1/2 teaspoon salt
1/2 teaspoon cayenne pepper
1/4 teaspoon ground cinnamon
2 large sweet potatoes (about 1-3/4 pounds), peeled and cut into 1-inch cubes
1 pound bacon strips, halved
1/4 cup packed brown sugar
Maple syrup, warmed

Steps:

  • Preheat oven to 350°. In a large bowl, mix butter and seasonings. Add sweet potatoes and toss to coat., Wrap 1 piece bacon around each sweet potato cube; secure with a toothpick. Sprinkle with brown sugar. Place on a parchment-lined 15x10x1-in. baking pan., Bake until bacon is crisp and sweet potato is tender, 40-45 minutes. Serve with maple syrup.

3 pounds sweet potatoes, scrubbed
4 tablespoons unsalted butter
Kosher salt
1/2 teaspoon ground cinnamon
Large pinch ground allspice
Large pinch cayenne pepper
1/4 cup pecans, very finely chopped
2 scallions, thinly sliced

Steps:

  • Preheat the oven to 425 degrees F. Roast the potatoes on a rimmed baking sheet until soft and tender, about 1 hour. Let cool for a few minutes, then use paper towels or a kitchen towel to help remove the skins.
  • Process the sweet potato meat, butter, 1 1/2 teaspoons salt, cinnamon, allspice and cayenne in a food processor until smooth. Let cool to room temperature. Transfer to an airtight, microwave-safe container, label and date, and freeze for up to 2 weeks.
  • To serve, reheat in the microwave, stirring often. Transfer to a serving dish, and top with the pecans and scallions.

8 slices bacon
1 large onion, chopped (3/4 cup)
1/4 cup half-and-half, warmed
1 teaspoon chopped fresh thyme leaves
1/2 teaspoon salt
1/4 teaspoon pepper
Fresh thyme sprigs, if desired

Steps:

  • Heat oven to 350°F. Pierce sweet potatoes all over with fork; place on cookie sheet with sides. Bake about 1 hour 15 minutes or until tender when pierced with fork. Let stand 15 minutes or until cool enough to handle.
  • Meanwhile, in 10-inch skillet, cook bacon over medium-high heat 4 minutes, turning occasionally, until brown. Remove bacon from skillet; place on paper towels to drain. Reserve 1 tablespoon drippings in skillet; discard remaining drippings. Add onion to skillet; cook over medium heat 5 to 8 minutes, stirring occasionally, until softened.
  • Peel sweet potatoes; place in large bowl. Mash until no lumps remain. Add warm half-and-half, thyme, salt and pepper; mash until very smooth.
  • Add onion to sweet potatoes. Crumble bacon; reserve 2 tablespoons for garnish. Add remaining bacon to potatoes; stir until blended. Garnish with reserved bacon and thyme sprigs.

3 pounds sweet potatoes (4 to 5 medium)
3 slices bacon, chopped
1 tablespoon bourbon or apple cider
1/2 cup heavy cream, warmed
6 tablespoons cold salted butter, cut into pieces
3 tablespoons maple syrup, plus more for drizzling
Kosher salt

Steps:

  • Preheat the oven to 400 degrees F. Pierce the potatoes all over with a fork and place on a baking sheet. Bake until completely soft, about 45 minutes. Let cool slightly. Split the potatoes in half, scoop out the flesh into a medium bowl and set aside. Discard the skins.
  • Cook the bacon in a large saucepan over medium heat, stirring, until crisp, 8 to 9 minutes. Remove with a slotted spoon to a paper towel¿lined plate. Add the bourbon or cider to the drippings in the saucepan and cook until mostly evaporated, about 30 seconds. Add the potatoes, heavy cream, butter, maple syrup and 1 1/2 teaspoons salt; mash with a potato masher until smooth and warmed through.

I LOVE sweet potatoes, but I am not a fan of the usual sweet, syrupy preparation. This recipe brings out the true taste of sweet potatoes, with a little sweet and savory kick. Hope you enjoy!! Prep time does not include time to cook the bacon.

3 large sweet potatoes, peeled and diced
4 ounces bacon, cooked crisp and crumbled
2 tablespoons butter or 2 tablespoons margarine
1/4 cup granulated sugar
1/4 cup milk
1/2 teaspoon garlic powder
salt & fresh ground pepper

Steps:

  • Cook sweet potatoes in boiling water in large pot until fork tender.
  • Drain and add back to pot.
  • Add bacon, butter or margarine, sugar, milk, and garlic powder.
  • Season with salt and pepper.
  • You can mash potatoes with a hand-held masher or whip with electric mixer (I use mixer).
  • Depends on how smooth you like them.
  • These are wonderful served with pork chops and gravy!

4 large sweet potatoes, scrubbed
Kosher salt and freshly ground black pepper
2 cups heavy cream
2 bay leaves
1/2 teaspoon ground cinnamon
Pinch freshly grated nutmeg
1/2 orange, zested
2 tablespoons brown sugar
1 tablespoon unsalted butter

Steps:

  • Preheat the oven to 350 degrees F.
  • Prick the sweet potatoes all over with a fork, drizzle with olive oil and season with salt and pepper. Put them in a roasting pan and roast for 45 minutes until they are very soft. Remove the pan from the oven.
  • In a small sauce pot, over low heat, heat the cream with the bay leaves, then keep warm until ready to puree potatoes. Discard the bay leaves before adding to potatoes.
  • When the potatoes are cool enough to handle, scoop the flesh into the bowl of a food processor. Season with salt, cinnamon, nutmeg, orange zest, and brown sugar. Add cream and 1 tablespoon of butter and puree until super smooth.

4 pounds sweet potatoes, peeled and cut in 1-inch chunks
2 tablespoons olive oil
1 teaspoon salt
½ teaspoon ground black pepper
5 slices smoked bacon, chopped
1 pound onions, thinly sliced
1 cup pure maple syrup
2 teaspoons fresh thyme

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Toss the sweet potato chunks, olive oil, salt, and black pepper in a large bowl, and spread the sweet potatoes out onto a large rimmed baking sheet.
  • Roast in the preheated oven until browned and tender, about 40 minutes; stir after the first 20 minutes.
  • Cook the bacon until crisp and brown in a large skillet over medium heat, about 10 minutes; transfer bacon to a bowl, but leave the grease in the skillet. Cook the onions in the bacon grease until browned, about 10 minutes, stirring frequently. Reduce heat to low, and cook the onions until very soft, brown, and sweet, another 10 to 15 minutes. If you’re waiting a bit to serve them, heat the oven to 325 degrees F and top the potatoes with the bacon. Bake them for 25 to 30 minutes, then remove them from the oven and crumble the sage over top.
