1 medium onion, halved lengthwise, then thinly sliced lengthwise
2 tablespoons vegetable oil
1 tablespoon minced fresh jalapeño, including seeds
1 garlic clove, minced
1 teaspoon finely grated peeled fresh ginger
1 teaspoon ground cumin
1 teaspoon ground coriander
3/4 teaspoon salt
1/8 teaspoon turmeric (optional)
1 lb tomatoes (3 medium), cut into 1/2-inch pieces
1 lb large shrimp in shell (21 to 25 per lb), peeled and deveined
1/2 cup loosely packed fresh cilantro leaves, chopped if desired

Steps:

  • Cook onion in oil in a 12-inch heavy skillet over moderate heat, stirring occasionally, until golden, 6 to 8 minutes. Add jalapeño, garlic, and ginger and cook, stirring, until jalapeño is softened and garlic is golden, about 1 minute. Add cumin, coriander, salt, and turmeric (if using) and cook, stirring, until fragrant, about 1 minute. Add tomatoes and cook, stirring occasionally, until tomatoes break down and sauce is thickened, 3 to 5 minutes.
  • Add shrimp and cook, turning occasionally, until just cooked through, about 3 minutes. Remove skillet from heat and stir in half of cilantro. Serve sprinkled with remaining cilantro.

1 lb jumbo bay shrimp
2 tablespoons lemon juice
1/2 cup coconut milk

Steps:

  • Heat oil in skillet, add onion, pepper, tomatoes, cilantro, garlic and tomato paste.
  • Cook for 10 minutes.
  • Bring sauce to a boil, then add shrimp and lemon juice.
  • Reduce heat to medium and cook for 2 minutes.
  • Add coconut milk and bring the mixture to a boil.
  • Serve over rice.

3 cloves garlic, minced
1 small rib celery, finely chopped
1 small carrot, finely chopped
1/2 small onion, finely chopped
2 large ripe tomatoes, peeled, seeded, and chopped
1/4 teaspoon cayenne pepper
1/2 small bunch flat leaf parsley, leaves only, finely chopped
1/2 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 pounds medium raw shrimp, peeled and deveined
1/4 cup white wine

Steps:

  • In a large skillet, heat the butter and the olive oil over low heat. Add the garlic, celery, carrot, onion, tomatoes, cayenne, half of the parsley, sugar, salt, and black pepper. Cover the pan and raise the heat to medium low. Simmer the mixture for about 5 minutes, until the vegetables are tender. Add the shrimp, cover the pan and cook for 3 minutes. Add the wine and the remaining parsley and stir until the liquid comes to a bare simmer. Remove from the heat and serve, accompanied by white or yellow rice.

30 (16/20) jumbo shrimp, peeled and deveined
2 teaspoons minced garlic
1/2 cup halved grape tomatoes
1/2 cup diced red onion
2 tablespoons Thai chili paste, or more to taste
Salt and freshly ground black pepper
1 cup grapeseed oil
1 cup vegetable oil
1 loaf baguette or French bread

Steps:

  • Preheat the oven to 400 degrees F. Divide the shrimp among 6 small ramekin dishes and set aside.
  • In a small bowl, mix the garlic, tomatoes, onions, chili paste, and salt and pepper, to taste. Divide the mixture between the 6 ramekin dishes over the shrimp. In a saucepan, over medium-high heat, blend both the oils and heat to 325 degrees F. When the oil reaches the proper temperature, pour it evenly into the ramekin dishes. Bake in the oven until the shrimp turn pink, about 6 to 8 minutes. To finish, slice the bread on a bias, about 1-inch thick. Remove the ramekins from the oven and serve immediately with the bread on the side for dipping.

1 large potato, peeled and cubed
salt and black pepper
3 tablespoons olive oil
2 large onions, thinly sliced
4 tomatoes, peeled and quartered
2 lbs shelled shrimp
1 tablespoon freshly chopped cilantro
8 fluid ounces coconut milk (thin)
3 tablespoons palm oil

Steps:

  • 1. Place the potato and salt in a saucepan, cover with cold water, bring to a boil then reduce the heat and simmer for 20 minutes.
  • 2. Meanwhile, heat the oil in a large frying pan, add the onions and sauté until golden.
  • 3. Add the tomatoes and cook for 5 minutes.
  • 4. Add the prawns, salt, pepper and coriander, mix well then reduce the heat, cover and simmer very gently for 8-10 minutes until the shrimp are done.
  • 5. Drain the cooked potato, return to the pan and mash with a potato masher or fork.
  • 6. Add the coconut milk to the prawns and mix well then and the mashed potato, a little at a time, stirring vigorously until well incorporated.

3 garlic cloves, chopped
1 1/2 teaspoons salt
3/4 teaspoon black pepper
1 (3 1/2-lb) chicken, cut into 8 serving pieces
1/2 lb medium shrimp in shell (21 to 25 per lb), peeled and deveined
1 oz dried shrimp*
1/2 cup salted roasted cocktail peanuts
1/2 cup salted roasted cashews
2 medium onions, chopped
1 green bell pepper, chopped
1 lb fresh tomatoes, chopped
4 bottled red malagueta peppers** or 1- to 2-inch fresh red Thai chiles
1 3/4 cups chicken stock or reduced-sodium chicken broth (14 fl oz)
1 cup well-stirred canned unsweetened coconut milk (8 fl oz)
1/2 cup chopped fresh cilantro
2 tablespoons dendê oil***, optional

Steps:

  • Whisk together 2 tablespoons olive oil, 2 tablespoons lime juice, half of garlic, 1 teaspoon salt, and 1/2 teaspoon pepper in a large bowl. Add chicken and toss to coat, then marinate, chilled, 30 minutes.
  • Whisk together 1 tablespoon olive oil, 1 tablespoon lime juice, remaining garlic, and remaining 1/4 teaspoon pepper in another bowl. Add peeled shrimp and toss to coat, then marinate, covered and chilled, until ready to use (not more than 1 hour).
  • Meanwhile, grind dried shrimp in grinder until very fluffy, about 1 minute. Pulse peanuts and cashews separately, in small batches, in a food processor, until finely ground (do not grind to a paste).
  • Remove chicken from marinade and pat dry. Heat remaining tablespoon olive oil in a 5- to 6-quart wide heavy pot over moderately high heat until hot but not smoking, then, starting skin sides down, brown chicken, in batches if necessary, turning over once, about 6 minutes total per batch, transferring to a large plate. Add onions and bell pepper to pot and sauté, stirring occasionally and scraping up brown bits (from chicken), until onions are golden, 6 to 8 minutes. Add tomatoes and malagueta peppers or Thai chiles and cook, stirring occasionally, until tomatoes begin to break down, about 3 minutes. Stir in stock and bring to a simmer. Add chicken, along with juices accumulated on plate, and simmer, covered, until chicken is cooked through, 25 to 30 minutes.
  • Stir in ground shrimp and ground nuts and return to a simmer. Toss marinated shrimp with remaining 1/2 teaspoon salt and add to stew along with marinade. Simmer until shrimp are just cooked through, 3 to 4 minutes.
  • Stir in coconut milk, cilantro, remaining tablespoon lime juice, and dendê oil (if using).

2 tablespoons Dijon mustard

2 garlic cloves, minced

Steps:

  • In a 12-in. cast-iron or other ovenproof skillet, cook bacon over medium heat until partially cooked but not crisp; drain. Stir in the butter, seafood seasoning, mustard, chili powder, pepper, hot sauce, basil, oregano and thyme. Cook over low heat for 5 minutes. Add garlic; cook 1 minute longer. Remove from heat and stir in shrimp., Bake, uncovered, at 375° until shrimp turn pink, 20-25 minutes, stirring twice.

It is very simple to make and even easier if you prepare the masala a day in advance to save time. Garam masala spice and coconut milk can be found in the Indian section of any major supermarket. Serve this over basmati rice. You will love this!

3 tablespoons vegetable oil
2 medium onions, chopped
1 tablespoon chopped fresh garlic
1 1/2 teaspoons garam masala, spice
1 1/2 teaspoons curry powder
1 1/2 teaspoons coriander
1 teaspoon turmeric
1/2 teaspoon cayenne pepper (or to taste)
1 (28 ounce) can diced tomatoes with juice
1 cup plain yogurt (not low-fat or fat-free yogurt)
2 -4 tablespoons vegetable oil
2 1/2 lbs large shrimp, peeled and deveined
1 (13 ounce) can coconut milk (unsweetened)
1/2 cup chopped cilantro
1/3 cup green onion, chopped
1 1/2 tablespoons lemon juice

Steps:

  • To make the masala: heat oil in a large frypan over medium heat.
  • Add in onions and saute for about 20 minutes until deep golden brown.
  • Add in garlic and all the spices; stir for about 1 minute; cool to lukewarm.
  • Puree the tomatoes with juice and the yogurt in a processor until ALMOST smooth.
  • Add in the onion mixture and puree just enough to combine.
  • Season the masala with salt and pepper.
  • At this point you can cover and refrigerate overnight.
  • To make the shrimp: heat oil in a large skillet over medium heat.
  • Add in shrimp and saute until partially cooked (about 2 minutes).
  • Stir in coconut milk, cilantro, green onions, lemon juice and prepared marsala; simmer for about 2-3 minutes or until the shrimp is opaque in the center, stirring with a wooden spoon.
  • Season with salt and pepper.
  • Serve over basmati rice.
