Roasted Artichokes Recipe (Easy!) image

The easiest, most delicious method for how to roast artichokes! This roasted artichoke recipe is seasoned simply with lemon, garlic, and olive oil.

3 large Artichokes
2 tbsp Olive oil
1/2 tsp Sea salt
1/4 tsp Black pepper
6 cloves Garlic ((peeled))
1 medium Lemon ((sliced into half moons))
1 tbsp Unsalted butter ((softened))

Steps:

  • Preheat the oven to 450 degrees F (232 degrees C).
  • Repeat steps 2 and 3 with all three artichokes.

Baked Artichokes With Garlic and Lemon image

Excellent change for those who are tired of the old steamed artichokes with mayo. These are delicious alone with no dip, but, if you must, I find that butter melted with a little lemon zest and juice is a better compliment than the old heavy mayo standby. I know the "servings" says for 4, but, I can eat a whole one by myself!!!!

2 large artichokes
1 lemon, zested and juiced
2 garlic cloves, minced
2 -3 basil leaves, chopped
1 -2 tablespoon olive oil
sea salt & fresh ground pepper, to taste
1/2 cup chicken stock or 1/2 cup vegetable stock

Steps:

  • Preheat the oven to 350 degrees.
  • Combine the olive oil, basil, minced garlic, lemon zest and juice, sea salt and fresh cracked pepper in a bowl. Mix until it becomes a paste.
  • With kitchen scissors, trim all the sharp ends off of each leaf. Wash the artichoke well in cool water. Slice down the center to form two halves.
  • Clean out all the fuzzy hairs and smaller leaves with a spoon then immediately rub all the cut areas with the zested and juiced lemon.
  • Coat the baking dish with olive oil.
  • Rub the paste all over the artichoke halves and inside the leaves.
  • Place each artichoke half top side down in a baking dish.
  • Pour the stock in the dish and cover with a lid or tin foil.
  • Bake for 45-50 minutes or until soft and tender.
  • Be sure to let cool for a few minutes before digging in!

4 fresh artichokes
1/4 cup olive oil
6 large garlic cloves, minced
4 teaspoons minced fresh thyme or 2 teaspoons dried
1/2 cup fresh lemon juice
1/2 cup (1 stick) butter

Steps:

  • Place steamer rack in large pot. Fill pot with enough water to come just to bottom of rack. Cut stems and top 1 1/2 inches from artichokes. Cut away first outside row of artichoke leaves. Using scissors, cut off pointed tips of leaves. Arrange artichokes on rack. Bring water to boil over high heat. Cover pot; steam artichokes until knife pierces base easily, adding more water if necessary, about 45 minutes.
  • Meanwhile, heat oil in heavy medium saucepan over medium heat. Add garlic and thyme; cook 1 minute. Add lemon juice and butter; whisk until butter melts. Season with salt and pepper. Serve artichokes warm with seasoned butter.

Artichokes are sauteed in garlic butter before steaming. A simple and delicious way to use artichokes!

2 large artichokes (about 1 pound each)
3 cloves garlic, chopped
2 tablespoons butter

Steps:

  • Rinse artichokes under cold water, and use a sharp knife to cut the top 1/3 off of each one. Trim the stems to about 1 inch, and remove the smaller leaves from around the base. Use scissors to remove any remaining leaf tips. Cut each artichoke in half from the bottom to the top, then use a spoon to scrape out the hairy choke. Rinse again to remove any residual hairs.
  • Melt the butter in a large skillet over medium heat. Add the garlic, and saute for about 1 minute to flavor the butter. Arrange artichoke halves cut-side down in the skillet. Saute for about 5 or 10 minutes, or until lightly browned. Reduce heat to low, and pour in about 1/4 cup of water, cover, and let steam for 15 to 20 minutes, or until the artichokes are tender. A fork should easily pierce the stem.

1 can quartered artichoke heart, drained
2 cloves garlic, mashed
1/2 lemon, juice of
salt and pepper
1/2 cup finely chopped parsley
1/2-1 cup white wine
1 tablespoon olive oil

Steps:

  • Heat oil in a sauteé pan over medium high heat.
  • Add garlic and artichokes and season with salt and pepper.
  • Sauteé garlic and artichokes 3-5 minutes, add remaining ingredients and lower heat to medium low.
  • Simmer about 10 minutes.
  • Serve hot.

  • Dip leaves and pull off flesh with teeth and dunk heart when you reach it.

  • Preheat oven to 425°F Prepare a baking sheet with a wire rack set on it. This will keep the artichoke packets elevated so the heat can circulate under and around to cook the artichokes evenly.
  • In a large bowl prepare a lemon water bath with the water and juice of 2 lemons. The acid in the water will keep the artichokes from discoloring.
  • Wash the artichokes under cold tap water while brushing them with a soft vegetable brush. This will remove the natural bitterness on the outside.
  • Slice off the stems ends and with a serrated knife cut 1/2-inch off the top trim of the artichoke. Using scissors trim the tips of the artichoke leaves.
