4 pieces thick-cut bacon, diced
2 tablespoons minced shallots
Extra-virgin olive oil, as needed
1/4 cup red wine vinegar, plus more for poaching eggs, optional
2 teaspoons Dijon mustard
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
4 eggs
8 cups frisee lettuce
2 tablespoons minced fresh chives

Steps:

  • In a medium skillet over medium heat, saute the bacon until crisp. Use a slotted spoon to transfer the bacon to a paper towel-lined plate. Turn the heat off and whisk the shallots into the bacon grease. There should be about 1/4 cup of bacon grease; if it's shy of that amount, add some extra-virgin olive oil.
  • In a small bowl, whisk the vinegar and Dijon until emulsified. Add in the bacon grease mixture and whisk. Whisk in the salt and pepper.
  • To poach the eggs: Fill a nonstick skillet with about 2 inches of water and bring it to the barest simmer over medium heat; add a little vinegar if using. Crack the eggs, slipping them gently into the water one at a time, and cook until the whites are set but the yolks are still runny, 3 to 4 minutes. Using a slotted spoon, gently scoop the eggs from the water and blot dry with a paper towel.
  • In a large salad bowl, toss the frisee with the dressing and bacon. Divide the lettuce among 4 serving bowls and top each with an egg and a sprinkle of chives.

2 hard-boiled eggs
6 cups tightly packed frisee
4 slices OSCAR MAYER Bacon, cooked, crumbled
3 Tbsp. red wine vinegar
1 Tbsp. GREY POUPON Dijon Mustard
1 tsp. minced garlic
1/4 cup grated Parmesan cheese

Steps:

  • Heat oven to 450°F.
  • Toss potatoes with 1 Tbsp. oil; spread onto rimmed baking sheet.
  • Bake 18 to 20 min. or until potatoes are tender and golden brown; cool 10 min.
  • Meanwhile, use back of spoon to press eggs through fine-mesh strainer into small bowl.
  • Toss frisee with bacon and potatoes in large bowl.
  • Whisk vinegar, mustard and garlic in medium bowl until blended. Gradually add remaining oil, whisking constantly after each addition. Add to frisee mixture; mix lightly.
  • Top with cheese and egg.

A classic cheese souffle baked in a large ramekin that's perfect for two. Serve with a simple frisee salad dressed with a champagne vinaigrette and crispy bacon lardons.

2 tablespoons unsalted butter
1/3 cup finely grated Parmesan
3/4 cup whole milk
2 sprigs fresh thyme
1 bay leaf
3 tablespoons all-purpose flour
2 large egg whites
Pinch cayenne pepper
Kosher salt and freshly ground black pepper
Pinch cream of tartar
1/3 cup grated Gruyere
4 ounces slab bacon, cut into 1/4-inch lardons
1/2 large shallot, minced
1 tablespoon champagne vinegar
1 teaspoon Dijon mustard
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 small head frisee, cut into bite-size pieces (about 2 cups)
2 small radishes, thinly sliced

Steps:

  • Position a rack in the middle of the oven and preheat to 375 degrees F. Butter the bottom and sides of a 12- to 14-ounce ramekin and sprinkle with Parmesan to lightly coat, tapping out any excess. Refrigerate the prepared ramekin until you're ready to bake the souffle.
  • For the Gruyere souffle: Combine the milk, thyme and bay leaf in a small saucepan and bring to a simmer over medium-high heat. Once the mixture is just simmering, remove the pan from the heat.
  • Melt the butter in a medium saucepan over low heat. Add the flour and whisk constantly until the mixture lightens and foams, about 2 minutes (this is your roux). Whisk in the warm milk, bring to a boil and cook, whisking constantly, until the mixture thickens, about 1 minute. Remove the herbs, take the pot off the heat and whisk to cool slightly.
  • Transfer the mixture to a large bowl. Stir in the egg yolk, Parmesan, cayenne and a heavy pinch of kosher salt and pepper.
  • Slowly whisk the egg whites and cream of tartar in a very clean bowl with an electric mixer on medium speed until foamy, about 1 minute. (Alternatively, use a stand mixer fitted with the whisk attachment.) Increase the speed to medium-high and whip until the whites hold a soft peak, about 2 minutes. Quickly but gently fold the whites into the flour mixture with a rubber spatula in 3 additions until just streaky. Scatter the Gruyere over the top and fold the batter together, taking care not to overmix.
  • Spoon the batter into the prepared ramekin. Place the ramekin on a baking sheet and bake until golden, puffed and just set in the center, 35 to 40 minutes. Note: Once you place the souffle in the oven, do not open the door! The steady, high heat will allow the souffle to rise. If you open the door it may fall.
  • For the frisee salad: Meanwhile, cook the bacon in a small nonstick skillet over medium-high heat, stirring occasionally, until well browned and crisp, about 4 minutes. Transfer with a slotted spoon to a paper towel-lined plate to drain.
  • Whisk the shallot, vinegar, Dijon and some salt and pepper in a medium bowl until combined. Slowly whisk in the oil until smooth and emulsified. Add the frisee, radishes and bacon and toss until well coated. Taste and adjust the seasoning with more salt and pepper. Serve the souffle immediately after removing from the oven with the salad.

Sea salt and freshly ground black pepper
4 eggs
8 slices thick-cut bacon, cut into 1/2-inch pieces
2 shallots, thinly sliced
5 tablespoons extra-virgin olive oil, plus more for drizzling
1 tablespoon Dijon mustard
2 tablespoons red wine vinegar
1/2 lemon, juiced
2 tablespoons chopped chives, plus more for garnish
1 large head frisee lettuce, torn into bite size pieces

Steps:

  • Fill a large skillet with water, bring it to a boil, and add the vinegar and a large pinch of salt. Reduce the heat until the water is just barely bubbling. Crack each egg into a small bowl and carefully slide the egg into the water. Cook until the eggs are set, about 3 1/2 to 4 minutes. Remove the eggs with a slotted spoon and dab the bottom with paper towels to dry them off; set aside and keep warm.
  • Put the bacon and shallots into a cold skillet with a tablespoon of olive oil and cook over medium heat until the bacon is browned and crisp; be careful not to let it burn. Remove with a slotted spoon, drain on paper towels, and set aside. Meanwhile, get a jar with a tight fitting lid. Add the mustard, remaining 4 tablespoons olive oil, red wine vinegar, and lemon juice. Shake well to combine the ingredients, add the chives, taste, and season with salt and pepper.
  • Put the frisee into a large bowl and toss it with the dressing the cooked bacon and shallots. To serve, place a large mound of salad onto a plate and top with a poached egg. Garnish with some chives and a drizzle of olive oil.

Pan-Seared Asparagus Salad With Frisée and Fried Egg image

Here is a fine variation on the old combination of egg and asparagus. It is a twist on the bistro staple, frisée aux lardons, with pan-fried asparagus standing in for the bacon lardons. It's mixed with the frisée and a pungent garlic vinaigrette laced with a little anchovy. Then, in place of the usual poached egg nestled in curling frisée leaves, fry an egg until the edges are crisp and brown. This adds a vaguely baconlike nuance to the salad, without the meat.

  • Mash the garlic and a pinch of salt into a paste with the side of a knife. Mix it in a small bowl with the anchovy, lemon juice and 2 tablespoons oil.
  • Place a large skillet over medium-high heat for 20 seconds. Add 3 tablespoons oil. When it shimmers, add the asparagus. Toss occasionally until golden brown and almost tender, 2 to 3 minutes. Add a pinch of salt and cook until tender, 1 to 2 minutes longer. Transfer to a large bowl; add the frisée and the garlic-anchovy dressing and toss gently.
  • Return skillet to medium heat and add the remaining 1 tablespoon oil. Crack in the eggs; season lightly with salt and pepper. Cook until the eggs are just set, about 3 minutes.
  • Divide the salad between two serving plates. Top each with an egg.

Steps:

  • Make cups:
  • Preheat oven to 375°F.
  • Cover stack of phyllo with 2 overlapping sheets of plastic wrap and a dampened kitchen towel. Put 1 phyllo sheet on a work surface and brush with some butter, then top with 2 more sheets of phyllo, brushing each with butter.
  • Cut buttered stack into 6 (4 1/2-inch) squares with a sharp knife, trimming sides as needed. Line each of 6 muffin cups with a square. Make 6 more phyllo cups (4 are extra, in case of breakage) in same manner with remaining pastry sheets and butter.
  • Bake cups in middle of oven until golden, about 8 minutes, then cool completely in pan on a rack.
  • Make filling:
  • Increase oven temperature to 400°F.
  • While cups are cooling, melt butter in a 3-quart heavy saucepan over moderately low heat, then whisk in flour. Cook roux, whisking, 3 minutes. Add milk in a stream, whisking, and bringto a boil, whisking. Reduce heat and simmer, whisking occasionally, 5 minutes. Remove from heat and whisk in mustard, yolks, and 1/4 cup Parmigiano-Reggiano until combined, then fold in goat cheese. (Cover surface of mixture with wax paper if not using immediately.)
  • Beat egg whites in a large bowl with an electric mixer until they just hold stiff peaks. Fold one third of whites into sauce to lighten, then fold in remaining whites gently but thoroughly.
  • Spoon batter into 8 phyllo cups and sprinkle with remaining Parmigiano-Reggiano. Bake in middle of oven until soufflés are puffed and golden, about 15 minutes.
  • Make salad while soufflés bake:
  • Whisk together vinegar, mustard, and salt in a bowl, then add oil in a slow stream, whisking until emulsified.
  • Just before soufflés are ready, toss frisée and radishes in a large bowl with just enough dressing to coat. Mound salad onto 8 plates and sprinkle with chives, then make a small nest in center of each.
  • Place a soufflé cup in each salad and serve immediately.

Frisee, tossed with tomato vinaigrette, makes a light salad and an attractive bed for egg souffles.

4 large egg yolks
3 tablespoons finely chopped assorted fresh herbs such as parsley, chives, and tarragon
3 tablespoons freshly grated Parmesan
1/2 teaspoon salt
1/8 teaspoon freshly ground pepper
9 large egg whites
8 ounces frisee or other lettuce
18 red and yellow cherry tomatoes (about 10 ounces), cut in half
Tomato Vinaigrette
Olive-oil cooking spray

Steps:

  • Heat oven to 350 degrees, and place the rack in the center. Spray six 6-ounce Pyrex custard cups or ramekins with cooking spray, and place, spaced evenly apart, in a 9-by-13-inch baking pan. Fill a pot with water, and bring to a boil. Meanwhile, in a medium mixing bowl, whisk together the egg yolks, 1 tablespoon of cool water, herbs, Parmesan, salt, and pepper.
  • Beat the nine whites in the bowl of an electric mixer until soft peaks form. Stir one quarter of the whites into the yolk mixture. Gently fold in the remaining whites.
  • Use a spoon to fill each ramekin with the egg mixture. Pour the boiling water into the baking pan to fill one inch. Transfer pan to the oven to bake until the tops of souffles are golden brown, about 25 minutes.
  • Just before the eggs are done, toss the frisee and the tomatoes with the tomato vinaigrette, and arrange the salad on six plates. Remove the souffles from the oven, run a knife around edge of each ramekin, remove the souffle, and place on top of the salad. Serve immediately.
