- Flatten to 1/4-in. thickness. Top each with two strips bacon, 1/4 cup feta cheese and a red pepper half; sprinkle with salt and pepper. Roll up starting with short side, bringing the ends to meet. Tie at 1-1/2-in. intervals with kitchen string. , In a large skillet over medium heat, brown chicken in oil on all sides. Transfer to an ungreased 8-in. square baking dish. Sprinkle with Italian seasoning. , Bake, uncovered, at 350° for 35-40 minutes or until chicken is no longer pink. Remove string.

Steps:
- Prep the chicken: Cut the chicken into 8 pieces and pound the pieces until they are thin (for quick cooking) and have expanded in surface area (for more filling). Place the breadcrumbs in a shallow bowl with 2 tablespoons of Parmesan cheese and set aside.
- Prep the filling: Chop the spinach and saute it with the garlic and just a drizzle of olive oil for 2-3 minutes or until just barely wilted. Combine the sauteed spinach with the ricotta, Parmesan cheese, and 2-3 tablespoons of the egg whites. Place the remaining egg whites in a separate shallow bowl and set aside.
- Assemble the chicken: Oil the bottom of a large baking dish and preheat the oven to 450 degrees. Place one piece of chicken on a flat working surface. Put a spoonful of ricotta-spinach filling right in the middle and roll the chicken up so that the edges meet to form a "seam". Dip the entire chicken roll in egg whites, and then roll it in the breadcrumbs. Place in a baking dish, seam side down. Repeat for the remaining 7 pieces of chicken. Bake for 25 minutes.
- Finishing touches: After 25 minutes, the chicken should be cooked through (white on the inside) and browned on the top. Cover the chicken with the marinara sauce and slices of fresh Mozzarella. Bake for another 3-5 minutes or until cheese is melting. Sprinkle with fresh basil.

- Carefully cut a slit in the deepest part of each chicken breast. Fill with bacon and cheese; secure with toothpicks. Sprinkle with salt and pepper. This REALLY is the most delicious bread roll i have tasted in my life! So tasty and tender! They are the best when they are just out of the oven,still warm! It is Delicious crusty rolls flavoured with cheese and roasted red peppers, and topped with crunchy pumpkin seeds! Great for freezing - to re-heat, simply wrap in foil and pop in a pre-heated oven. Perfect served warm with soups and salads!

- Oven temperature: 190°C/375°F/Gas Mark 5.
- Place the oat bran, flour, bicarbonate of soda, cream of tartar and salt in a large bowl and stir to combine.
- Stir in most of the grated cheese, 2tbsp of the pumpkin seeds and the chopped peppers.
- Add the olive oil and milk and mix together to form a soft dough.
- Divide the dough into 6-8 pieces and shape into rough rounds, approx 1inch deep.
- Place on a baking tray, top each roll with the remaining cheese and pumpkin seeds and bake in a pre-heated oven for approx 20-30 minutes until golden brown and cheese is bubbling.
- Allow to cool slightly on a wire rack.

- Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate. Let cool, then crumble into small pieces.
- Mix bacon and feta together in small bowl.
- Cut a 2 to 3 inch slit lengthwise in the side of the chicken breast creating a pocket, and fill with mixture. Secure shut with toothpicks.

- Preheat oven to 350°F.
- In bowl mix chicken, cheese, chilies, chili powder and garlic powder.
- Unfold dough.
- Remove 1 dough sheet leaving remaining dough covered with plastic.
- Brush with margarine.
- Repeat with 3 more sheets, stacking each on the top of the previous sheet.
- Cut stack in half crosswise into 2 rectangles.
- Place about 1 cup chicken mixture on long edge of each rectangle.

- Lay each chicken piece on a large rectangle of plastic wrap; fold plastic over, begin pounding with kitchen mallet, until meat is about 1/4-inch thick; remove plastic.
