- Spread 1 side of each bread slice with 1 teaspoon Butter with Canola Oil.
- Layer 1 slice bread, buttered-side down, with 1 slice cheese, 2 slices bacon, 3 wedges avocado, 2 slices tomato and 1 slice cheese. Top with 1 slice bread, buttered-side up.
- Heat 12-inch skillet or griddle over medium heat.
- Place 2 sandwiches into skillet; cook, turning once, 8-10 minutes or until golden brown and cheese is melted. Repeat with remaining sandwiches.

- Cut avocado in half, scoop out the flesh, and cut into slices.
- Layer one slice of bread with 2 slices of cheese, avocado slices, bacon, remaining 2 slices of cheese, and top with remaining slice of bread.
- Melt half the butter in a skillet over medium to medium-high heat. When butter is melted and starts to foam, carefully place sandwich into the skillet. Cook for 2-4 minutes until bottom is golden brown and toasted. Carefully flip over, add remaining butter and cook for an additional 1-3 minutes until toasted. Serve warm and enjoy!!

- Spread 3 tablespoons butter on 1 side of bread slices. Place bread, butter side down, in a large cast-iron skillet or on an electric griddle over medium-low heat until golden brown, 2-3 minutes; remove. In a small bowl, combine cheddar, Monterey Jack and Gruyere. I LOVE avocados, especially the black Haas avocados. They're creamy and have such a "buttery" taste, and yet are cholesterol-free. This recipe makes a really delicious sandwich. When I make it for the kids, I eliminate the cumin, but add it when I'm making a sandwich for myself -- I like cumin's very mild spicy flavor that has a hint of caraway in it.

- In a small bowl, mash together avocado, lemon juice, cumin and salt until smooth. Stir in parsley and set aside.
- Top four of the bread slices with cheese; spread with avocado mixture and top with tomato slices. Add the four remaining bread slices on top. Using 1 tablespoon of the softened butter, spread some on the top of each sandwich.
- Heat a large nonstick griddle or 12-inch skillet, over medium-high heat. Add sandwiches, buttered sides down. Carefully spread the remaining softened butter over the top of each sandwich.
- Cook 4-6 minutes or until toasted, turning once.
