This Avocado Smothered Chicken is EVERYTHING you love about delicious avocado egg rolls, all smothered on top of a tender chicken breast and baked to perfection. Inspired by one of my favorite appetizers this brings the flavors into a wholesome and filling dinner. Made easy with just a handful of ingredients and one dish, you will love how fast this meal can be prepped and into the oven.

2 lbs chicken breast (boneless, skinless, thinly cut)
2 avocados (large)
1/4 cup sun dried tomatoes packed in oil (diced)
2 tbsp red onion (finely diced)
2 tbsp cilantro (finely chopped)
1/2 tsp salt (divided in half)
1/4 tsp ground black pepper
1/2 cup monterey jack cheese (shredded)
1-2 tbsp chili sauce
2 tbsp honey
1 tbsp rice wine vinegar
1 tsp sesame oil
1 tsp cilantro (chopped)

Steps:

  • Lay the chicken breast flat in a large baking dish. Season with half the salt and the pepper.
  • In a bowl, combine the avocado, sun dried tomatoes, red onion, cilantro, and the remaining salt. Stir, mashing the avocado and mixing everything together, until combined with chunks of avocado remaining.
  • Spread the avocado mixture on top of each chicken breast to cover. Top with the shredded cheese. Bake covered with foil at 375˚F for 25-35 minutes, or until the chicken is cooked through. Optional: remove the foil for the last 3-5 minutes and set the oven to broil to brown the cheese.
  • Garnish with extra cilantro and sun dried tomato if desired. Serve over rice or sautéed spinach and drizzle each chicken breast with sauce. Enjoy!

1 teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon ground cayenne pepper
4 skinless, boneless chicken breast halves
2 tablespoons olive oil
1 red onion, minced
2 tablespoons lime juice
1 avocado, diced
Salt and ground black pepper to taste

Steps:

  • Stir 1 teaspoon salt, 1/4 teaspoon black pepper, and cayenne pepper together in a small bowl; rub evenly into the chicken breasts.
  • Heat the olive oil in a skillet over medium heat; cook the chicken in the heated oil until no longer pink in the center and the juices run clear, 5 to 7 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Stir the onion, lime juice, and avocado together in a bowl; season with salt and pepper. Spoon over the chicken breasts to serve.

Just a good recipe I have and like to use, especially since avocados are fabulous here in southern California. Pretty easy to cook too. It's good served over a bed of rice too.

2 tablespoons cornstarch
1 teaspoon ground cumin
1 teaspoon garlic salt
1 egg
1 tablespoon water
1 cup yellow cornmeal
4 pieces chicken breasts
3 tablespoons vegetable oil
1 avocado
2 cups shredded monterey jack cheese
4 teaspoons sour cream
1/4 cup sliced scallion top
1/4 cup chopped red bell pepper, tops

Steps:

  • Preheat oven to 325 degrees F.
  • Combine the cornstarch, cumin, and garlic salt in a shallow dish and set aside.
  • Beat the egg along with the water and place in a shallow dish.
  • Put the cornmeal in a shallow dish.
  • Coat the chicken in the cornstarch mix, followed by the egg mixture, and finally coat with the cornmeal.
  • Heat the oil in a skillet over medium-high heat and place the chicken in it in a single layer, cooking about 4 minutes on each side.
  • Remove the chicken from the skillet and place in a shallow baking dish.
  • Cut the avocado in half (removing the pit of course), and then cut into quarters.
  • Finally cut the avocados into slices about 1/4-1/2 inch wide (I like to have at least 3 slices for each chicken breast.) Place the avocado slices over the chicken and then sprinkle the cheese evenly over the chicken.
  • Bake for about 15 minutes or until the cheese is well melted.
  • Serve each piece with about a tsp of sour cream on top and sprinkled with the chopped scallions and bell peppers.

A very different dish, with an interesting combination of flavors. I found this recipe years ago when I had an abundance of avocados...sigh, those were the days. The extra toppings are your choice, I usually only use the peanuts and or bacon.

1/4 cup butter
1/2 cup chopped apple
1/4 cup chopped onion
1 garlic clove, crushed
1 tablespoon curry powder
1/4 cup flour
1 cup light cream
1 cup chicken broth
1 teaspoon salt
1/8 teaspoon pepper
2 cups chicken, cooked and diced
3 -4 avocados, halved and peeled
3 -4 cups cooked rice
raisins or peanuts

Steps:

  • Saute onion, apples, garlic and curry powder in butter until onion is crisp-tender.
  • Stir in flour.
  • Gradually add cream and broth.
  • Cook and stir until sauce boils 1 minutes.
  • Add salt, peper and chicken.
  • Cook overl ow heat 10 minutes.
  • Arrange avocado halves on rice in oven-proof serving dish.
  • Heat in 350º oven for 5 minutes, just to heat avocado. (This can be skipped if you want the avocado room temp).
  • Spoon chicken over avocado halves.
  • Top with any toppings of your choice.

When I first came across this recipe, I didn't think I would like it, but I decided to give it a try. Boy, am I glad I did! The seasonings meld together and make a wonderful sauce. This is a great choice when you want something a little extra special or for company. If you only need 4 servings, make less cooked rice and only use 4 breast halves. I have also prepared this recipe using turkey tenderloins.

2 tablespoons olive oil
1/2 teaspoon ginger
1/2 teaspoon cinnamon
1/2 teaspoon paprika
1/2 teaspoon curry powder

6 boneless skinless chicken breast halves
1/2 cup dry white wine
1/2 cup chicken broth (may use bouillon)
2 carrots, sliced thin
3 celery ribs, sliced thin
1/3 cup half-and-half cream
3 cups hot cooked rice
1 avocado, peeled and sliced in thin strips (wait until the last minute so avocado doesn't turn brown)
1/3 cup slivered almonds

Steps:

  • Using a large heavy skillet, heat the oil over medium heat.
  • Add the ginger, cinnamon, paprika, curry, salt and pepper to the oil.
  • Stir and cook the spices in the oil for 2 minutes.
  • Add the chicken pieces and cook over medium heat on each side for approximately 5 minutes or till lightly browned.
  • Remove chicken from pan.
  • Pour off any excess oil from the skillet.
  • Add wine to the skillet and deglaze for about 1 minute.
  • Add broth, carrots and celery and return chicken to the skillet, bringing all to a boil.
  • Reduce heat to low.
  • Cover and simmer for 30 minutes or until chicken pieces are tender.
  • Remove chicken from skillet; keep warm.
  • Add half and half to skillet, stirring until incorporated, over low heat.
  • Place rice on platter and distribute chicken pieces on top of rice.
  • Place avocado slices on top then pour sauce mixture over all.
  • Sprinkle top with slivered almonds.

1 roasting chicken
salt
fresh ground pepper
2 avocados
1 lime, juice and zest of
1 lemon, juice and zest of
2 garlic cloves, finely minced
1 teaspoon dried chili pepper flakes
2 teaspoons parsley
1/2 teaspoon Tabasco sauce
1/4 teaspoon salt
3 tablespoons honey
1/4 teaspoon paprika
1/4 teaspoon Tabasco sauce
salt & freshly ground black pepper, to taste

Steps:

  • Preheat oven to 180C/350°F.
  • Line a roasting pan with foil (makes for easier clean-up).
  • Rinse and pat dry the chicken. Sit the chicken in the pan and season with salt and pepper.
  • Cut the avocados in half, remove the stones and scoop out the flesh with a spoon into a bowl.
  • Roughly mash the avocado so that you still have some small chunks. Add the remaining stuffing ingredients, mix together and taste for seasoning.
  • Stuff the mixture between the skin and flesh as best you can all over the chicken. It's OK if some is sticking out.
  • Mix the ingredients for the coating and drizzle or brush the honey mixture all over the chicken skin.
  • Bake the chicken for 1 1/2 to 2 hours, depending on its size, basting occasionally with any juices in the pan or with any leftover honey mixture.
  • Remove from oven when done and allow to rest 5-10 minutes before carving.

  • Preheat oven to 375 degrees. Line a large baking tray with foil or parchment paper; set aside.
  • Place chicken between 2 sheets plastic wrap. Using a rolling pin or mallet, pound until about 1/4 inch thick.
  • Place flour on a shallow plate. Lightly whisk milk or water and eggs together in a shallow bowl. Place breadcrumbs on a separate plate.
  • Season cutlets with salt and pepper. Coat 1 piece chicken in flour, shaking off excess. Dip in egg mixture. Coat in breadcrumbs, pressing on to secure. Place on prepared tray. Repeat with remaining chicken, flour, egg mixture and breadcrumbs.
  • Heat olive oil and butter in a skillet over medium heat. Add chicken cutlets and cook about 3-4 minute per side. These will be placed in the oven; it's okay to be slightly undercooked. Place the browned cutlets on the prepared baking sheet.
  • Divide the pasta sauce equally over the chicken. Arrange the avocado over sauce. Sprinkle with cheese. Bake for 5 to 7 minutes until cheese is melted.
