Fall Apart Oven Baked Ribs with Chipotle BBQ Sauce image

Pork ribs slow cooked in the oven until tender and falling off the bone, coated with a homemade Barbecue Sauce with a great balance of sweet, tang and heat. A one pan recipe! This is one of those recipes that is very forgiving with both cook time and substituting ingredients.

1 1/2 tbsp sweet paprika
1 tbsp salt
1 1/2 tbsp garlic powder
1/2 tbsp black pepper
1 tbsp onion powder
1/2 tbsp cayenne pepper
1/2 tbsp dried thyme
1/2 tbsp dried oregano
5 lb / 2.5 kg American style pork ribs (, cut into individual ribs (to fit into one baking dish))
1 bottle dark beer ((About 12 oz / 375 ml. Stout, porter or a dark ale))
14 oz / 400g can crushed tomato
3.5 oz / 100g can Chipotle in Adobo Sauce (, chipotle and sauce (1/2 a standard can) (Note 1))
1 large onion ((brown, white or yellow), diced)
2 garlic cloves (, minced)
1 tbsp tomato paste
2 tbsp brown sugar
1/4 cup white wine vinegar ((or 2 tbsp normal white vinegar + 1 tsp sugar))
1/3 cup Worcestershire sauce
2 tbsp Tabasco sauce (, or other hot sauce. Adjust to taste.)
1/2 tbsp salt
Black pepper
Fresh coriander/cilantro leaves
Lime wedges

Steps:

  • Combine the Rub ingredients in a bowl.
  • Pat the ribs dry, then rub with the Rub. If time permits, refrigerate, covered, for at least 2 hours or overnight.
  • Take ribs out of the fridge, place in a large baking dish in a single layer (squished is ok, they will shrink slightly).
  • Preheat oven to 160C/325F.
  • Pour beer into the baking dish and cover with a lid (use foil if you don't have a lid). Place in the oven and cook for 1 hour.
  • Meanwhile, make the Sauce.
  • Take out of the oven and remove lid. Pour the sauce over the ribs, then return to the oven (uncovered).
  • Bake for 45 minutes to 1 hour 15 minutes, turning once or twice, until the ribs are cooked to your liking. The meat should be very tender and comes off the bone easily, and the sauce should be thick and "jam-like". If the pan starts looking dry, add a splash of water.
  • To finish the ribs off, grill/broil for 5 to 10 minutes to get a nice browned finish on top (this is an optional step).
  • Serve, garnished with fresh coriander/cilantro leaves and wedges of lime.

2/3 cup honey
4 tablespoons sauce from chipotles in adobo sauce
3 chipotle chiles from chipotles in adobo sauce (minced, seeded optional, or more to taste)
10 garlic cloves (pressed or minced)
2 tablespoons olive oil
1/4 cup dijon mustard
1/4 cup apple cider vinegar
2 tablespoons Worcestershire sauce
4 tablespoons Maggi or soy sauce
1 teaspoon freshly ground black pepper
2 tablespoons dried oregano
3 pounds baby back or spare ribs

Steps:

  • In a medium bowl, combine the ketchup, honey, sauce from the chipotles, chipotle chiles, garlic, olive oil, Dijon mustard, apple cider vinegar, Worcestershire, Maggi, black pepper and oregano. Mix well.
  • Line a large roasting pan with parchment paper or aluminum foil. Pour some sauce on the bottom of the pan, put in the ribs and pour the remaining sauce on top. Cover with foil, sealing the entire top of the pan, and marinate for 30 minutes up to 24 hours. If marinating more than 30 minutes, keep the ribs refrigerated.
  • When ready to cook the meat, remove it from the refrigerator. Preheat the oven to 350°F. Slip the pan with the ribs into the oven and roast for 1 1/2 hours. Take the ribs from the oven and carefully remove the aluminum foil, taking care not to be burned by the steam. Spoon the thickened sauce from the bottom of the pan on top of the ribs and place them back in the oven to roast another 20 to 30 minutes, or until they are beautifully browned and sticky. Remove from the oven, let rest, then slice into 2- to 3-bone pieces and pile on a platter.
  • Alternatively, after you remove the foil, you can finish off the ribs on the grill at medium heat, for about 15 minutes.

5 pounds Danish baby back ribs (4 racks) or St. Louis ribs (2 racks)
Kosher salt and freshly ground black pepper
1 recipe Barbecue Sauce (recipe follows)
1/2 cup vegetable oil
1 1/2 cups chopped yellow onion (1 large onion)
1 tablespoon minced garlic (3 cloves)
1 cup (10 ounces) tomato paste
1 cup cider vinegar
1 cup honey
1/2 cup Worcestershire sauce
1 cup Dijon mustard
1/2 cup soy sauce
1 cup (8 ounces) hoisin sauce
2 tablespoons chili powder
1 tablespoon ground cumin
1/2 tablespoon crushed red pepper flakes

Steps:

  • Preheat the oven to 350 degrees F. Line a sheet pan with aluminum foil.
  • Place the ribs on the sheet pan meat-side up and sprinkle them with 2 teaspoons salt and 1 teaspoon pepper. Pour the barbecue sauce generously on each rack and cover the ribs loosely with aluminum foil. Bake for 1 1/2 hours for baby backs and 1 3/4 hours for St. Louis ribs, until the meat is very tender when tested with a fork. As soon as the ribs are out of the oven, spread them generously with additional barbecue sauce. Grill right away or refrigerate to grill later.
  • About 40 minutes before you want to serve, heat a charcoal grill with a layer of hot coals or heat a gas grill to medium-high heat. After the charcoal turns gray, brush the cooking grate with oil to keep the ribs from sticking. Place the ribs on the grill ribs-side down, put the lid on top (be sure both vents are open!) and grill for 5 minutes. Turn the ribs meat-side down, put the lid back on and grill for another 4 to 5 minutes, until nicely browned. Place on a cutting board and cover tightly with aluminum foil and allow the ribs to rest for 10 minutes. Cut into ribs and serve hot with extra barbecue sauce on the side.
  • Heat the oil in a large saucepan over low heat, add the onions and cook for 10 to 15 minutes, until the onions are translucent but not browned. Add the garlic and cook for one more minute. Add the tomato paste, vinegar, honey, Worcestershire sauce, mustard, soy sauce, hoisin sauce, chili powder, cumin and pepper flakes.
  • Bring to a boil, then lower the heat and simmer uncovered for 30 minutes. Use immediately or pour into a container and refrigerate for several weeks.

BARBECUE SAUCE:
3 cups ketchup
2 bottles (11.2 ounces each) Guinness beer
2 cups barbecue sauce

2 tablespoons chopped chipotle peppers in adobo sauce

Steps:

  • Wrap ribs in large pieces of heavy-duty foil; seal edges of foil. Grill, covered, over indirect medium heat for 1 to 1-1/2 hours or until tender., In a large saucepan, combine sauce ingredients; bring to a boil. Reduce heat; simmer, uncovered, for about 45 minutes or until thickened, stirring occasionally., Carefully remove ribs from foil. Place over direct heat; baste with some of the sauce. Grill, covered, over medium heat for about 30 minutes or until browned, turning once and basting occasionally with additional sauce. Serve with remaining sauce.

1/4 cup dry mustard
2 tsp. ground black pepper
1/4 cup honey
1/4 cup plus 2 Tbsp. KRAFT Spicy Honey Barbecue Sauce
1 lime, halved

Steps:

  • Heat oven to 400ºF.
  • Place half the ribs in single layer on large sheet of heavy-duty foil. Mix mustard, pepper and honey; rub half evenly onto both sides of ribs. Bring up foil sides. Double fold top and both ends to seal packet. Repeat to make second packet. Place packets on baking sheet and bake 2 hours or until ribs are done.
  • Heat grill to medium-high heat. Remove ribs from foil; discard foil. Brush ribs with barbecue sauce; grill 2 to 3 min. on each side or until lightly charred, turning occasionally. Serve with lime halves.

1 3- to 4-pound rack pork spare ribs, halved
Kosher salt and freshly ground pepper
1 tablespoon vegetable oil
2 tablespoons packed dark brown sugar
1 tablespoon chipotle chile powder
1 tablespoon ground cumin
1 tablespoon dried oregano
3/4 cup chipotle barbecue sauce
1/4 cup agave nectar
Fresh cilantro, lime wedges and cornbread, for serving

Steps:

  • Season the ribs all over with salt and pepper, then brush with the vegetable oil. Combine the brown sugar, chile powder, cumin and oregano in a small bowl. Sprinkle the spice mixture all over the ribs and rub into the meat. Transfer the ribs to a 6- to 8-quart slow cooker. Cover and cook on low, 7 1/2 hours.
  • Preheat the broiler and line a baking sheet with foil. Whisk the barbecue sauce with the agave in a bowl. Transfer the ribs to the prepared baking sheet and brush both sides with half of the barbecue sauce mixture. Turn bone-side down and broil until the glaze is bubbling and browned, 3 to 5 minutes.
  • Slice the ribs between the bones and top with cilantro. Serve with lime wedges, cornbread and the remaining barbecue sauce.

1 cup honey
1 cup ketchup
1/2 cup apple cider vinegar
2 tablespoons reduced sodium soy sauce or 2 tablespoons tamari
1 -2 chipotle chile in adobo, stems trimmed, chopped, depending upon taste
2 tablespoons adobo sauce, depending upon taste (from the can of chilies)
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon grated fresh garlic

5 lbs baby back ribs, each rack halved (2 racks about 2 1/2 pounds each)

Steps:

  • To make the sauce, place the honey, ketchup, vinegar, soy sauce, chipotles, adobo sauce, chili powder, cumin, garlic and salt in a small saucepan. Heat on medium-low heat until simmering. Cook, uncovered, for 5 minutes. Let cool.
  • Season the ribs on both sides with a sprinkling of salt and a grinding of black pepper and rub inches Place the ribs in a 2-gallon, resealable plastic food storage bag and add the cooled sauce. Refrigerate for 4 to 24 hours, turning the bag occasionally.
  • When ready to cook the ribs, preheat the oven to 350°F Line a large roasting pan or a rimmed sheet pan with aluminum foil for easy cleanup. Fit a rack in the pan and place the ribs on the rack. Pour the sauce into a saucepan and gently heat over medium heat for 5 minutes. Brush the ribs with the sauce.
  • Roast the ribs for 1 1/2 to 2 hours, basting lightly and turning every 20 minutes, until the meat begins to pull away from the bones. The ribs can be made ahead and left to stand for up to 2 hours either in a cool kitchen or in the refrigerator.
  • Just before serving either preheat the broiler on high or heat the barbecue to medium-high. Brush the ribs lightly with the sauce and broil or grill on the barbecue for about 2 minutes, or until browned and bubbly. Cut between the ribs and pile them on a platter. Heat the leftover sauce to a gentle boil and simmer for 3 minutes before serving with the ribs.

ALTERNATE HONEY BARBECUE SAUCE WITH RIBLETS (APPLEBEE'S COPYCAT)



Alternate Honey Barbecue Sauce With Riblets (Applebee's Copycat) image

This is a recipe I originally found in the Recipe Link but it's also posted in various other cooking sites. I include this recipe here, because Honey Barbeque is one of my favorite sauces ever! Advice: Feel free to try the sauce with any piece of meat, other than riblets ( my personal favorite is chicken legs or chicken in general ) but avoid hard and chewy meat like beef (unless it's your thing). You need something soft, try pork. If you favor more spice than sweetness, cut down on the honey and increase the spice quantity for a sharp difference. Also, you can use 1 and 1/2 tablespoons of brown sugar, instead of molasses. By no means whatsoever, don't mix the sauce with the riblets in any stage of their cooking. Simply soak them in the sauce just before serving. Water and fat that meat excretes during baking will liquefy and spoil your sauce. You can cook them altogether in a deep frying pan though, just over low heat. Matches well with side dishes like french fries, coleslaw and very mild blue cheese or sour cream dip. Enjoy!

1 kg pork riblet
1/4 teaspoon liquid smoke flavoring

Steps:

  • Preparing the Riblets: First, season the riblets with salt, pepper and garlic, depending on how spicy you want them.
  • Then, sear the ribs on the grill/broiler until both sides are mahogany in color and the meat has begun to pull away from the bone (155°F internal temperature).
  • Place the riblets on rack in a deep pan/roaster.
  • Cover the bottom of the pan with a mixture of water and liquid smoke flavoring (4:1 ratio of water to liquid smoke).
  • Apply the mixture strategically, so as not to touch the riblets (it will make them bitter), just cover the space between them.
  • Seal the pan tightly with two layers of foil wrap to cover.
  • Slow cook the riblets in 275°F oven until their meat is tender. Time varies with how many riblets are being cooked, the pan used and your oven temperature. Plan on anywhere from two to five hours, but check to be sure. The slower, the better for this process. Just make sure an internal food temperature of 155°F is maintained.
  • You can also try covering the riblets with chopped onions, peppers and tomatoes. This also keeps them moist and adds a nice flavor.
  • When the riblets are fully cooked and tender, remove them from the oven and finish them off on grill/broiler until the marrow in the bone tips "sizzles".
  • Preparing the Honey Barbecue Sauce: Combine all the ingredients for the sauce in a saucepan and simmer them for 20 minutes.
  • Brush the riblets with the sauce and serve them warm.

Steps:

  • Combine all ingredients in a food processor and blend until very smooth, 1-2 minutes. Refrigerate.
  • Sauce may become quite thick once refrigerated. Just heat for a few seconds in microwave.
  • Recipe can be doubled or tripled and the level of chipotle pepper can be adjusted to suit personal preferences.
