THE BEST OVEN BAKED (FOIL-WRAPPED) BABY BACK RIBS

The Best Oven Baked (Foil-Wrapped) Baby Back Ribs image

Tender, tasty and juicy these ribs are always requested by my family.

Provided by Jennifer Morrisey

Time 2h55m

Number Of Ingredients 19

1 cup ketchup
1 cup tomato sauce
1/2 cup and 2 tablespoons brown sugar
1/2 cup and 2 tablespoons red wine vinegar
1/4 cup molasses
1/2 teaspoons hickory-flavored liquid smoke
1 tablespoon butter
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/8 teaspoon chili powder
1/2 teaspoon paprika
1/4 teaspoon celery seed
1/8 teaspoon ground cinnamon
pinch cayenne pepper
1/2 teaspoon salt
1/2 teaspoon coarsely ground black pepper.
4 lbs Smithfield Baby Back Pork Ribs
4 tablespoons Bar-B-Que Creole Seasoning Blend Recipe
2 cups Kansas City Style Barbeque Sauce

Steps:

  • A day before, in a large saucepan over medium heat, mix together the ketchup, tomato sauce, brown sugar, wine vinegar, molasses, liquid smoke, and butter. Season with garlic powder, onion powder, chili powder, paprika, celery seed, cinnamon, cayenne, salt, and pepper.
  • Reduce heat to low, and simmer for up to 20 minutes. For a thicker sauce, simmer longer, and for thinner, less time is needed. A sauce can also be thinned using a bit of water if necessary. Brush sauce onto any kind of meat during the last 10 minutes of cooking.
  • Preheat oven to 300 degrees F.
  • Pat ribs dry with a paper towel and remove the membrane that covers the bony side of the ribs.
  • Apply Bar-B-Que Creole Seasoning Blend Recipe rub to ribs on all sides.
  • Lay ribs, bone side down on a long sheet of foil.
  • Lay another layer of foil on top of ribs and roll and crimp edges tightly, rolling the edges facing up to seal.
  • Place on baking sheet and bake for 2-2 1/2 hours or until meat has started to shrink away from the ends of the bone.
  • Remove from oven.
  • To finish ribs under the broiler, set oven to broil and place the ribs bone side up, on a broiling rack, brush with barbeque sauce and place, uncovered, under the broiler for about 5 minutes until the sauce is bubbly and cooked on, watch carefully, so they don't burn. Turn the ribs over and repeat on the meaty side. Remove the ribs from the broiling pan and let rest 5 minutes before slicing.

EJ'S SIMPLE OVEN-BBQ RIBS

EJ's Simple Oven-BBQ Ribs image

Provided by Food Network

Categories     main-dish

Time 3h50m

Yield 2 to 4 servings

Number Of Ingredients 14

2 racks baby back ribs
6 tablespoons Emeril's Rustic Rub, recipe follows
1 1/2 teaspoons salt
1 teaspoon freshly ground black pepper
1 teaspoon celery salt
Emeril's Bam B Q Sweet Original Barbecue Sauce
8 tablespoons paprika
3 tablespoons cayenne
5 tablespoons freshly ground black pepper
6 tablespoons garlic powder
3 tablespoons onion powder
6 tablespoons salt
2 1/2 tablespoons dried oregano
2 1/2 tablespoons dried thyme

Steps:

  • Preheat the oven to 300 degrees F and line a large baking sheet with a piece of aluminum foil large enough to cover the pan twice (you will be folding this over the ribs and sealing.)
  • Place the ribs on the prepared baking sheet in 1 layer. In a small bowl, combine the Rib Rub, salt, pepper, and celery salt and stir to combine. Divide the seasoning evenly among both slabs of ribs, coating well on both sides. Fold the sides of the foil over the ribs and seal tightly on all sides. Place the ribs in the oven and bake, undisturbed, for 2 1/2 to 3 hours, or until ribs are very tender.
  • Remove the ribs from the oven and peel back the foil so that the ribs are exposed. Using a pastry brush or the back of a spoon, coat the racks lightly on the meaty sides with barbecue sauce. Return to the oven until sauce is thickened and lightly browned, about 20 minutes longer. Remove the ribs from the oven and set aside to cool briefly before cutting between the ribs and serving. Serve with more barbecue sauce, if desired.
  • Combine all ingredients and store in an air-tight container.

2 slabs baby back ribs
2 Tablespoons Lawry's Seasoned Salt
1 Tablespoon garlic powder
1 teaspoon pepper
2 Tablespoons brown sugar
1/4 cup liquid smoke
1/4 cup water
1 1/2 cups homemade or store-bought barbecue sauce

Steps:

  • Preheat the oven to 200°F. (See Kelly's Notes.) Arrange two large pieces of foil on a baking sheet so that it hangs off on all sides.
  • In a medium bowl, whisk together the Lawry's Seasoned Salt, garlic powder, pepper and brown sugar. Sprinkle the ribs on both sides with the spice rub.
  • Place the rib slabs side-by-side on the foil then gather the foil up and over the ribs to make a secure foil packet. Pour the liquid smoke and water into the bottom. Place one more piece of foil on top and press together the edges to seal the foil packet.
  • Bake the ribs for 5 hours.
  • Remove the ribs from the oven and remove the top piece of foil. The ribs are done cooking when they have reached an internal temperature of 190 - 200°F.
  • Change the oven to broil.
  • Brush the ribs generously with barbecue sauce then broil them until the edges just begin to crisp, about 3 minutes.
  • Remove the ribs from the oven, brush them one more time with barbecue sauce, then serve.

BABY (GOT) BACK RIBS

Baby (Got) Back Ribs image

An oven cooking method for ribs where the meat literally jumps off the bones. This recipe simply gives a cooking method for ribs and allows you to season and sauce them however you want.

Provided by skwiatk

Categories     Pork

Time 5h30m

Yield 1 rack of ribs, 2-3 serving(s)

Number Of Ingredients 2

1 baby back rib rack
desired seasoning

Steps:

  • Rinse off ribs and pat dry.
  • I recommend cutting the rack in half or into thirds to make moving from pan to plate when cooked easier. You may also remove the membrane if desired.
  • Season ribs with desired dry rub. At this point you can allow ribs to sit overnight for the rub to be absorbed better, however this isn't necessary.
  • Preheat oven to 250 degrees.
  • Use a deep pan with a cooking rack in it and pour water into pan. Do not allow water to reach the rack.
  • Put ribs on the rack so they sit above the water.
  • Cover the pan with two layers of aluminum foil and make a tight seal around the edges.
  • Put the pan in the oven and cook for 6 to 8 hours for ribs that will fall apart and need to be eaten with a fork. Cook 4 to 5 hours for ribs that will be very tender but remain on the bone.
  • When done cooking for desired length of time remove from oven and remove foil. CAREFUL the pan will have lots of very hot steam built up and it can easily burn you. I recommend using tongs to pull the foil back.
  • Turn your broiler on to high and have your oven rack in the upper half of the oven.
  • Leave ribs in the pan and brush with your favorite barbeque sauce.
  • Place the pan of ribs under the broiler and broil until the sauce starts to caramelize. Keep an eye on it to make sure it doesn't burn.
  • When the sauce has fully caramelized remove from the oven and serve.
