A tasty alternative to beef! Fresh bison, mixed with a one-step Italian seasoning and a few other ingredients grilled up to perfection and topped with thick-cut bacon and Cheddar cheese! Add purple onion slices. A hearty burger that will likely please any hungry appetite! This recipe is great with fries or any kind of salad.

1 pound ground bison
1 egg
¼ cup crushed crackers, or more as needed
2 tablespoons Italian seasoning (such as Club House® Italiano)
1 ½ teaspoons Worcestershire sauce
1 pinch garlic salt
1 pinch ground black pepper
1 pinch coarse salt
1 teaspoon barbeque sauce
8 slices cooked thick bacon
4 slices Cheddar cheese
4 burger buns
4 leaves green leaf lettuce

Steps:

  • Combine ground bison, egg, crushed crackers, Italian seasoning, Worcestershire sauce, garlic salt, black pepper, and coarse salt in a large bowl. Use your hands to form mixture into 4 large burger patties. Place on a plate lined with waxed paper and refrigerate until ready to cook.
  • Preheat grill for medium-high heat and lightly oil the grate.
  • Grill burgers for 2 minutes. Flip and brush with barbeque sauce. Flip again and cook until burgers are no longer pink in the center, about 8 minutes total. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
  • Turn off the grill. Add 2 slices cooked bacon and 1 slice Cheddar cheese to each burger; close lid and let cheese melt, about 1 minute. Transfer burgers to buns and top each with 1 lettuce leaf.

1/2 cup shredded cheddar cheese
1/2 cup crumbled cooked bacon
1 envelope onion soup mix
2 pounds ground beef
8 hamburger buns, split
Lettuce leaves and tomato slices, optional

Steps:

  • In a large bowl, combine the cheese, bacon and soup mix. Crumble beef over mixture and mix well. Shape into eight patties., Grill burgers, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 160° and juices run clear. Serve on buns with lettuce and tomato if desired.

The original recipe is from the Wisconsin Milk Marketing Board but has been altered some. Other stuffing suggestions are salsa and pepper jack, blue cheese and sauteed red onion, mushroom and swiss (yum!), feta and olives, or smoked provolone and roasted red peppers.

2 lbs ground beef (I use venison)
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon garlic powder
1/4 cup onion, minced fine
9 -10 slices bacon
8 ounces cheddar cheese, shredded
6 hamburger buns

Steps:

  • Fry bacon until crisp; crumble.
  • Combine beef, salt, pepper, garlic powder and onion and shape into 12 large, thin patties.
  • Top six patties with 1 tablespoon bacon and 1 tablespoon cheese (this is approximate-use what looks right).
  • Place remaining 6 patties on top of cheese/bacon topped patties and press edges to seal.
  • Grill or broil for 3-4 minutes per side until done. We like ours well done.
  • The last 2 minutes of cooking top patties with remaining bacon and cheese.
  • Serve on buns.

3 cups sliced onions (about 2)
3/4 cup Cabernet Sauvignon or other dry red wine
1 pound ground bison (buffalo)
2 tablespoons chopped shallots
1/4 teaspoon coarse kosher salt
1/4 teaspoon dried thyme
4 organic hamburger buns
6 ounces sliced Wisconsin white cheddar cheese
Dijon mustard
1 small head of escarole, leaves separated

Steps:

  • Heat 1 tablespoon oil in heavy medium skillet over medium- high heat. Add onions, sprinkle with salt, and sauté until tender and golden brown, stirring often, about 10 minutes. Reduce heat to medium and continue to sauté until very tender and well browned, about 15 minutes longer. Add wine and cook, stirring occasionally, until liquid is absorbed, about 5 minutes. DO AHEAD: Can be made 3 days ahead. Cool, cover, and chill.
  • Preheat broiler. Gently mix meat and next 3 ingredients in large bowl. Shape into four 1/2-inch-thick patties. Heat remaining 1 tablespoon oil in heavy large skillet over high heat. Sprinkle burgers with salt and pepper; add to skillet. Cook until well browned, about 2 minutes per side for medium-rare.
  • Open buns and arrange, cut side up, on rimmed baking sheet. Place cheese slices on bun tops. Broil until cheese melts and bottom halves are lightly toasted, about 1 minute. Spread bottom halves with mustard. Top each with a few escarole leaves, then burger. Spoon onions atop burgers, dividing equally. Cover with bun tops; press lightly.

1 lb ground beef
1 cup shredded sharp cheddar cheese
12 slices cooked bacon
4 ounces fresh mushrooms
4 hamburger buns
1 cup ranch salad dressing (optional)

Steps:

  • Combine ground beef, cheddar cheese, and 4 crumbled slices of the bacon into a bowl. Mix together lightly. Form the meat mixture into balls and gently flatten into patties of desired thickness.
  • Lightly grease a frying pan with olive (or vegetable) oil and place the patties into the pan. Cook both sides until the patties are golden brown
  • Take the cooked patties out of the pan and place on a plate with paper towels to drain the grease. Place the chopped mushrooms into the warm pan and fry them until they are golden brown.
  • Toast your hamburger buns on medium heat in the toaster oven or place on grill. Then, spread ranch dressing on one side of the bun. Take the drained patties and place on the bun. Place 2 slices of the cooked bacon on top of the burger, along with the fried mushrooms. You can also top with additional cheese if desired.

1 1/2 lbs lean hamburger
1 (1 ounce) packet hidden valley ranch dressing mix
6 tablespoons barbecue sauce, more if needed and see note
1/2 lb bacon
1 teaspoon fresh coarse ground black pepper
3 slices marbled cheddar cheese
1 onion, thinly sliced
6 lettuce leaves
3 slices tomatoes
3 tablespoons mayonnaise
3 tablespoons prepared creamy ranch salad dressing
3 hamburger buns, lightly toasted

Steps:

  • In bowl, mix together the hamburger and dressing mix packet well.
  • Shape into 3 patties, set in fridge to chill and firm up.
  • Meanwhile, in large frying pan, cook bacon sprinkling with the pepper on both sides, drain grease saving 1-2 Tbl.
  • Set bacon aside wrapped in paper towel.
  • Fry hamburgers in same pan with a little bacon grease til done.
  • Coat with bbq sauce, top with cheddar slices, cover, heat til cheese is melted. Place on bottom buns, top with bacon, onion, lettuce and tomato.
  • Mix the prepared dressing with the mayo and spread on top buns, place on top.
  • *Note: I always use Sweet Baby Ray's BBQ Sauce. Other bbq sauces might not work well.
