A low-carb leek, ham and cheese meal in 25 minutes

8 small leeks , white part only
8 slices cooked ham
100g cheddar , grated
2 tbsp Dijon mustard
6 tbsp crème fraîche (full or half-fat)

Steps:

  • Heat oven to 200C/fan180C/gas 6. Cook the leeks in a pan of boiling salted water for 4-5 mins or until just tender. Drain and cool under a cold tap to stop them from cooking any further, then drain again well and pat dry on kitchen paper.
  • Wrap each leek in a slice of ham, then arrange, side-by-side, in a large baking dish. Mix the cheddar in a bowl with the Dijon mustard and crème fraîche, until well combined. Season to taste. Spread over the leeks, then bake for 15-20 mins until bubbling and golden brown. Serve at once with plenty of crusty bread to mop up the juices.

1 leek
500 g of quality stewing beef
1 cup dry red wine
1 carrot
1 yellow onion
bay leaf
plain flour
1 teaspoon thyme
sea salt
ground black peppercorns
1 beef stock cube
olive oil

Steps:

  • Top and tail leek so that you have the white stalk only.
  • Slice leek lengthwise and then chop into 1 inch segments.
  • Chop carrot into bite size segments.
  • Chop onion.
  • Place flour and seasoning into a bag.
  • Place beef into the bag and shake so that beef is coated with flour and seasoning.
  • In a heavy base frypan, place 1 or 2 tablespoons of oil.
  • On low heat brown beef, remove and place into a casserole.
  • Add a little more oil and stir fry leek, onion and carrot for 2 minutes.
  • Remove and add to casserole.
  • Place the red wine and the stock cube in the frypan and simmer until wine is reduced to half.
  • Add to casserole.
  • Add thyme and 2 bayleaf.
  • Place in a moderate oven and cook slowly for about 90 minutes.
  • Place a lid on the casserole to obtain best results.
  • Serve with mashed potato,steamed french beans with an oil and garlic dressing and steamed button squash or baby zucchini.

The recipe that follows is one that is popular with, and derived from, the local farming community of Cardiganshire. There are regional variations throughout Wales as to what meat is used; some use Pork or Mutton we use Shin Beef. The quantities used here are based on my own requirements for two to three days, as this soup is one that improves on subsequent re-heating. Serve with lightly buttered bread and a good mature Cheddar cheese

2 quarts water
12 ounces beef shank
2 large onions, chopped
2 large carrots, sliced
1 rutabaga, diced
salt and pepper to taste
4 potatoes, peeled and quartered
2 leeks, sliced
1 small head cabbage, sliced
2 tablespoons chopped fresh parsley

Steps:

  • Bring water to boil in a large pot. Place beef shank in, and simmer 1 1/2 hours. Let cool overnight. Lift meat out, trim off gristle and cut meat into medium sized pieces; set aside. Skim fat from surface of stock, or strain through a fine sieve.
  • Return stock to heat, and bring to a boil. Add onions, carrots and rutabaga. Season with salt and pepper. Simmer for 1 hour. Add potatoes, and simmer until tender, 15 to 20 minutes. Stir in the leeks, cabbage, parsley and reserved meat. Simmer 10 minutes, or until cabbage is tender.

2 lbs potatoes, peeled and chopped
1/4 cup milk
2 lbs leeks, chopped
1 lb ground beef
1 onion, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
1 tablespoon finely chopped green chili pepper
soy sauce, to taste
1 (8 ounce) package shredded cheddar cheese
6 ounces cooked ham, cut into thin strips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of salted water to a boil. Cook potatoes until tender but firm, about 15 minutes.
  • Drain potatoes, and transfer to a medium bowl. Mash together with milk.
  • Be sure to remove all grit from leeks by soaking after chopping.
  • Place leeks in a medium saucepan with enough water to cover, and bring to a boil. Cook 10 minutes, or until tender. Drain and set aside.
  • In a skillet over medium heat, cook and stir the ground beef until browned.
  • Mix in the onion, red bell pepper, and green bell pepper. Season with green chile peppers and soy sauce. Continue to cook and stir until vegetables are tender.
  • In a medium baking dish, mix mashed potatoes, leeks, and ground beef mixture. Sprinkle with Cheddar cheese, and top with ham.
  • Bake 25 minutes at 350F, until bubbly and lightly browned.

1/2 lemon, juice and grated rind
2 tablespoons butter
1/4 cup heavy cream
2 cups cottage cheese or 8 ounces cream cheese
4 eggs
salt and pepper
3 tablespoons fine breadcrumbs
1 pie crust, for (8-inch)

Steps:

  • Clean leeks well and chop in 1-inch pieces.
  • Boil chicken broth and lemon juice, rind and butter.
  • Add leeks and cook uncovered 12 to 15 minutes.
  • Beat together cheese, cream and eggs until creamy and well blended.
  • Add 1/2 cup cooking broth while stirring.
  • Add to cooked leeks and simmer until thickened (light cream sauce).
  • Add salt and pepper to taste.
  • Grease pie plate. Dust with bread crumbs. Line with pie crust.
  • Flute edges. Pour in leek mixture. Bake at 375° for 40 minutes until golden and custard is set.

8 chicken thigh fillets, trimmed, halved crossways
1/2 cup teriyaki marinade, & sauce
1 tablespoon butter
1 tablespoon olive oil
2 leeks, halved, washed and sliced
4 slices bacon, rind removed, chopped
2 garlic cloves, crushed
1 1/2 cups chicken stock
1/2 cup white wine
100 g button mushrooms, sliced
100 g snow peas, to serve
chopped parsley, to serve

Steps:

  • Place chicken in a non-metallic dish and pour over marinade. Cover and marinate in refrigerator for 1 hour (longer for a richer taste). Preheat oven to 180 deg. Celsius Heat butter and oil in a heavy-based fry pan over medium heat. Cook chicken in batches until golden. Remove to a plate.
  • Add leek, bacon and garlic to pan. Cook, stirring occasionally for about 4 minutes or until leek is tender. Add stock, wine and mushrooms. Bring to the boil. Remove from heat and transfer mixture to an ovenproof dish. Add chicken, cover with foil and bake for 35 minutes. Remove foil and cook for another 10 minutes or until chicken is cooked through.
  • Meanwhile, steam snow peas until just tender. Place in a serving bowl. Top chicken with chopped parsley and serve immediately.

8 large leeks
Salt to taste
4 tablespoons butter
4 tablespoons flour
2 1/2 cups milk
Freshly ground pepper to taste
1/4 teaspoon freshly grated nutmeg
1/8 teaspoon cayenne pepper
1 egg yolk
8 slices boiled ham, about 3/4 pound
2 tablespoons chopped shallots
3 tablespoons grated Gruyere or pecorino cheese

Steps:

  • Preheat oven to 475 degrees.
  • Cut off the top of the leeks, leaving 2 inches of the green part. Trim off the root ends at the base. Rinse leeks thoroughly in cold water to remove sand.
  • Place leeks in a pot, cover with water and add salt to taste. Bring to a boil and simmer for 8 minutes. Drain and chill.
  • Melt 3 tablespoons of the butter in a saucepan. Add flour, stirring with a wire whisk. When blended add milk, stirring rapidly with whisk. Add salt, pepper, nutmeg and cayenne and blend. Simmer for 5 minutes. Remove from heat and add egg yolk, stirring briskly.
  • Heat the remaining tablespoon butter in a skillet. Add leeks and sprinkle with salt and pepper. Cook briefly, turning to heat evenly. Place each leek on a slice of ham, at an end.
  • Carefully roll the ham up to form a roulade.
  • Sprinkle shallots in the bottom of a baking dish measuring 11 by 8 inches. Place the roulades close together in a row. Spoon sauce on top and sprinkle with cheese. Bake 10 minutes or until hot and bubbling and nicely glazed on top.

8 ounces prepared leeks
2 ounces butter
1/2 pint single cream
2 eggs
4 ounces boiled ham
1 pastry for single-crust pie

Steps:

  • Prepare the leeks by cutting off the roots, the coarse green leaves and the damaged outer layer. Run under the tap to get rid of the dirt and grit. Slice them into a colander and rinse again. Cook them gently in the butter till soft.
  • Line a shallow pie dish with a layer of pastry, and turn the leeks and the ham (chopped small) on to it.
  • Mix cream and eggs well together. Season with salt and plenty of pepper and strain into pie dish. Cover with a pasrty lid, and brush with milk.
  • Bake for about 30 minutes in a 350F oven.
  • This pie tastes better warm than hot. If you prefer a flan, just cook without the pastry lid.

2 large leeks , washed, trimmed and halved
4 slices ham
50g parmesan
100ml crème fraîche
1 slice bread , whizzed into crumbs

Steps:

  • Heat oven to 200C/fan 180C/gas 6 and boil the kettle. Place the leeks in a single layer in a large saucepan and add enough hot water from the kettle to cover. Bring to the boil, then cover and simmer for 5 mins until the leeks are just tender.
  • Lay 2 slices of ham, overlapping, on a board, then sit 2 leek halves at one end. Wrap up, repeat with the other leeks, then place the parcels in a small ovenproof dish.
  • Mix three-quarters of the cheese with the crème fraîche, then season and spoon over the parcels. Mix the remaining parmesan with the breadcrumbs and scatter over the top. Bake for 15 mins until the cheese is golden and bubbling. Serve with a green salad and crusty bread to mop up the sauce.
