Avocado Strawberry Salad With Feta and Walnuts in a Tarragon Vin image

First place winner of the 2009 Craze-E contest. I created this simple yet sophisticated salad in the spirit of Mark Bittman's minimalist column in the NY Times. To dress up the presentation (though it's quite pretty as is), serve over a bed of greens. If you want to make it low calorie, replace the apple cider vinegar, sugar, and olive oil with one ingredient: a good balsamic vinegar.

4 large strawberries, sliced (stems removed)
1 medium avocado, sliced
2 tablespoons walnuts, coarsely chopped, toasted
2 tablespoons feta cheese, crumbled
1 tablespoon apple cider vinegar
1 tablespoon olive oil
1 teaspoon dried tarragon
1 teaspoon sugar
1/2 teaspoon salt

Steps:

  • Whisk all vinaigrette ingredients together in a small bowl.
  • Divide strawberries and avocado evenly into two individual salad bowls.
  • Drizzle approximately one tablespoon of vinaigrette over each.
  • Top each salad with a tablespoon of walnuts and a tablespoon of feta.

Here's a super tasty fresh and simple salad that's good for you, too. I enjoyed my salad with handcrafted Humboldt Fog aged goat cheese, some toasted walnuts and a light drizzle of tarragon-olive oil dressing, but you may use whatever cheese, nuts and dressing you like. Enjoy!

3 -4 fresh strawberries, thickly sliced
fresh organic mixed salad green
3 slices fresh avocados
1 -2 tablespoon aged goat cheese, crumbles (or your favorite cheese)
walnuts (optional)
salad dressing (your choice, I used tarragon vinegar and olive oil)
salt and pepper, to taste

Steps:

  • Arrange your fresh salad makings in a pretty bowl. Add cheese and walnuts, if desired.
  • Drizzle with tarragon vinegar and olive oil, or your favorite salad dressing.
  • Season with salt and pepper, to taste.
  • Enjoy!

10 strawberries, sliced
1/2 cup chopped pecans

Steps:

  • In a small bowl, combine dressing ingredients. Whisk together until well blended. Set aside.
  • Place salad greens in a bowl. Arrange avocado and strawberry slices on top of greens. Drizzle dressing over salad and top with pecans.
  • Serve immediately or refrigerate up to 2 hours.

1/4 cup honey
2 tablespoons sherry wine vinegar (may sub red-wine vinegar)
2 tablespoons finely chopped of fresh mint
1/4 teaspoon fresh ground pepper
1 pinch salt
4 cups Baby Spinach
1 small avocado, peeled, pitted and cut into 16 slices (4-5 ounces)
16 thin slices cantaloupe, rind removed (about 1/2 small cantaloupe)
1 1/2 cups hulled strawberries, sliced
2 teaspoons sesame seeds, toasted (see Tip)

Steps:

  • Whisk honey, vinegar, mint, pepper and salt in a small bowl. (You can make this dressing up 1 day ahead if necessary).
  • Divide spinach among 4 salad plates. Arrange alternating slices of avocado and cantaloupe in a fan on top of the spinach. Top each salad with strawberries, drizzle with dressing and sprinkle with sesame seeds.
  • Tip: To toast sesame seeds, heat a small dry skillet over low heat. Add sesame seeds and stir constantly until golden and fragrant, about 2 minutes. Transfer to a small bowl and let cool.

2 bunches kale, stems removed and finely shredded
2 lemons, juice of (I like to use Meyer Lemons)
3/4 teaspoon coarse sea salt or 3/4 teaspoon kosher salt
1/4 olive oil
1/3 cup olive oil
1 lb strawberry, sliced with stems removed
1/4 cup unfiltered apple cider vinegar
1/4 teaspoon fresh ground pepper
1 tablespoon raw honey
2 avocados
1/4 cup sliced almonds

Steps:

  • Put kale into large bowl. Pour ¼ cup olive oil, juice from 1 lemon, and ½ teaspoon of the salt over the kale. Toss gently, with fingers, and massage mixture into the leaves. This will cause the kale to start to wilt, it takes about 3 minutes.
  • Set kale aside while making dressing. Whisk together 1/3 cup olive oil, ¼ cup apple cider vinegar, 1 tablespoon honey, ¼ teaspoon pepper, remaining ¼ teaspoon salt, and juice from second lemon.
  • Add sliced strawberries to the dressing mixture and allow to sit while coring and slicing avocados.
  • Pour dressing over kale and top with avocado slices and almonds.
