MY CANADIAN BACON PIZZA
We were watching the baseball game and decided on pizza. This is what I came up with and DH thought it was very good and I should share. So here it is. Please feel free to add more or less of the ingredients to suit your tastes.

Steps:
- Preheat oven to 400 degrees.
- Spread dough on large greased cookie sheet.
- Drain artichoke hearts reserving some of the marinade. Set hearts aside.
- Brush crust with some of the reserved marinade.
- Brush on garlic.
- Sprinkle mozzarella cheese over crust.
- Bake 5 minutes.
- Remove crust and spoon on sauce to your desire of thickness.
- Add artichokes, bacon, tomatoes, and onion.
- Sprinkle as much feta cheese over pizza as desired.
- Sprinkle basil over crust.
- Bake 10 to 12 minutes longer or until crust is baked to your choosing.
- Cut into squares.

- Preheat oven to 450°F Place the unbaked pizza crust on an ungreased nonstick pizza pan.
- Spread the pizza sauce over the crust, leaving a 1-inch border around the rim.
- Sprinkle with half of the cheese.

- Top with mushroom slices and bell pepper rings.

THREE-CHEESE BACON PIZZA

- Put a pizza stone or inverted baking sheet on the lowest oven rack and preheat to 475 degrees F for at least 15 minutes. Meanwhile, roll out the dough into a 9-inch round on a lightly floured surface. Lightly dust a pizza peel or another inverted baking sheet with flour; lay the round of dough on top and set aside. Cook the bacon in a large skillet over medium heat, stirring, until crisp, about 6 minutes. Remove with a slotted spoon and drain on paper towels. Combine the tomato sauce, olive oil, garlic and oregano in a medium bowl; season with salt and pepper. Slide the dough directly onto the hot stone or baking sheet and bake until lightly golden and puffy, about 7 minutes. Remove from the oven and let cool slightly, then carefully slice the crust in half horizontally with a serrated knife to make 2 thin crusts. Turn the crusts cut-side up. Spread with the sauce mixture, then top evenly with the mozzarella, cheddar and bacon. Slide the pizzas back onto the hot stone or baking sheet; bake until the cheese melts and the crust is golden, about 8 more minutes. Sprinkle with the parmesan.
POTATO AND BACON PIZZA

- Freeze the bacon on a plate until firm, 20 to 30 minutes (this will make it easier to chop). Dice the bacon and set aside.
- Meanwhile, place a pizza stone or inverted baking sheet in the top third of the oven and preheat to 475 degrees F. Brush a large piece of parchment paper with 2 tablespoons olive oil. Stretch the pizza dough into an 11-by-15-inch rectangle on the parchment. Transfer the dough (on the parchment) to a pizza peel or another inverted baking sheet; set aside.
- Peel and very thinly slice the potatoes with a mandoline or knife and place in a large microwave-safe bowl. Cover with plastic wrap and microwave until tender, 3 to 4 minutes. Uncover and toss the potatoes with the remaining 2 tablespoons olive oil, 1 teaspoon salt and a few grinds of pepper until fully coated.
- Spread the potatoes all over the pizza dough, with a slightly thinner layer in the center. Top with the bacon. Slide the pizza (on the parchment) onto the hot pizza stone and bake until the crust is golden and the potatoes are tender and crisp around the edges, 30 to 35 minutes. Remove from the oven and dot with the cheese, then return to the oven and continue baking until the cheese just melts, 1 to 2 minutes. Sprinkle with chives.

- 1. To make the dough, pour the water into a large bowl or the bowl of an electric mixer. Mix in the yeast and 1 cup of the flour, mix, then let sit at room temperature until the mixture begins to bubble, about 30 minutes. Add the salt, stir, then add an additional cup of flour. The dough should be quite soft. Cover and let sit at room temperature until the dough has doubled in bulk, about 1-1/2 hours.
