2 teaspoons rice flour
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon sugar
oil, for deep frying
1 scoop vanilla ice cream
1 tablespoon chocolate syrup
1 tablespoon sweetened condensed milk

Steps:

  • Mash the bananas in a bowl.
  • Stir in all-purpose flour, rice flour, baking soda and salt until mixed. Mix in sugar.
  • Heat up cooking oil for deep frying in a small pan.
  • Once the oil is hot, scoop up a spoonful, roughly a tablespoon, of batter into the frying pan. Deep fry until golden brown.
  • Place the fritters on a paper towel to remove excess oil.
  • Serve the fritters with a scoop of vanilla ice cream. Drizzle with chocolate syrup and sweetened condensed milk.

4 to 6 medium-size baking potatoes
1 tablespoon vegetable oil
1 medium-size bunch broccoli
Salt
2 to 3 cloves garlic, crushed, plus 1 clove, peeled
1 red bell pepper, cut into 1-inch chunks
2 teaspoons butter, plus more as an accompaniment
1/4 pound mushrooms, sliced
Sliced olives
1 ripe tomato, diced
1 cup grated Cheddar
2 minced scallions or chives
1/4 cup pesto
Sour cream or cottage cheese
Butter
Milk

Steps:

  • Preheat the oven to 400 degrees F.
  • Scrub the potatoes with a scrub brush. Prick them with a fork, then wrap tightly in foil, and bake for about 40 minutes.
  • Meanwhile, heat a wok or frying pan, add the oil, then add the broccoli and stir-fry over high heat for about 5 minutes, sprinkling with salt and crushed garlic as you go. Remove from the heat and spoon into a bowl.
  • Cook red bell pepper in a little water until tender. Place in a blender with a few shakes of salt and a small clove of garlic. Puree the pepper until smooth and strain it into a small bowl so the skins are left behind in the strainer.
  • Melt butter in the wok or frying pan. Add the mushrooms and salt lightly. Saute over medium heat for about 10 minutes, then spoon into a bowl.
  • Assemble the toppings in bowls: the stir-fried broccoli, pepper puree, stir fried mushrooms, olives, tomato, scallions, pesto, grated cheese, and sour cream or cottage cheese.
  • Slit each potato and use a fork to mash the insides with a little butter and/or milk to make them creamy (so the toppings will blend in more easily). Top as desired with various accompaniments.

38 ounces creme de banana
38 ounces butterscotch liquor
38 ounces vanilla vodka (recommended: Stoli)
20 ounces creme de coca
52 ounces spiced dark rum (recommended: Captain Morgan)
3/4 gallon heavy cream
1/4 gallon sweet condensed milk
50 edible orchids, cut in 1/2
100 banana slices
Splash 151 to light on fire for flambe

Steps:

  • Mix all together in mixer until blended and pour into Gallon Pitchers. Place in cooler for transport. Line up 100 martini glasses, rim glasses with Banana Praline dust, if time allows, prior to service. Pour 3 1/2 ounces of drink into glasses, float 1/2-ounce of 151 on top and light with a torch. Add ice cube (frozen banana with orchid).

1 cup butter, softened
2 cups sugar
4 large eggs
2 tablespoons canola oil
2 teaspoons vanilla extract

FUDGE SAUCE:
1/2 cup butter, cubed
2 cups sugar
1/2 cup baking cocoa
1/2 cup water
1/2 cup light corn syrup
1 teaspoon vanilla extract

Vanilla ice cream and maraschino cherries

Steps:

  • Preheat oven to 325°. Line a 13x9-in. baking pan with foil, letting ends extend up sides; grease foil. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in oil and vanilla. In another bowl, whisk flour and cocoa; gradually beat into creamed mixture., Spread into prepared pan.   • Heat oven to 200C/180C fan/gas 6 (or a BBQ). Make a slit through the skin of the bananas along one side - making sure you don't cut all the way through to the other side. Poke in the chocolate buttons along the cut. Put each banana onto a sheet of foil and crimp the edges together to seal into a parcel. Transfer to a baking sheet and cook for 25 mins until the bananas have turned black (or pop straight into the BBQ embers for 15 mins).
