EASY TURKEY CASSEROLE
This casserole was brought to me after a new baby many years ago by a lady at our church. When I asked for the recipe, I couldn't believe how simple it was. We use this for a quick dinner anytime or to use up leftover turkey after Thanksgiving. Can also be made with chicken.

Steps:
- In large pot, cook noodles according to package directions; drain.
- Add all other ingredients, except for potato chips, and mix.
- Add small amount of additional milk if needed until creamy.
- Pour into buttered 2 quart casserole and sprinkle with potato chips on top.
- Bake for 350 for 25-30 minutes.

This tastes so good, it's almost sinful! It's a bit costly though and very rich. I first had it at a church luncheon when I was a teenager.

Steps:
- Line a 9 by 14-inch baking pan with the pastry.
- Saute onion and mushrooms in margarine.
- Stir in nuts and remaining ingredients except breadcrumbs and rest of melted margarine.
- Pour into pastry. Fold pastry over and make a rolled crust completely around pie.
- Toss breadcrumbs with melted margarine and sprinkle on top.
- Bake at 425 degrees for 20 to 25 minutes.

- Preheat oven to 350.
- Place prepared mashed potatoes into a 2 quart casserole dish, sprayed with nonstick spray.
- Combine turkey and gravy in a large skillet and bring to a simmer, stirring occasionally.
- Remove from heat and stir in stuffing until throughly combined.
- Add salt and pepper to taste, if desired.
- Spoon turkey mixture on top of potatoes and spread evenly.
- Cover and bake for 25-30 minutes or until throughly cooked.

AWESOME TURKEY BURGERS
This is a slight variation on a Rachael Ray recipe. We love it! And don't be scared...it doesn't taste like turkey, and isn't spicey - despite the ingredients.

- Combine turkey with all ingredients through the grill seasoning blend.
- Divide mixture into 4 patties and drizzle with olive oil to coat.
- Grill or pan fry until cooked through. (Don't over cook!)
- Add cheese and cook until melted.
- Toast kaiser rolls and place cooked burgers on the patties.
- Top with avocado.
- Additionally, you can add bacon, lettuce, sweet relish, etc. according to your taste.

- Heat oven to 350°F.
- Mix all ingredients except walnuts. Spoon into a 2 quart casserole.
- Sprinkle with nuts. Bake for 40 minutes or until thoroughly heated.
- *Note: I like to use Jenni-O's pre-cooked turkey. I'll try to post a picture of it. I think it turns out really well. And it saves a lot of time. You can also use the pre-chopped frozen onions to make the dis go even faster.
