CHEDDAR AND BACON STUFFED FRENCH TOAST
Sponsored by Cabot Creamery Co-operative. This is my ultimate sweet and savory breakfast French toast, a cheese lover's dream. It's a great base recipe too if you want to add some sautéed greens to balance out the richness. I like to eat it with maple syrup.

Steps:
- Preheat the oven to 375 degrees F. Line a sheet pan with aluminum foil.
- Place the bacon on the prepared pan, brush on the maple syrup and sprinkle with the brown sugar. Bake until golden brown, 25 to 30 minutes. Drain on paper towels. Let cool until the glaze sets, about 15 minutes.
- Finely dice 4 slices of the glazed bacon and place in a medium bowl. Stir in 1 cup of the cheese and season with salt and pepper.
- Laying the slices of bread on their side, cut a pocket horizontally into the center of each with a paring knife, making sure not to cut all the way through. Stuff each piece of bread with 3 to 4 tablespoons of the bacon and cheese mixture.
- Whisk together the eggs and half-and-half in a large baking dish. Stir in about 1/2 cup of the remaining cheese. Add the stuffed bread and let soak for about 1 minute. Turn over to coat. Let them sit in the custard until they are soaked, but not falling-apart soggy, about 2 minutes.
- Preheat a large or 11-inch nonstick skillet over medium heat for 1 to 2 minutes. Add 3 tablespoons of the butter; it should melt pretty quickly and turn a pale brown. Lift each stuffed bread out of the custard, letting it drip for about a second, then gently place it into the skillet. Cook, in batches if needed, until golden brown on all sides, 3 to 5 minutes per side. Reduce the heat to medium low if the toast is browning too quickly. You'll know they're done when each toast is firm and bounces back when you touch it, which means the custard is cooked through.
- To create cheese crusts, remove the toasts to a plate and sprinkle a thin even layer of the remaining cheese into the bare skillet (see Cook's Note). Return the toasts to the skillet and cook over medium heat until the cheese melts, crusts and hardens, about 2 minutes. You're just crusting one side of the toast, so remove the toast from the skillet, cheese-crust-side up. Serve with the remaining 8 slices of glazed bacon and 3 tablespoons of softened butter. Add maple syrup if you love sweet and savory like I do.
BACON, EGGS, AND TOAST: MY VERSION
This is more of a technique than a recipe, as we all probably know how to make these separately, but the groove is in how to get them all to the plate hot at the same time. Required is a pan and a spatula, a microwave, and a toaster. You think you can't have breakfast on the fly? I'll have you eating in about 5 minutes. Promise.

Steps:
- Prep: The first thing I do is get the eggs out of the fridge, the bacon and the bread. I try to get the eggs to room temp by putting them out early, but it isn't required. They may just take a bit longer to cook. Get your pan on the burner and pre-heat it to medium-ish. I start closer to medium low, then move it to medium when I'm there cooking the eggs.
- Now, the bacon. Ever used a microwave for your bacon? It's too easy, trust me. Take 2-3 slices and place them evenly on a paper towel. Cover with another piece of towel and get them on a microwave safe plate. Times may vary for this, but my oven is 1000 watts and the bacon gets nice and crispy how I like it in two minutes, thirty seconds. Adjust according to yours.
- Bread. Simple. Just place two slices in the toaster ready to go.
- Cooking: You've got your eggs next to the stove and your pan on and heated, your bacon is in the microwave, and the bread is standing by in the toaster.
- Set the microwave to 2:30 and hit start, press down the plunger on the toaster, put some butter in the pan to melt, and break the eggs into the pan. Don't worry about the toast or bacon getting done early, as they will keep warm from residual heat in their respective cooking implements. We're going to concentrate on the eggs.
- You've cracked them in there and they're beginning to turn white. At this point, I salt them and crack some liberal pepper over them. To taste, of course.
- Next, you'll see a sort of raised ring, about a half inch to inch around the yolk, of white. I constantly take the corner of my spatula and break through this to the cooking surface. What that does is expose more and more white to the heat and I like this part cooked and not runny, but the yolk really runny. Once this has set up, you're basically done. Shake the pan and look to see if you have any jiggly, clear bits. No? Put the eggs on a plate.
- Careful getting the bacon out of the microwave and towels. HOT. Put them on the plate as well.
- Butter the toast, put them on the plate.
- Sit down and feast like a King, or Queen, heheheh.
- I like to break the yolks, cut up the the eggs and mix it all together, and pile a fork full on a corner of the toast (repeat) and chow down like that, occasionally taking a bite of the savory bacon for a change of tongue scenery, if you will, but you eat it however you like, heheh.

CHEDDAR-SAUERKRAUT TOAST
This 10-minute, vegetarian meal is happily reminiscent of a Welsh Rarebit, a Reuben sandwich and nachos. Toast slices of bread under the broiler, then top with the fermented trio of sauerkraut, pickled jalapeños and Cheddar. After a few minutes under the broiler, the cheese bubbles and crisps and the cabbage warms and mellows. The sauerkraut provides plenty of vegetables and, along with the jalapeño, tames the richness of the cheese. Adapt as you wish: Smear mustard or horseradish on the bread or trade the sauerkraut for kimchi.

Steps:
- In the oven or toaster oven, heat the broiler to high with a rack 6 or fewer inches from the heat source. Place the bread on a foil-lined baking sheet or tray. Broil until toasted, 1 to 2 minutes per side. (Watch closely as broilers and breads vary.)
- Top each slice of bread evenly with the sauerkraut, followed by the jalapeños, then the cheese. Spread the toppings all the way to the edge of the bread to prevent burning.
- Broil until the cheese is bubbling and browned in spots, 3 to 5 minutes. Let cool slightly, then dig in.

- In a large skillet, cook the bacon until crisp. Using a slotted spoon, transfer the bacon pieces to a paper-towel lined plate to absorb excess grease. When cooled, crumble any large pieces.
- Discard of all but 2 tablespoons of the rendered bacon fat. Return the pan with the bacon fat to medium heat.
- Add the chopped onions to the pan when hot and let cook for a few minutes. Then use a wooden spoon to break up any onions that might be sticking together. Cook until soft, sweet, and lightly browned, about 15 minutes, stirring occasionally. If the onions begin to get dry or stick to the pan, add a splash of water and mix.
- Transfer the onions to a food processor. Add in half of the bacon, 1 1/2 cups of cheddar cheese, and all of the horseradish and sour cream. Process until well-combined. Stir in the remaining bacon and cheddar cheese, reserving a bit for topping.

- Preheat oven to 375F and spray an 8x11-inch or similar-sized casserole or baking dish with cooking spray; set aside.
- Spread each of the 12 slices of bread evenly with cream cheese on one side of the bread. I used an averagely thick amount of cream cheese, but you can go thin or thick, depending on your preference. I find it easiest to do this on a clean countertop and just keep the bread on the counter.
- Briefly dunk each slice of bread in the milk mixture. You don't want it soaking wet or it will disintegrate. After dunking, I put each slice immediately in the prepared baking dish, with each successive sliced stacked next to it.
