BACON DEVILED EGGS
Steps:
- Mash 6 hard-boiled egg yolks, 2 tablespoons mayonnaise or yogurt, 1 1/2 teaspoons spicy mustard, 1/2 teaspoon lemon juice, 1 teaspoon relish and 1/2 teaspoon paprika. Fill the egg whites with the yolk mixture. Top with chopped chives and crumbled cooked bacon.

Steps:
- Cut eggs in half.
- Arrange egg whites cut side up on a serving plate and put the yolks in a small mixing bowl.
- Mash yolks with a fork then stir in mayonnaise, mustard, vinegar, chipotle chile, and garlic powder. Mash and stir all ingredients together well.
- Stir in chopped bacon, reserving some pieces to garnish the top of the eggs if desired. Taste and add salt if necessary. (I found that these were salty enough with the bacon added, but it depends on your taste.)
- Spoon some of the filling into each egg white half, dividing the mixture as evenly as possible between the eggs. Sprinkle eggs with smoked paprika and garnish with bacon pieces.
- Serve immediately or refrigerate until ready to serve.

Steps:
- Cut the cooked, peeled eggs in half.
- Gently remove yolks with a spoon.
- Add the yolks to a large bowl and set aside.
- Arrange the egg whites on a serving dish with the cut side up.
- Mash the yolks with the mayonnaise and the mustard until they are smooth and creamy..
- Mix in the chipotle, the bacon, and 1 tablespoon of the bacon fat.
- Taste and add more chipotle, salt, or mustard if needed. Be careful, the chipotle will get spicier as the eggs stand.
- Fill the hollows in the egg whites with the yolk mixture.
- Sprinkle with smoked paprika.
- Garnish with a piece of bacon and some chives
- Chill until serving.

These are always the first thing to go at our family gatherings :) No matter how many times I've made these, I ALWAYS have to look up how to hard-boil an egg, LOL so I'm including that part in the directions for future reference.

Steps:
- Put eggs in a saucepan and cover them with water until waterline is about 1" above eggs. Heavily salt the water (I don't know why, but my Dad says it makes the peeling process easier and it seems to work). Bring water to a boil, then reduce heat to a simmer. Set time for 15-mins.
- When timer goes off, drain off hot water and run cold water over eggs in pan.
- When eggs are completely cooled, crack and carefully peel eggs running them under cold water. Pat dry. Cut in eggs in half, carefully removing yolks, and set aside white halves. Put yolks in a bowl and mash with a fork.
- Add mayonnaise, sour cream, chipotle and adobo sauce to yolk mixture and mix together with fork to form a smooth paste, then stir in onion until well combined.
- Season to taste with garlic salt, pepper, and sea salt.
- Scoop about 1 tbsp of the yolk filling into each white halve. Cover and refrigerate until chilled.
- Sprinkle deviled eggs with bacon crumbs.
- Enjoy!

CHIPOTLE DEVILED EGGS
I really learned to appreciate Chipotles in adobo sauce during the ZWTII. I found this recipe in Bon Appetite Oct. 2006. It's a great take on your typical deviled eggs. Here's a "grate" trick I learned for grating the egg yolks...get a fine mesh sieve (not the very very finest, but a "regular" fine), put the yolks in the sieve and push through the sieve with a spatula. As the yolk pushes through, scrape the bottom of the sieve...continue until all the yolk is pushed through. Gently stir in rest of ingredients. It really made a difference! Enjoy!

- Peel eggs and cut in half lengthwise.
- Spoon yolks into small bowl; arrange whites on platter.
- Finely grate yolks on small holes of box grater into medium bowl.
- Mix in mayonnaise, then 2 teaspoon chipotle chiles.
- Add more chopped chiles, if desired, for more heat.
- Season filling to taste with salt, if desired.
- Using pastry bag fitted with 1/2 inch diameter star tip, pipe filling into egg whites.
- Cover and chill eggs at least 2 hours and up to 1 day.
- Press 1 cilantro leaf into filling in each egg and serve.
