Number Of Ingredients 3

2 cups backpacking biscuit mix
1/4 cup powdered milk
1 quart ziploc bag

Steps:

  • Mix biscuit mix and powdered milk.
  • Label the bag "biscuit mix, add 1/2 cup water".
  • At camp, use the bag like a bowl.
  • Stir the water in gently.
  • Pat the dough into biscuit shapes.
  • "Bake" on a griddle, turning when bottom is light golden.
  • If you are cooking something else, you can turn the lid to the pot upside down, grease it, put the dough on, and cover with foil.
  • "Bake" until done.

This is a basic mix to start with when you're planning a camping trip. Use it to make dumplings, pancakes, and fruit cobblers. If you travel with more 'stuff' you can bake biscuits and short cakes too.

6 cups unbleached flour
3 tablespoons baking powder
1 tablespoon salt
1 1/4 cups vegetable shortening

Steps:

  • Combine all the dry ingredients in large bowl.
  • Stir to mix well.
  • Cut in the shortening until the mix looks like corn meal.

BACKPACKING PANCAKES

If you're going to be out a week or more in the height of the summer, leave out the margarine. Otherwise, squeeze margarine travels very well; we never had it go bad despite several 4-6 day trips in the Virginia summer. Very easily doubled or tripled.

1 cup backpacking biscuit mix
1 tablespoon dry milk
1 tablespoon sugar
1 quart ziploc bag
1 tablespoon squeeze margarine

Steps:

  • Put the mix, milk, and sugar in a ziploc bag.
  • Seal and shake.
  • Label the bag"pancakes, add 1 tbsp margarine and 2/3 cup water".
  • At camp, use the bag as a bowl.
  • Add water and margarine.
  • Seal; squish with hands to mix.
  • Bake on a grill until mix bubbles; flip and cook till golden brown.

This recipe came from a cookbook called Missouri Mix, and makes enough mix for about 4 "batches" of 6 biscuits each. So easy to prepare when you're in a hurry! Just use it like you would Bisquick, or any of the commercial biscuit mixes. Keeps about 2 months, in a tightly covered container, in your cabinet shelf. See my other recipes that use this Mix.

Number Of Ingredients 6

9 cups flour
1/3 cup baking powder
1 cup nonfat dry milk powder
2 tablespoons nonfat dry milk powder
4 teaspoons salt
1 3/4 cups Crisco shortening

Steps:

  • In large mixing bowl, stir together flour, baking powder, & salt.Add dry milk.
  • With pastry blender, cut in shortening till mixture resembles coarse crumbs.
  • Store in a covered airtight container at room temperature.
  • TO USE:.
  • BISCUITS:
  • Place 2 cups Mix into a bowl.
  • Add 1/2 cups water.
  • Stir with a fork just till dough follows fork around bowl.
  • Turn out onto lightly floured surface. Knead gently 10-12 strokes.
  • Roll or pat into 1/2" thickness.
  • Cut with floured 2 1/2" (approximate) biscuit cutter.
  • Bake on greased baking sheet in 450 degree oven 10-12 minutes.
  • Brush tops with melted butter when done.

This is a bulk recipe - With Once a month cooking in mind. Use shortening that does not require refrigerator for this mix. This can be a biscuit or pancake or muffin mix. See below for reconstitution recipes.

10 cups all-purpose flour (or 6 cups all purpose and 4 cups whole-wheat flour)
1/3 cup baking powder
1/4 cup sugar
2 cups Crisco shortening

Steps:

  • Easy biscuit mix:
  • Place 1 cup mix in a bowl. Make a well in the middle and add 1/4 cup of milk. Stir with a fork until dough clings together. Knead 10 - 12 times, roll out to a 1/2 in thickness. Cut into 2 1/2 inch biscuits. Place on a cookie sheet. Bake at 450' for 8 - 10 minutes Serve warm. Makes 4 biscuits per above mixture.
  • Easy Muffins:.
  • In a medium mixing bowl, mix 1 cup of mix, 1 - 3 TBSP sugar,1 beaten egg,1/4 cup milk. Stir just until moistened, it will be lumpy. Use a cupcake tin, greased. Fill 2/3 full to allow for expansion. Bake at 400' for 15 - 20 mins or until golden brown. Makes 6 per mixture.
  • Easy Pancakes:.
  • In a medium mixing bowl, mix 1 cup mix, 1 beaten egg,3/4 cup milk,stir until mixed , will be lumpy. Each pancake uses 3/4 cup of mixture. Cook on a hot griddle or heavy skillet. Cook until light to medium golden brown, it will be bubbly all across the pancake - flip and cook on 2nd side. Makes 6 pancakes per above mixture.
