CHEESY BACON SPINACH DIP
The best and cheesiest, creamiest dip you will ever have - after all, you just can't go wrong with bacon!

- Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate. Preheat oven to 400 degrees F. Lightly oil a 9-inch baking dish or coat with nonstick spray. In a large bowl, combine cream cheese, sour cream, Parmesan, mayonnaise and Worcestershire. Stir in bacon, spinach, 1/2 cup mozzarella cheese and 1/2 cup cheddar cheese; season with salt and pepper, to taste. Spread bacon mixture into the prepared baking dish; sprinkle with remaining 1/2 cup cheeses. Place into oven and bake until bubbly and golden, about 20-25 minutes. Serve immediately, garnished with bacon and parsley, if desired.

Steps:
- Heat oven to 350ºF.
- Cook and stir bacon in large skillet until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Discard all but 1 Tbsp. drippings from skillet.
- Add onions to reserved drippings; cook and stir 4 to 5 min. or until crisp-tender. Add corn and spinach; cook 2 to 3 min. or just until spinach is wilted. Add cream cheese and milk; cook and stir 3 min. or until cream cheese is completely melted. Remove from heat. Stir in Parmesan, mozzarella and bacon.
- Spread onto bottom of 9-inch pie plate sprayed with cooking spray.
- Bakes 20 to 25 min. or until heated through.

- In a large saute pan, melt the bacon grease over medium heat. Add the onion and garlic and stir to cook until the onions are very soft, about 5 minutes. Add the vinegar, crushed red pepper flakes, salt and pepper and stir; add the spinach and toss it around, cooking until it's just wilted, 1 to 2 minutes. Serve immediately so the spinach is wilted but not soggy.

- Preheat the oven to 425 degrees F. Toss the bacon with the brown sugar in a medium bowl until evenly coated. Arrange the bacon on a baking sheet and bake until light golden around the edges but still very soft, about 7 minutes. Transfer to a plate. Wipe the baking sheet clean, then spray with cooking spray.
- Stir together the spinach, cream cheese, Parmesan, mayonnaise, garlic and 1/4 teaspoon pepper in a medium bowl.
- Spoon 1 tablespoon of the spinach mixture onto each slice of bread and wrap it with a piece of bacon so that the ends are tucked under the bread (it should look a bit like a belt). Arrange the crostini on the prepared baking sheet and bake until the bacon is dark golden, about 15 minutes. These are best served warm.

- Brown and crumble a one pound package of bacon.
- Thaw and squeeze dry a 10oz package of spinach.
- Shred and squeeze dry two onions.
- Soften the three 8oz packages of cream cheese by bringing up to room temperature.
- Shred the parmesan and asiago cheeses.
- Combine all of the above ingredients with one half cup of mayonnaise.
- Bake at 350 degrees for 20-30 minutes, until lightly browned on top and bubbly in the middle.

- Grill bacon until well-cooked, but not crispy. If you do this on a rack above an oven tray, much of the fat will drip away. The time will vary according to the type of bacon. Cool bacon for a few minutes, then chop into very small pieces.
- Microwave frozen spinach according to directions on the package. Drain any liquid.
- In a medium sized bowl, mix all the ingredients together until well-blended, then transfer to a nice serving bowl.
- Cover with glad wrap and cool in the fridge. If you can prepare this a few hours ahead of time, the flavours will intensify, but it is fine straight away.

- Preheat oven to 350 degrees. In a medium saucepan, cook bacon over medium, stirring occasionally, until browned and crisp, 10 minutes. Drain bacon on paper towels.
